1 large Eggplant (or enough 1/2” slices to cover 2 baking sheets) I’m Not on a Diet Pie 2 cups Bread Crumbs or (oat meal for a lower carb dish) 1 Egg Ingredients: 2 large Cloves Garlic, peeled and chopped 3 Eggs 1 Yellow Onion, chopped Salt and Pepper to taste 1 1/2 Cups Sugar Big handful of Fresh Basil & Oregano ( or 1/2 tsp dried each) 1 1/2 Tablespoons Flour 1/2 cup Parmesan Cheese Olive Oil 1/2 Cup Melted Butter Peel and slice Eggplant in 1/2” slices, place on greased baking 1/2 Cup Buttermilk sheets and brush with Olive Oil, then roast for 30 minutes at 350°
