In this research project I tell the story of why this happened at this particular historical juncture. I am also interested in researching a particular locale. Specifically, this dissertation studies Vancouver foodies in the context of globalized consumer society. "Foodies" is a term used by the media and, grudgingly. by foodies themselves. It denotes people whose identity is partly formed by eating "good food" and by regularly consuming a range of products from cooking magazines to kitchen tools. On the basis of semi-structured interviews with twenty Vancouver area foodies as well as "tours" of their pantries and refrigerators, I discuss foodies' cooking. shopping, eating and reading practices. I also discuss their kitchen fantasies. In addition I analyze a typical issue of two favourite food magazines: Saveur and Bon AppPtit. The primary research question, which organizes the dissertation. asks about the structure of this social group? Is it predominantly a lifestyle formation coming together through leisure pursuits and consumption choices? Is it a taste culture stemming from a certain class fraction? Is it a subculture with alternative values? Or is it simply a target market identified by media and advertisers? Foodies tend to be cultural and social specialists who use cultural forms of distinction over socio-economic forms; in Bourdieu's terms they use "ostentatious simplicity" instead of conspicuous consumption. For example, their consumption of exotic or expensive regional specialties, like pomegranate molasses and.fleur de Camargue salt, displays their cultural capital. At the same time their consumption of local, artisanally- produced organic food symbolically resists industrial agribusiness and genetic modification (GM) technology. Core foodies, such as upscale restaurant chefs, are moreover explicitly critical of both and may also be politically active in the organic or slow food movements. Foodies use their support of alternative farming practices as another sign of "culinary capital." Cultural distinction thus works to reproduce consumerist values as well as to resist them.     Tongue By Jennifer McLagan from Odd Bits: How to Cook the Rest of the Animal How to Choose: The world of tongues is vast. Duck tongues, popular in Asian cuisines, are tiny and have a small bone that makes them fiddly. In this section, I limit myself to beef, veal, lamb, and pork tongues; if you have access to game animals, don’t hesitate to use their tongues in these recipes. The bigger the tongue, the coarser its texture, so I prefer tongues around 31/3 pounds /1.5 kg or less, as their texture is finer. While veal tongues are the most prized, beef, lamb, and pork tongues are all worth eating. Tongues can be bought fresh, frozen, brined, and sometimes smoked. Often your only choice will be a frozen one, especially with beef or veal tongue. The color of a tongue can vary from pink with a gray cast to almost all gray. Sometimes the skin of the tongue is quite mottled, often with odd dark spots. The color and the dark patches are no indication of quality; they are just a result of the animal’s breed. Tongues have a thick, bumpy skin, and often there is fat and gristle still attached at the base of the tongue, none of which is very appealing and all of which is easily removed after the tongue is poached. Besides availability, taste and size will influence your choice. Veal and lamb tongues are the mildest in taste, followed by beef and pork tongue. Pork tongue often comes with the head, and I prefer it in headcheese rather than by itself.

    Annex C – The History of the Hawaiian Culture August 15, 2011 Origins of the Ancient Hawaiians and Their Culture The first major Hawaiian island, Kauai emerged from the Pacific only six million years ago. This was millions of years before modern man walked out of Africa, but a blip in time compared to the 4.5 billion year history of our ancient planet. The Hawaiian Islands were formed above a 40 million year old volcano creating a hot spot under the Pacific Plate. As the pacific plate moves to the Northwest, the static hotspot continues to create islands. The effect of this is an island chain, one of which, the big Island, became the 5th highest island in the world. The next island in the chain, the seamount of Loihi is building and will surface in 10,000 years. The isolation of the Hawaiian Islands in the middle of the Pacific Ocean, and the wide range of environments to be found on high islands located in and near the tropics, has resulted in a vast array of endemic flora and fauna. Hawaii has more endangered species per square mile than anywhere else. Ancient tribal Polynesians arrived on this virgin scene after long, amazing sea voyages in their double-hulled canoes. The early Polynesians were an adventurous seafaring people with highly developed navigational skills. They used the sun, stars and wave patterns to find their directions. Ancient Polynesians even created incredible maps of wave patterns by binding sticks together. Bird flight paths and cloud patterns were used to discern where islands were located.
