Although many scholars referred to it as “the second declaration of American independence” the cooking patterns presented in Simmons’ book still resembled the old English tradi- tion. The purpose of this paper is to explore the British origins of the first American cookbook and to demonstrate that it is, in essence,UMCS a typical eighteenth-century English cookery book. Key Words: American Cookery, Amelia Simmons, cuisine, cookbook. American Cookery by Amelia Simmons was published in 1796, twenty years after the Declaration of Independence. In Feeding America – the Historic American Cookbook Project, scholars have argued that American Cookery deserves to be called “a second Declaration of American Independence,” as it was the first cookbook written by an American writer (Feeding America 2003). Most researchers point to certain features that make American Cookery an American cookbook. Karen Hess, one of the major food studies researchers poses a question: “what makes American Cookery so very American?” and answers that “it is precisely the bringing together of certain native American products and English culinary traditions” (Hess 1996, xv).

The toxicity of acrylamide has been acknowledged since 2002, among its toxicological effects on humans being neurotoxicity, genotoxicity, carcinogenicity, and reproductive toxicity. Acrylamide has been classified as carcinogenic in the 2A group, with human exposure leading to progressive degeneration of the peripheral and central nervous systems characterized by cognitive and motor abnormalities. Bakery products (bread, crispbread, cakes, batter, breakfast cereals, biscuits, pies, etc.) are some of the major sources of dietary acrylamide. The review focuses on the levels of acrylamide in foods products, in particular bakery ones, and the risk that resulting dietary intake of acrylamide has on human health. The evolving legislative situation regarding the acrylamide content from foodstuffs, especially bakery ones, in the European Union is discussed underlining different measures that food producers must take in order to comply with the current regulations regarding the acrylamide levels in their products. Settled people had more elaborate cuisines, with spices typical of the neighboring civiliza- tions: Iranian, Indian, or Chinese, (depending on whether one speaks of West, South, or East within the larger region). Overall, cuisines were not diverse or complex. There was considerable local variation, as now, from oasis to oasis. The Yinshan Zhengyao is one of the few sources making an effort to mark local foods. A recipe for Kashmiri or Nepali curry, “Bal-po curry,” reveals a Tibetan informant for the dish. It is also the first known curry recipe, pre-chile, point- ing up many connections. Certainly, coming from Iran to Afghanistan convinces one that the food of the latter is basically provincial Persian. This is in spite of the use of turmeric and other characteristic Indian spices, and a few Indian beans such as mung beans in the areas closest to the Khyber Pass. Food language throughout much of Central Asia is not only Iranic, it is spe- cifically Farsi, complete with the heavy dose of Arabic loanwords (halwa, ka­ bab, sharbat…), typical of that language. Widespread food words from Farsi include: berenj and derivatives for rice, ash for stew, kuku for omelet-like egg dishes, and murgh for bird (usually understood to be chicken). Twentieth century sources still write of old foodways in remote areas, and indeed the diet of rural Mongolia is still usually dairy with some meat (usually tough boiled mutton), and flour foods.

    Breakfast around the world What we eat for breakfast varies hugely depending on who we are and where we are from. Around the world, typical breakfasts can be very different. Here we take a snapshot of breakfasts across the globe. Breakfast in Africa Ghana Porridge is sometimes eaten at home, but many buy their breakfast from street vendors. Omelettes and a very sweet and dense bread known as sugar bread are also popular. Nigeria Porridge made from corn, made with evaporated milk is common amongst the south Western Yoruba people. For those in the south wet, a popular breakfast food is ‘garri’, which is made from the root of cassava and soaked overnight then sweetened with sugar and eaten like a cereal. Uganda Breakfast varies across the country. A usual breakfast is a cup of tea with a variety of warm or cold foods. In central Uganda, a typical breakfast would be a tea (made with milk and ginger), served with a combination of green cooking bananas in a stew with beef or in a vegetable sauce. Breakfast in The Americas Argentina In Argentina and Uruguay, breakfast consists mainly of espresso coffee, café con leche, or yerba mate. There are also croissants, brioches, or facturas with dulce de leche, filled churros, French bread with jam and butter, grilled sandwiches of ham and cheese known as tostados, and sweet cookies or crackers. Brazil Brazilians refer to breakfast as either café-da-manhã (morning coffee) or desjejum.
