Mix the chia seeds with 250 ml (8 1/2 fl oz / 1 cup) water in a bowl, waiting a few minutes to ensure the seeds absorb the water and become gelatinous. Mix all the other ingredients into the soaked seeds and stir until combined. Line a baking sheet with baking parchment and spread the mixture out on top. Use the back of a spoon to press the mixture as much as possible (the thinner they are, the more crispy the crackers will be). Bake for 30 minutes. Remove from the oven and slice into 24 rectangles. Flip them and return to the oven to bake for a further 20 minutes. Remove from the oven and transfer to a wire rack to cool. These will keep in an airtight container for up to a week.
