The primary goal of the Lehman Caves Management Plan is to manage the cave in a manner that will preserve and protect cave resources and processes while allowing for respectful recreation and scientific use. More specifically, the intent of this plan is to manage Lehman Caves to maintain its geological, scenic, educational, cultural, biological, hydrological, paleontological, and recreational resources in accordance with applicable laws, regulations, and current guidelines such as the Federal Cave Resource Protection Act and National Park Service Management Policies. Section 1.0 provides an introduction and background to the park and pertinent laws and regulations. Section 2.0 goes into detail of the natural and cultural history of Lehman Caves. Total 10 May 2016 viable microorganisms, lactic acid bacteria (LAB), yeasts and moulds, and coliforms were Accepted: 17 May 2016 enumerated. A total of 45 LAB and 30 yeast isolates were isolated from the 15 Leben samples and identified by API 50 CHL and API 20C AUX identification systems, respectively. The LAB counts were 7.8 log10 CFU/mL, while yeast and mould counts were relatively lower (4.7 Keywords log10 CFU/ml). Low coliform numbers were encountered (1.8 log10 CFU/ml). The LAB species were identified as Lactococcus lactis subsp. lactis, Lactococcus lactis subsp. cremoris and Fermented cow milk Leuconostoc mesenteroides. The isolated yeasts were identified as Candida krusei, Candida Lactic acid bacteria tropicalis and Candida lusitania. The most frequently isolated species was found to be Yeasts Lactococcus lactis subsp. lactis (28% of total isolates), followed by Lactococcus lactis subsp. There, amid the fluorescent lights and graffiti, is the prep kitchen of Mikla, Mehmet Gürs’ New Anatolian restaurant, which is situated 18 floors above. The bunker-like space is the domain of two of the Turkish-Finnish chef’s ‘dream team’, a passionate band of young chefs and people best described as food anthropologists. Inside, head chef Cihan Çetinkaya Tand ingredients sleuth Tangör Tan gleefully unwrap their latest consignment of goodies: garlands of sun-dried aubergine skins and red pepper hulls, necklaces of pinky-nail-sized baby okra, a bag of smoky chilli flakes the colour of molten lava and another of the lemony sumac more commonly associated with Lebanon. There are also sacks of wafers of tarhana — fermented and dried wheat chips brittle as caramel. One kind is flecked with chilli; another, more nubbly version, looks like dried porridge and is so thoroughly artisan it still bears the imprints of the fingers that made it. Mehmet tries some grape leather stuffed with pistachios that’s just arrived from Izmir. “I don’t like the texture,” he declares after chewing solemnly on a chunk for a minute or two.
