ABOUT DEREK NICHOLSON

Derek Nicholson started Nicholson & Saville 15 years ago with the desire to replace imported foods with locally produced foods of a higher quality and at a competitive price. Through relationships he had formed with chefs, restaurateurs and farmers it was clear there was a desire from Sydney food professionals to conveniently gain access to local, high quality produce. He worked with the likes of Murray River Salt and Oleapak to develop their products and launch them to passionate Sydney chefs. "The Australian food industry is dynamic, and at N&S we pride ourselves on discovering local gems,” he says. “We’re honoured to be aligned with some of the finest farmers, suppliers, producers and food industry leaders in Australia.”

BEEF

Farmed free-range in the regions around Mt Taranaki on New Zealand’s north island, its mild climate and ample rainfall allow the Europe breeds to thrive on lush green pastures and drink from fresh flowing streams abundant in clean water. The cattle are grown hormone free and are able to make astonishing weight gains which is testament to their happy healthy lives. Greenstone Creek represent the finest beef to come out of New Zealand, it is hand selected for high marble scores and consistency in size. All the beef is traceable to the farm gate.

New Zealand is one of the few places in the world where grass-based farming can reach its true potential. This is where Silver Fern farmers raise their animals. Here, the climate, clean air and plentiful pure water fuels year-round growth of lush, green pastures. They have been raised with the ability to wander and graze freely. The animals can eat and live as they would naturally – reducing stress and promoting better animal welfare.

Lachlan Chadwick’s made a name for himself, choosing the best Aussie Angus and putting it straight into ABG. He’s got the pick of the bunch from his father’s feedlot in Coonamble, established in partnership with our very own Derek’s father-in-law where the animals are finished 110 days on grain. While Lachie’s busy rearing exceptional, grain-fed cattle, we’ve got our eyes on supplying the top of his lot, from sensational sirloin to melt-in-your-mouth hanger steaks.

Husband and wife team Mark and Charisse Ladner are the thoughtful farmers behind Gooralie Free-Range Pork. This succulent pork is nothing short of exceptional, from a flavour and ethical standpoint. POULTRY

The Greenslade family runs a free range poultry operation in Riverton, at the top of the Yorke Peninsula in South Australia. The Greenslade family grow wheat, barley and peas on their property to feed to the chickens. This nutrient dense diet has been developed over twenty years and, in conjunction with exposure to natural sunlight, the Greenslade chickens produce a slightly coarser skin than conventional chickens, enabling it to hold together better during processing and cooking.

The birds are housed in naturally ventilated, barn-style sheds and are able to roam outside daily in a yard of trees and natural grasses. There is no artificial heating or cooling – only fresh air to ensure as natural an environment as possible.

Hand plucked and cleaned, these incredible tasting chickens are free from antibiotics and artificial growth promotants.

When it comes to smoking seafood, it’s in Adam Harris’ blood. His family’s been producing smoked salmon in the Adelaide Hills for over 50 years. This family owned and operated business sources only the best seafood for their range, which is then filleted, cured and smoked over oak in-house. Harris Smokehouse handles their catch with creativity and flexibility. “A growing manufacturing business isn’t very common in Australia and we’re really proud of that,” says Adam. “Our size gives us the ability to produce a product that fits our customer’s ethics, choices and lifestyle.”
