ABOUT DEREK NICHOLSON Derek Nicholson started Nicholson & Saville 15 years ago with the desire to replace imported foods with locally produced foods of a higher quality and at a competitive price. Through relationships he had formed with chefs, restaurateurs and farmers it was clear there was a desire from Sydney food professionals to conveniently gain access to local, high quality produce. He worked with the likes of Murray River Salt and Oleapak to develop their products and launch them to passionate Sydney chefs. "The Australian food industry is dynamic, and at N&S we pride ourselves on discovering local gems,” he says. “We’re honoured to be aligned with some of the finest farmers, suppliers, producers and food industry leaders in Australia.” Page | 3 BEEF Farmed free-range in the regions around Mt Taranaki on New Zealand’s north island, its mild climate and ample rainfall allow the Europe breeds to thrive on lush green pastures and drink from fresh flowing streams abundant in clean water. The cattle are grown hormone free and are able to make astonishing weight gains which is testament to their happy healthy lives. Greenstone Creek represent the finest beef to come out of New Zealand, it is hand selected for high marble scores and consistency in size. All the beef is traceable to the farm gate. New Zealand is one of the few places in the world where grass-based farming can reach its true potential. This is where Silver Fern farmers raise their animals. Here, the climate, clean air and plentiful pure water fuels year-round growth of lush, green pastures. They have been raised with the ability to wander and graze freely. Lachlan Chadwick’s made a name for himself, choosing the best Aussie Angus and putting it straight into ABG. He’s got the pick of the bunch from his father’s feedlot in Coonamble, established in partnership with our very own Derek’s father-in-law where the animals are finished 110 days on grain. While Lachie’s busy rearing exceptional, grain-fed cattle, we’ve got our eyes on supplying the top of his lot, from sensational sirloin to melt-in-your-mouth hanger steaks. Rosedale Ruby sets the benchmark for 100% Hormone Free and Chemical Free, pure Australian Beef of Distinction. Raised at their pristine farms in South Eastern Australia on native grasses and a hand-selected proprietary blend of natural grains to ensure the finest flavour, tenderness, marbling and nutrition all year round. The breed of Charolis and Angus cross are finished 150 days on grain to produce consistently tender marbled beef. The Greenslade family grow wheat, barley and peas on their property to feed to the chickens. This nutrient dense
