    BREEDS OF BEEF AND MULTI-PURPOSE CATTLE ACKNOWLEDGEMENTS The inspiration for writing this book goes back to my undergraduate student days at Iowa State University when I enrolled in the course, “Breeds of Livestock,” taught by the late Dr. Roy Kottman, who was then the Associate Dean of Agriculture for Undergraduate Instruction. I was also inspired by my livestock judging team coach, Professor James Kiser, who took us to many great livestock breeders’ farms for practice judging workouts. I also wish to acknowledge the late Dr. Ronald H. Nelson, former Chairman of the Department of Animal Science at Michigan State University. Dr. Nelson offered me an Instructorship position in 1957 to pursue an advanced degree as well as teach a number of undergraduate courses, including “Breeds of Livestock.” I enjoyed my work so much that I never left, and remained at Michigan State for my entire 47-year career in Animal Science. During this career, I had an opportunity to judge shows involving a significant number of the breeds of cattle reviewed in this book. I wish to acknowledge the various associations who invited me to judge their shows and become acquainted with their breeders.     ANIMAL SCIENCE 8393 BREEDS OF BEEF CATTLE There are approximately 250 breeds* of cattle recognized throughout the world, and several hundred breeds that are not currently recognized. More than eighty recognized breeds of beef cattle are available to produc- ers in the United States. However, an exact count is difficult to obtain because other breeds continue to be imported and crossing existing breeds continuously creates new breeds. A breed is a group of animals of common descent and possessing distinctive characteristics that distinguish them from other groups within the same species. These groups are referred to as purebreds. The term purebred refers to the purity of ancestry and implies that there is genetic uniformity of all characteristics. BREED CHARACTERISTICS Knowledge of breed characteristics is important to beef producers in purebred and crossbreeding programs. Crossbreeding is considered to be the most efficient means of commercial production, but highly productive purebreds are the backbone of successful commercial crossbreeding programs. Cross- breeding programs use breeds that possess complimentary characteristics to produce desirable off- spring. The major characteristics that are important in beef production include mature body size, milk production, age at puberty, environmental adaptability, rate and efficiency of gain, muscle expres- sion, cutability, and marbling. The major characteristics differ in relative economic importance, especially when considering different phases of the production system. Reproduction traits such as milk production and age at puberty are the primary concern of a cow-calf producer, while efficiency of gain, rate of gain and carcass traits are most important to stocker and feeder operations. Two characteristics that have a marked effect on most produc- tion traits are mature body size and milk production.
