Introduction

Primera Red Rice

After seven years of research, Universiti Kebangsaan (UKM) scientists with the cooperation of the Malaysian Agricultural Research and Development Institute (MARDI) research staff have successfully produced a variety of rice which not only can increase paddy yield but also has a low gylcaemic index of 46 suitable for diabetics.

Its Plant Genetics and Biotechnology expert, from the Faculty of Science and Technology, Prof. Dr. Wickneswari Ratnam assisted by some 14 other scientists from UKM, (MARDI), Universiti Putra Malaysia (UPM), Malaysia Nuclear Agency (MNA) and University of Malaya (UM) had been doing research on rice yield improvement since 2002 and have succeeded in producing the new paddy variant G33 named UKMRC9 which can increase local red rice production.

It can be described as superior crossbred red rice developed through conventional breeding involving controlled cross pollination between Oryza sativa cultivar MR219 and wild rice Oryza rufipogon. It involved the transfer of genes of the wild type with red pericarp by hybridization and repeated backcrossing to MR219 with white pericarp.

Though the initial research was aimed at increasing yield so that enough rice could be produced in the country for its own consumption, the red rice variant was found to be suitable for diabetics. The agronomic features of UKMRC9 being of intermediate plant height, intermediate growth duration of 118 days, have the desired phenotypic appearance with a high grain yield of 5.5 tonnes per ha, blast disease resistance and slender grain.

Its biochemical properties include amylose content of 19-20 per cent, high ferric reducing ability of plasma and high total phenolic content making it a rich source of antioxidants (78mg/100g).

The Perfect Rice

For centuries, rice is the staple food to fuel the workforce for many Asian civilisations. There is an old Chinese saying, “a wise housewife can’t cook without rice”, reflecting the importance of rice in Asian lifestyles. With the rapid growth of the Asian population, demand for rice increases in tandem, estimated to exceed 80kg per capita annually. As for Malaysians, we consume approximately 1.8 million tonnes of rice annually in versatile ways of eating.

While you are taking rice every day, have you ever thought of what rice does to your body, the environment and economy?

What can rice do to you?

Epidemiologic research on Asian populations reveals greater white rice intake was associated with significantly higher odds of developing metabolic syndrome and type 2 diabetes.

While looking for a better rice type, you may have come across low Glycaemic Index (GI) label. GI is a relative ranking of carbohydrate in foods according to how they affect blood glucose levels. In the scale of 0 to 100, lower GI carbohydrate means it only induces smaller fluctuations of glucose in your bloodstream and insulin levels, in turn reducing risk of type 2 diabetes and heart diseases.

Do you ever feel sleepy after a heavy white rice meal? The high GI carbohydrate content in white rice releases high level of glucose rapidly into the bloodstream, which significantly increases the presence of tryptophan, an amino acid which is converted to serotonin leading to melatonin that induces sleepiness.

The perfect rice for you

Primera Red Rice is a proud product of Malaysia, co-developed by Universiti Kebangsaan Malaysia and the Malaysian Agricultural Research and Development Institute.

The Primera Red Rice has only the husk removed while maintaining the bran and germ, which stores abundant nutrients, such as proteins, natural fibre, plant-based fat, vitamins, and minerals. Besides, bran and germ are rich in antioxidants that known to decrease atherosclerotic plaque formation, lowering risk of cardiovascular diseases.

The red rice contains energy that fuel any type of lifestyle without causing blood sugar surge. It also contains 1½ – 5.7 times more vitamin B1, B2, B3, B5 and B6, and 1.8 – 5.7 times more minerals relative to white rice. The high folate level (2½ times) suggests that Primera Red Rice is preferable for pregnant and breastfeeding mothers and growing kids.

Research reveals that Primera Red Rice has the lowest GI score at 46, as compared to Basmati, Thai red rice and Jasmine white rice at 50, 55 and 77, respectively. Its rich fibre (2.7 times) and protein (1.1 times) were observed to be partly mediating lower, after meal glycaemic and insulin responses.

Primera Red Rice was identified as high yielding rice (15% higher than popular white rice) with natural resistance to blast disease. Thus, making Primera Red Rice a farmer’s choice for better returns in a well- managed small area of cultivation with reduced use of pesticides.

Day 1: Quobuli Paulo in Red

Ingredients

• ⅔ Cup Primera Red Rice • 1 Carrot • ⅛ Cup Raisin • ½ Onion • 200 grams Mutton • ¼ Salt • ¼ Cumin seed • 3 or 4 pcs of Cardamom • 370 ml Water

Directions

1. Soak ⅔ cup of Primera red rice. 2. Sauté 1 carrot strips to golden and take out for later use. 3. Sauté ⅛ cup raisins to brown and take out for later use. 4. Sauté ½ onion to tender. 5. Add 200 grams mutton and sauté for 1 minutes 6. Add ¼ teaspoon salt and ⅛ teaspoon cumin seed. 7. Sauté for the aroma. 8. Add 370 ml water. 9. Cook for 45 minutes 10. Take out mutton for later use. 11. Drain soaked rice and add into the broth 12. Add 120 ml water. 13. Cook for 10 minutes 14. Add fried carrot and raisins, and mix. 15. Place mutton on top. 16. Sprinkle ⅛ teaspoon cumin seed and 3 or 4 pcs of cardamoms. 17. Add 120 ml water. 18. Cover and cook for 30 minutes.

Day 2: Pong Teh Chicken

Ingredients

• 1 Cup of Primera Red Rice • 2 Inches of Ginger • 2½ Cups of Water (For Cooking Rice) • 3 (Medium Size) • 500g of Chicken Meat • 2 Tablespoon of Palm Sugar • 1 Bowl of Diced Potatoes • ¼ Cup of Salted Fermented Bean Paste • 1 Cup of Sliced Mushroom (Soaked in • 5 Tablespoon of Vegetable Oil Water) • 1 Bowl of Water (For Cooking Chicken) • 5 Gloves of • 1 Tablespoon of Black Soy Sauce • 3 Chilies • 1 Tablespoon of Soy Sauce

Directions

Cook Red Rice 1. Wash 1 cup of Primera red rice. 2. Drain the water completely. 3. Add in 2½ cups of water. 4. Cook as usual.

Prepare Paste 1. Add 3 shallots (medium size), 5 gloves of garlic, 2 inches of ginger and 3 chilies into mortar and grind.

Cooking Pong Teh chicken 2. Heat up cooking oil. 3. Pan fry ground paste until fragrant. 4. Add in chicken. 5. Add in 1 tablespoon of soy sauce, ¼ cup of salted fermented bean and 1 tablespoon of black soy sauce. 6. Add in 1 bowl of diced potatoes. 7. Add in 2 tablespoon of palm sugar and mushroom soaking water. 8. Bring to boil. 9. Braise until tender. 10. Turn off fire and serve.

Day 3: Black Pepper Fish

Ingredients

• 1 Cup of Primera Red Rice • 1 Teaspoon of Pepper • 2½ Cups of Water (For Cooking Rice) • 1 Tablespoon of Sauce • 300g of (Grouper) • ½ Tablespoon of Seafood Sauce • 2 Tablespoons of Chopped Garlic • 1 Tablespoon of Black Pepper Sauce • 2 Tablespoons of Chopped Onion • 1 Teaspoon of Sesame Oil • ¼ Cup of Sliced Carrot • 2 Tablespoon of Cooking Oil • ¼ Cup of Sliced Capsicum • ½ cup of Water (For Cooking Fish) • ¼ Cup of Sliced Chili • 2 Tablespoon of Corn Flour

Directions

Cook Red Rice 1. Wash 1 cup of Primera red rice. 2. Drain the water completely. 3. Add in 2½ cups of water. 4. Cook as usual.

Marinate Fish Fillets 1. Mix 2 tablespoon of corn flour with 1 teaspoon of pepper. 2. Marinate fish fillets for 1 hour.

Prepare Sauce 1. Add 1 tablespoon of oyster sauce, ½ tablespoon of seafood sauce, 1 tablespoon of black pepper sauce, ½ cup of water and 1 teaspoon of sesame oil to a clean bowl. 2. Mix well.

Stir-Fry Marinated Fish Fillets 3. Heat up 2 tablespoon of cooking oil. 4. Stir-fry garlic and onion until fragrant. 5. Add in carrot. 6. Add in capsicum. 7. Add in marinated fish fillets and sauce. 8. Stir-fry until the gravy is thickened.

Day 4: Lemon Patin Fish with Healthy Red Rice

Ingredients

• 1 Cup of Primera Red Rice • 2½ Cups of Water • 1 Patin Fish • 1 Cup of Sliced Okra • 3 Tablespoons of Sliced Ginger • 3 Tablespoons of Chopped Garlic • 3 Tablespoons of Sliced Chili • 2 Tablespoons of Lemon Juice • ½ Tablespoon of • ½ Teaspoon of Himalayan Salt • ½ Teaspoon of Organic Sugar

Directions

Cook Red Rice 1. Wash 1 cup of Primera red rice. 2. Drain the water completely. 3. Add in 2½ cups of water. 4. Cook as usual.

Prepare Seasoning Mix 1. Add 2 tablespoons of lemon juice, ½ tablespoon of fish sauce, ½ teaspoon of Himalayan salt and ½ teaspoon of sugar into a clean bowl. 2. Mix well.

Steam Fish 1. Put Patin fish on a steaming plate. 2. Top the fish with ginger, garlic, chili, and okra. 3. Drizzle the seasoning mix over the fish. 4. Steam over high heat for 9 minutes.

Day 5: Red Squid Rice

Ingredients

• 1 Cup of Primera Red Rice • 2 Teaspoons of Garlic • 2½ Cups of Water (For Cooking Rice) • 3 Tablespoons of Honey • 5-6 Large Squids • ½ Cup of Soy Sauce • 3 Tablespoons of Diced Carrot • ½ Cup of Brown Sugar • 3 Tablespoons of Diced Capsicum • 700ml Water (For Cooking Squid) • 3 Tablespoons of Diced Onion • ¼ Teaspoon of Himalayan Salt • 1 Teaspoon of Ginger • 2 Teaspoons of Olive Oil

Directions

Cook Red Rice 1. Wash 1 cup of Primera red rice. 2. Drain the water completely. 3. Add in 2½ cups of water. 4. Cook as usual.

Prepare Fried Rice 1. Heat up some olive oil. 2. Stir fried onion, carrot, and capsicum. 3. Add in 1 cup of cooked Primera red rice. 4. Season with ¼ teaspoon of Himalayan salt.

Prepare Squid Rice 1. Fill squid with fried rice and seal with toothpick. 2. Prepare the sauce by adding 1 teaspoon of minced ginger, 2 teaspoons of minced garlic, ½ cup of brown sugar, ½ cup of soy sauce and 3 tablespoons of honey into 700 ml water. 3. Bring the sauce to boil. 4. Put in the squid and boil for 5 minutes.

After a meal, it is normal for the sugar level in the blood to rise and then, decline. How fast or how slow the food raises and declines the blood sugar level is the aspect that classifies a food as low or high GI food. Low GI food slowly raises and declines the sugar level in the blood after its consumption.

Day 6: Roasted Chicken with Broccoli Mushroom Rice

Ingredients

• 1 Cup of Primera Red Rice • 2½ Cups of Water • 400g Chicken Meat • ½ Cup of Sliced Mushroom • 1 Cup of Cut Up Broccoli • 2 Tablespoon of Olive Oil • ¼ Teaspoon of Himalayan Salt • ¼ Teaspoon of Pepper

Directions

Cook Red Rice 1. Wash 1 cup of Primera red rice. 2. Drain the water completely. 3. Add in 2½ cups of water. 4. Cook as usual.

Marinate chicken, broccoli, and mushroom 1. Add in 2 tablespoon of olive oil, ¼ teaspoon of Himalayan salt, ¼ teaspoon of pepper. 2. Mix well. 3. Marinate for ½ hour.

Baking 4. Place rice, chicken, broccoli, and mushroom on a baking tray. 5. Bake at 200oC for 1 hour.

Day 7: Appetising Paku with Red Rice

Ingredients

• 1 Cup of Primera Red Rice • 2 Tablespoons of Lime / Lemon Juice • 2½ Cups of Water • ½ Tablespoon of Organic Sugar • 1 Bowl of Fresh Picked Paku Pakis • 1 Teaspoon of Fish Sauce • 2 Tablespoons of • ¼ Teaspoon of Himalayan Salt • 1 Tablespoons of Dried • 1 Teaspoon of Olive Oil • 1 Tablespoons of Chili • 1 Hard-Boiled Egg

Directions

Cook Red Rice 1. Wash 1 cup of Primera red rice. 2. Drain the water completely. 3. Add in 2½ cups of water. 4. Cook as usual.

Prepare Sauce 1. Add to a clean bowl, 2 tablespoons of lime / lemon juice, ½ tablespoon of organic sugar, 1 teaspoon of fish sauce, ¼ teaspoon of Himalayan salt and 1 teaspoon of olive oil. 2. Mix well.

Prepare Paku 1. Select young paku leaves. 2. Blanch in boiling water. 3. Transfer to ice water once cooked. 4. Transfer the chilled paku to a clean bowl. 5. Mix paku with prepared sauce. 6. Garnish with shallot rings, chilli, fried dried shrimps and hard-boiled egg.

• 1 Cup of Primera Red Rice • 2 Tablespoons of Diced Green • 2½ Cups of Water Capsicum • ⅔ Cup of Tomato Purée • 3 Tablespoons of Corn • 1½ Tablespoons of Tomato Ketchup • 3 Tablespoons of Diced Carrot • ¼ Teaspoon of Himalayan Salt • 1 Cup of Oyster Mushroom • ½ Teaspoon of Organic Sugar • 3 Tablespoons of Diced Onion • ¼ Teaspoon of Mixed Herbs • 2 Tablespoons of Garlic • 3 Tablespoons of Olive Oil

Directions

Cook Red Rice 1. Wash 1 cup of Primera red rice. 2. Drain the water completely. 3. Add in 2½ cups of water. 4. Cook as usual.

Prepare Fried Rice 1. Heat up some olive oil. 2. Stir fry garlic and onion cubes. 3. Add in carrot cubes. 4. Add in corn, oyster mushroom and capsicum cubes. 5. Day 9: Red Bibimbap

Ingredients

• 1 Cup of Primera Red Rice • 1 Tablespoon of Roasted White • 2½ Cups of Water (For Cooking Rice) Sesame Seeds • 1 Egg • 1 Tablespoon of Organic Sugar • ½ Cup of Shredded Carrot • 1 Teaspoon of Brown Sugar • ½ Cup of Bean Sprout • 1 Tablespoon of Sesame Oil • ½ Cup of Sliced Shiitake Mushroom • 2 Tablespoon of Gochujang Paste • ½ Cup of Sliced Dried Seaweed • 1 Teaspoon of Vinegar • 1 Bowl of Fresh Cut Spinach • ¼ Teaspoon of Minced Garlic • 100 Grams of Minced Chicken

Directions

Cook Red Rice 1. Wash 1 cup of Primera red rice. 2. Drain the water completely. 3. Add in 2½ cups of water. 4. Cook as usual.

Marinate Chicken Meat 1. Add 1 tablespoon of soy sauce, 1 tablespoon of sesame oil, 1 teaspoon of brown sugar and ¼ teaspoon of minced garlic onto 100 grams of minced chicken. 2. Mix well and marinate for 30 minutes.

Prepare Topping 1. Stir fry marinated chicken, carrot, and mushroom with olive oil separately. 2. Blanch spinach and bean sprouts separately.

Prepare Bibimbap Sauce 1. Add 2 tablespoon of gochujang, 1 tablespoon of sesame oil, 1 tablespoon of organic sugar, 1 tablespoon of roasted white sesame seeds, 1 teaspoon of vinegar, 1 teaspoon of minced garlic and 1 tablespoon of water into a bowl. 2. Mix well.

Assemble Bibimbap 1. Arrange topping on cooked Primera red rice. 2. Put an egg yolk in the middle of the topping. 3. Sprinkle with seaweeds and bibimbap sauce.

Ingredients

• 1 Cup of Primera Red Rice • ½ Cup of Cubeb Tofu • 2 Cups of Water • ½ Cup of Basil • ½ Cup of Long Bean • ½ Cup of Mint • ½ Cup of Choy Sum • ½ Cup of Coriander • ½ Cup of Cabbage Pickle • 2 Tablespoons of White Sesame Seeds • ½ Cup of Peanuts • 1 Cup of Thick Tea • 2 Tablespoons of Dried • 2 Tablespoons of Garlic • ½ Cup of Sweet Leaf (Star Gooseberry) • 1 Teaspoon of Himalayan Salt

Directions

Cook Red Rice 1. Wash 1 cup of Primera red rice. 2. Drain the water completely. 3. Add in 2 cups of water. 4. Cook as usual.

Prepare Topping 1. Stir fry cabbage pickle, peanuts, , long beans, choy sum, tofu cubes and sweet leaf separately.

Prepare Lei Cha 1. Stir fry minced garlic, basil, mint, and coriander with Himalayan salt to taste. 2. Grind the fried vegetables with roasted peanuts and white sesame seeds. 3. Mix the paste with thick tea.

Assemble Lei Cha 1. Arrange topping on cooked Primera red rice. 2. Add in Lei Cha and mix.

Can Diabetics Eat Rice?

Have you eaten already? Does this sound familiar? Malaysians and food always come together. Excessive eating habits have made Malaysians to be one of the most “obese” country in Asia, with nearly half of the Malaysian adult population now being overweight or obese.

Based on data from the Malaysia Ministry of Health (MOH), in 2017, 17% of the Malaysian population are suffering from diabetes. Diabetic Diet

Can I eat rice if I have diabetes?

As glucose in the body comes from foods that contain carbohydrates (carbs), people may question whether they should eat rice. A person with diabetes does not have to avoid carbs altogether, but they will need to think about the types and quantity of carbs that they eat.

There are different types of rice, some of which may be healthier than others. According to the National Institute of Diabetes, Digestive and Kidney Diseases (NIDDK), USA, a person with diabetes should get at least half of their daily carbs from whole grains to avoid “sugar spikes,” which are periods in which blood glucose levels are remarkably high. These spikes can increase the likelihood of worsening diabetes symptoms.

While looking for rice, a diabetic patient or prediabetes should look out for rice with a low Glycaemic Index (GI) label. GI is a relative ranking of carbohydrate in foods according to how they affect blood glucose levels. On the scale of 0 to 100, lower GI carbohydrate means the carbohydrate only induces smaller fluctuations of glucose in your bloodstream.

Research revealed that Primera Red Rice has a GI score at 46 which is lowest in the market, compared to Basmati, Thai red rice and Jasmine white rice at 50, 55 and 77, respectively. Day 12: Red Seafood Paella

Ingredients

Directions

Arsenic in Rice

Rice is probably one of the most consumed staple foods that you can enjoy around Asia. But did you know that in a plate of your favourite white rice there might be a dangerous substance called arsenic. Arsenic is also known as one of the world’s deadliest poison! In fact, whether it be white, coloured, wild or even organic rice, they all have traces of arsenic in them.

Arsenic is a natural component in the earth’s crust, found also in water, and air. Arsenic in its organic state is part of plant and animal tissue but is safe as it is combined with carbon. Its inorganic form is found in rocks, soil, and water.

It is the inorganic form of arsenic that is very toxic. It has been used as a poison since ancient times. The U.S. EPA and International Agency for Research on Cancer also has labelled arsenic to be a category 1 carcinogen due to its aggressiveness in causing cancer in humans. It also is associated with the development of many diseases such as diabetes, pulmonary disease, cardiovascular disease, and increases the chance of kidney failure. For pregnant women, and children the effects are even worse. If a woman is exposed to arsenic during her pregnancy, the unborn baby is at high risk of having a compromised immune system.

How Arsenic Gets into Rice?

So how did rice, the staple diet of Asia, become so poisoned with arsenic? Well this is due to the interference of humans with the natural order of things. Humans add arsenic into the soil using pesticide and fertiliser. It is then absorbed by crops.

And you would be surprised to discover that white rice has the least form of arsenic. In fact, the Consumer Reports have shown that brown or unpolished rice has more than 80% arsenic compared with white rice. The reason is because arsenic tends to collect in the pericarp or bran layer of unpolished rice. The same can be said of black rice too, as it also still has the pericarp unlike white rice.

With that said, organic rice will therefore contain the least arsenic as fewer pesticides are used. However, it could still soak up arsenic that occurs naturally in the soil. Of course, this does not mean you should give up on rice. The reason is that arsenic is water soluble and can be washed off to some extent.

Studies showed that cooking rice in excess water, with one-part rice and 6 to 10 parts water reduces the inorganic arsenic content as much as 40 to 60% depending on rice.

Are There Arsenic Free Rice?

But if you would like to skip all the hassle of preparing rice that still may have a risk percentage, you can opt for arsenic free rice! 1. Sauté the 3 cups of chicken sausage and 4 cups of chicken cube in olive oil. Sauté until the chicken is cooked through and the sausage is lightly browned. Then transfer to a clean plate and set aside. 2. Sauté the veggies. Sauté ½ cup of yellow onion, ¼ cup of garlic, 1 cup of celery, 1 cup of bell pepper, ½ cup of green pepper until fragrant. 3. Add 1 cup of Primera red rice, 2 cups of chicken stock, 2 cans of diced tomato, 1 tablespoon of Cajun seasoning, 1 tablespoon of thyme, 2 pieces of bay leaf. Stir to mix well. 4. Simmer for 45 minutes, stir the mixture every 5 to 8 minutes or so (to prevent burning) until the rice is nearly tender. 5. Add the okra and shrimp. 6. Ingredients

Mango Red Rice Dessert

Ingredients

• 1 Cup of Primera Red Rice • 1 Mango Fruit • 1 Cup of Coconut Milk • 1 Tablespoon Brown Sugar • ¼ Teaspoon Himalayan Salt • 2½ Cups of Water

Prepare the Rice 1. Wash and soak 1 cup of Primera red rice for 1 hour. 2. Drain the soaking water completely. 3. In a pan or pot, add in 1 cup of soaked Primera red rice, 2½ cups of water, 1 cup of coconut milk, ¼ teaspoon of Himalayan salt and 1 tablespoon of brown sugar. 4. Mix well. 5. Bring to boil and simmer for 30 – 45 minutes or until the red rice is cooked.

Place 1 cup of soaked Primera red rice, ½ cup of almond, ½ teaspoon of ground cinnamon or 1 cinnamon stick, ¼ cup of organic sugar and 4 cups of drinking water (reduce water for thicker, creamier milk) in a blender. 3. Blend to obtain fine mixture. 4. Filter the mixture through a fine sieve. 5. Add in 1 teaspoon of vanilla extract and 2 cups of milk or almond milk. 6. Mix well and serve with ice or keep refrigerated.

Cinnamon Red Rice Milk

Ingredients

• 1 Cup Primera Red Rice • 1 Cinnamon Stick or ½ Teaspoon Ground Cinnamon • 1 Teaspoon Vanilla Extract • 3 Cups of Water

Directions

Prepare Primera red rice 1. Wash 1 cup of Primera red rice. 2. Soak overnight.

Prepare cinnamon red rice milk 1. Drain the water from the soaked Primera red rice completely. 2. Place 1 cup of soaked Primera red rice, ½ teaspoon of ground cinnamon or 1 cinnamon stick, and 3 cups of drinking water (reduce water for thicker, creamier milk). 3. Blend to obtain fine mixture. 4. Filter the mixture through a fine sieve. 5. Add in 1 teaspoon of vanilla extract or add to taste. 6. Mix well and serve fresh or keep refrigerated.
