Coconut White Russian
Coconut White Russian Looking for a slightly sweet drink that packs a punch - look no further! This take on a White Russian has a strong coffee taste with just a hint of cream and coconut. This is the perfect drink to sip while enjoying the summer heat. Yield: 1, 8 oz. Drink Ingredients: • ¼ oz. or 1 pump of DaVinci Naturals Coconut Syrup • ¼ oz. or 1 pump of DaVinci Coffee Liqueur (formerly Kahlúa) Syrup • 1.5 oz. of Cream • 3 oz. of Toddy Cold Brew Coffee Concentrate • Dash of Cinnamon • About 6 oz. of Ice Garnish Suggestions: chocolate covered espresso beans Directions: Add the cold brew, syrups, and cinnamon to an 8 oz. glass then add ice. Top the glass off with cream. Todd the Grasshopper At the cafe I managed, an iced or blended grasshopper was always a summer favorite. Something about sweet chocolate and cool mint is so satisfying and refreshing on a hot day. For this drink, I put a new twist on an old favorite by using Toddy cold brew concentrate and adding a little something of my own, white chocolate (my not-so-secret, favorite, ingredient). Enjoy! Yield: 1, 16 oz. Drink Ingredients: • 2 oz. of Toddy Cold Brew Coffee Concentrate • 1 oz. or 4 pumps of Monin Green Mint Syrup • 1 tbsp. of Sweet Ground White Chocolate & Cocoa Powder • 2 tbsp. of Ghirardelli Frozen Hot Cocoa Powder • 4 oz. of Milk • About 8 oz. of Ice Garnish Suggestions: White Chocolate & Chocolate Sauce Directions: Add all liquid ingredients together in a blender followed by the powders and then ice. -

White Russian Recipe
The White Russian Vodka, cream & coffee liqueur create an indulgent treat. This drink surely owes its ‘abiding’ popularity to the film The Big Lebowski, or more appropriately, Jeff Bridges’ character in the Cohen Brothers’ cult classic; The Dude. Specs: 30ml (1oz) vodka 20ml (2/3oz) coffee liqueur 10ml (1/3oz) Macadamia and Wattleseed liqueur ((optional, but up the coffee liqueur if not)) 30ml cream Nutmeg to garnish (optional) The original recipe calls for cream, although many people will make it with milk which obviously makes it less rich. If you’re using milk you could definitely lengthen it out a little without overpowering the other flavours. Equipment: A jigger A rocks glass Good ice Method: Add your vodka and liqueurs to the glass and place your large ice cube in. Slowly pour the cream in over the ice if you want to create a layered effect, otherwise just add the cream with everything else. Grate a little nutmeg over the top if you like, and serve. Suggested ingredients: The vodka here is really just to act as the boozy backbone, we’ve used Ketel One because it’s in the Bomba rail - whatever your cheap and cheerful go to is will work, as long as it is crisp and clean. Kahlua is, of course, the classic so that’s what we’ve gone for here. We also used Mac by Brookie’s Macadamia and Wattleseed liqueur basically because it’s delicious and adds a beautiful toasted nut dimension, but it is entirely optional- just do equal parts vodka and coffee liqueur if you can’t find it. -

TTHEH E EESPRESSOS P R E S S O BBARA R COPYRIGHTED MATERIAL Espresso For the Love of Coffee and Crema HE FIRST TASTE OF ESPRESSO is like “enveloping the tongue T in velvet pajamas,” according to David Schomer of Seattle’s Espresso Vivace, or having “our tongues painted with many little droplets of oil,” in the words of Marino Petraco, a senior re- search scientist at illycaffè and a lecturer at the Università del Caffè in Trieste, Italy. That’s how two coffee authorities from two coffee capitals describe the silky coating left on the taste buds by the fi rst deposit of espresso crema. Espresso, Ital- ian for “express,” can be explained as “fast coffee.” The word is also associated with espressamenta, meaning “expressly” (as in a coffee “expressly for you”). What- ever the interpretation, espresso indicates the high-pressure extraction of coffee. And the thick surface layer of reddish- brown crema is the hallmark of a well- prepared cup. No espresso machine can extract desir- able aromas—caramel, chocolate, fl oral, fruity, smoky, earthy—not already pres- ent in the coffee. Not the fi rst espresso machine, a steam-driven cylindrical pro- totype patented in 1901 by Italian engi- neer Luigi Bezzera. Not the piston-driven 16 mechanism fi rst manufactured in the late theater with tasting tables, video confer- 1940s by Achille Gaggia, nor the pump- encing, and up to four interpreters sitting driven models developed since. But the behind glass booths, translating Petraco’s macchina is one of the four m’s—the oth- Italian poetry into various languages. -
