Step inside for an evening to remember. 4 LIFE AS FEW KNOW IT WINTER 2018 From Our Kitchen To Yours DRAPER’S CHICKEN POT PIE A Recipe from America’s Resort 1 3-pound chicken salt and freshly ground black pepper, to taste 4 tablespoons (1/2 stick) unsalted butter 6 tablespoons all-purpose flour 1 cup diced carrots (2 medium carrots) 1/2 cup dry white wine 1 cup sliced celery (3 medium ribs of celery) 3 cups chicken stock, preferably homemade 1 cup diced onion (1 medium onion) 1 cup Half-and-Half or light cream 1 cup quartered common mushrooms (2 ounces) 1 pound homemade or prepared frozen puff pastry, thawed 1. Put the chicken in a stock pot with lightly salted cold water to cover. Bring to a boil, reduce the heat and poach gently, skimming frequently, until the chicken is very tender when pierced with a knife, 45-55 minutes. Leave to cool in the poaching liquid. When cool enough to handle, remove all the meat, using a paring knife and your fingers. Discard any skin, fat or gristle. Cut the meat into 1-inch dice. (Note: the poaching liquid can be used as the chicken stock. Reduce the stock by boiling it down if necessary to ensure a full flavor.) 2. In a large heavy-bottomed saucepan, heat half the butter and sauté the carrots, celery and onion over medium heat until they are beginning to soften, 5-7 minutes. Add the mushrooms and continue cooking until their liquid has been rendered and evaporated, another 3-4 minutes. Season to taste with salt and pepper. 3. Add the remaining butter, stir until melted, then sprinkle the flour over the vegetables. Cook, stirring serving bowls. Place the pastry circles on an ungreased baking sheet and prick the entire surface with the tines of a fork. (The pastry circles should be flaky but not risen too high.) Bake in the preheated oven until deep golden brown and slightly puffed, about 20 minutes. 4. Preheat the oven to 400F. Roll out the puff pastry to 1/8-inch and cut out 8 circles the same diameter as the serving bowls. Place the pastry circles on an ungreased baking sheet and prick the entire surface with the tines of a fork (the pastry circles should be flaky but not risen too high). Bake in the preheated oven until deep golden brown and slightly puffed, about 20 minutes. 5. To serve, divide the hot chicken mixture between 8 individual serving bowls and top with a puff pastry circle. July averages: High 82F/Low 59F. January averages: High 40F/Low 20F. Snowfall is 19 inches. (The average US city gets 20 inches per year.) Accumulations vary on elevation and region. Eastern Greenbrier County, where The Greenbrier Sporting Club is located, generally receives less than the western region. The area receives 40 inches of rain per year (US average is 37). The most precipitation on average occurs in May. Prevailing winds are from the south and west. 7 3.
