Deltetto, `Servaj` Langhe Favorita 2020 Langhe, Piemonte, Italy PRODUCER When Antonio Deltetto took over from his father in his early 20s in 1977, he was fresh from university and full of new winemaking ideas that his father's meticulous cultivation of traditional varieties allowed him to develop. This spirit of innovation has stayed with him and he has passed this on to his children Carlo, Cristina and Claudia, who now all work for the estate. The estate covers 21 hectares of vineyard in the Roero, the gently hilly region on the northern bank of the Tanaro. The soil is sandier in this area and, as a result, the wines are more aromatic and less structured than those from the Langhe hills on the south bank. VINEYARDS The Favorita grapes (a close relative of Vermentino) for this wine were grown in the 'Servaj' vineyard in the Roero hills. One vineyard is East facing, one is West facing. The word "servaj" means "wild" and is a reference to the wild character of the Roero hills, which are covered with vineyards and forests. The vineyard was planted in 1995 and lies 240 metres above sea level. Soil here is made of sand and clay and the vines are trained with Guyot system. VINTAGE The 2020 vintage began with a warm and dry winter, followed by a wet spring with heavy rainfall, which replenished water reserves in the soil. Summer was warm, but without very extreme temperatures. Overall the quality of the grapes was excellent. Yields were aligned with those of 2019. VINIFICATION The grapes were carefully selected in the vineyards. When the grapes arrived at the winery, they were immediately chilled to 12° C prior to pressing with a pneumatic press, in order to preserve perfume and minimize phenolic extraction. Fermentation took place in stainless steel tanks at 16°C, which is where the wine Grape Varieties 100% Favorita remained until bottling. This wine is unoaked and was bottled in Winemaker Antonio and Carlo Deltetto February 2021. Closure Screwcap TASTING NOTES ABV 12.5% This wine is a pale lemon colour with youthful highlights in the glass. Residual Sugar 1.87g/L The nose shows intense aromas of citrus and blossom, which carry Acidity 5.73g/L through to the palate. It is balanced by a refreshing acidity and crisp finish. Wine pH 3.2 Bottle Sizes 75cl.
