Industria de Sopas y Consomés La industria de sopas y consomés tiene características que son diferenciadoras para los consumidores desde el punto de vista del uso que se le da a cada uno de los productos. Mientras que el primero, es un producto terminado (en la mayoría de las veces), el segundo es más un potenciador de sabores a las comidas que se preparan, aunque también puede convertirse en un “consomé”, pero primordialmente su función es para darle más sabor a los alimentos que se están cocinando. Para el análisis del mercado se analizó las diferentes partidas arancelarias para determinar el comercio y así el tamaño de la industria. De acuerdo con la clasificación arancelaria los productos de sopas, potajes o caldos, preparados, preparaciones alimenticias compuestas están clasificados en la partida arancelaria 210410 del Sistema Armonizado Centroamericano. i. Comercio General El comercio total de este tipo de productos alcanzó un promedio de US$ 85.4 millones de dólares para el período 2013 al 2017, en el cuál Guatemala tiene una balanza comercial positiva. El mejor año para este tipo de productos fue el 2017 cuándo se alcanzó un total de US$ 90.8 millones de dólares. Sin embargo, este producto tiene una balanza positiva creciente para el país, ya que ha crecido más de US$ 10 millones del 2013 al 2017. Las exportaciones han ido creciendo desde el 2013 cuando fueron US$ 68.4 millones hasta el 2017 donde alcanzaron la venta récord de US$ 76.4 millones de dólares, un crecimiento promedio del orden del 2.9% en el período, pero para el último año fue del 8.1%. Exportaciones Las exportaciones guatemaltecas del 2013 al 2017 acumulan un total de US$ 354.1 millones de dólares, siendo el año 2017 el de mayor venta con US$ 76.4 millones de dólares. El promedio de crecimiento durante este período fue del orden del 2.9%, con un crecimiento estable durante del 2013 al 2016 y un alza fuerte en el último período (1.1% versus un 8.1% en el último año). Del total de comercio del 2013 al 2017, el principal país con el que tenemos comercio es con Honduras al que se le vendió un total de US$ 85 millones de dólares (24.0%.), seguido de Estados Unidos con un total de ventas de US$ 76.6 millones y un 21.7% y el tercero es El Salvador con un monto de exportaciones acumuladas de US$ 57 millones con 16.1% del total y México con 14.5% y ventas de US$ 30.6 millones acumulados. Más del 90% de las exportaciones de Guatemala se da con los países que son sus principales socios comerciales. Del Caribe destacan dos países: Curazao con ventas acumuladas de US$ 1.5 millones de dólares y Cuba con US$ 1.4 millones de dólares. 3 Ministerio de Economía Viceministerio de Integración y Comercio Exterior Dirección de Análisis Económico ESTUDIOS INDUSTRIA DE GUATEMALA Para el análisis se hizo un cohorte de cinco con el centro de las exportaciones en US$ 9.5 millones, con el objetivo de identificar a los países, de los cuáles se puede observar que Honduras es el país en la mayor cantidad de años que tiene una diferencia sobre el segundo competidor que es Estados Unidos. Importaciones Lo que Guatemala compró al mundo de este tipo de productos alcanzó la cifra de US$ 72.5 millones de dólares para el período 2013-2017 con una contracción promedio del 2.2% para el período. El 48.2% de lo comprado proviene de México, seguido por un 30.4% de El Salvador y China que aparece en el tercer lugar con un 7.6%, con un cuarto que es Estados Unidos con el 6.9% del total en el período. De los países el que ha estado impulsando el total de las ventas ha sido El Salvador que en cierta manera ha ocupado el espacio que tenía México ya que las importaciones totales se han mantenido en su nivel, sólo ha habido un cambio de proveedor. En el caso de China y Estados Unidos se mantienen estables entre US$ 1.0 y US$ 1.3 millones de dólares. Honduras se ha mantenido en el rango de US$ 400 a US$ 600 mil dólares.     IntroDuction Instant Noodles as Quotidian and Ubiquitous Instant ramen noodles—tasty, convenient, cheap, shelf stable, and indus- trially produced (unlike “real” ramen noodles)—are consumed by huge numbers of people worldwide. Invented by Momofuku Ando in 1958, apparently to assist his war-torn Japanese compatriots, they have become so pervasive and commonplace that our friends often expressed surprise at our interest in them. “Why study them?” one asked. “My kids grew up on them.” Were they, in other words, significant enough to be of any particular interest, to be informative about anything of importance? The Noodle Narratives, written by three anthropologists—Deborah and Fred from the United States and Tatsuro from Japan—is our answer to this question and a demonstration that instant noodles are perhaps one of the most remarkable foods ever. The fact that instant noodles are so quotidian and ubiquitous is note- worthy. Their mass-produced ingredients are inexpensive as well as widely available and, for most of the world’s population, broadly acceptable: wheat, vegetable oil, and assorted flavorings, usually includ- ing salt, monosodium glutamate (MSG), a meat or chicken essence, sugar, and flavorings readily blended for local preferences.
