PREPARATION: 2000ml water Warm up the water, just before boiling add: 40g kombu algae (previously soaked in cold water for 2-4hrs) When the water boils, add: 60g dried Shiitake mushrooms/Bonito flakes MISO SOUP WITH EGGPLANT “MISO SHIRU” Miso soup is an integral part of Japanese cuisine. Properly prepared dashi is the crucial element in miso soup. 1. Cut eggplant and leek into bite-sized pieces (soak eggplant in cold water first for few minutes to eliminate the bitterness). 2. Prepare dashi. 3. Cook dashi in middle-high temperature. Add eggplant and lower the temperature just before boiling. Gradually add miso paste and stir lightly. Add leek. Serve in small bowls. Instead of eggplant, other types of vegetables can be used in miso soup such as spinach, onion, cale, wakame algae or classic Japanese tofu. Taste of miso paste differs from brand to brand – some miso pastes are more salty and assertive in taste so it is necessary to taste the miso paste before preparation. INGREDIENTS -2 eggplants -1200ml dashi -90 g miso paste -leek “TEMPURA” Tempura is a Japanese dish of seafood or vegetables that have been battered and deep fried. 1.     SHUMAI (SUI MAI) Through Annie’s Window Shumai, or Sui Mai, are steamed pork dumplings that are a favorite at dim sum restaurants. Growing up, my family would have dim sum on Sunday and I was always excited when the cart arrived at our table. The first few items I would pull are - shumai, steamed pork dumplings, har gow (shrimp dumplings), and chicken feed (yes, you read that correctly). All very delicious and must try! If you are heading to dim sum for the first time, I recommend ordering a couple of the shumai. They are super juicy and a great combination of pork and shrimp. Compared to other dumplings in Chinese cuisine, shumai are relatively easy to make. You just need to prepare the filling, stuff the dumplings, and steam. So let’s get stuffing, wrapping, and make some shumai. Prep Time: 1 hour Cook Time: 15 minutes Total Time: 1 hour and 15 minutes Yield: 22-24 shumai Equipment: bamboo steamer and liner papers for bamboo steamer INGREDIENTS ½ lb 80% lean ground pork 1 ½ tbsp tapioca starch ¼ cup water 1 ½ tbsp cooking oil ½ tbsp sesame oil ½ lb chopped shrimp ⅔ cup chopped shiitake mushroom ½ cup chopped water chestnuts 2 tbsp minced ginger ¼ cup sliced green onions 2 tbsp oyster sauce 2 tbsp granulated sugar 2 tsp kosher salt 2 tbsp white pepper ¼ cup of fish roe 22 - 24 thin round yellow dumpling wrappers INSTRUCTIONS 1. Place your ground pork in a large mixing bowl. Add tapioca starch and water to the bowl and start mixing. Keep stirring until your pork turns to a paste-like texture.

You can scramble the eggs into the rich sauce or cook them whole. Serves 4 2 tbsp. olive oil 2 onions, sliced 2 green pepper, halved deseeded and sliced 1 red chilli, deseeded and sliced 400g can chopped tomatoes 2 tsp caster sugar 1 tsp each of salt, paprika, dried or fresh oregano 4 eggs small bunch parsley, roughly chopped 1. Heat the oil in a heavy frying pan. Stir in the onions, pepper and chilli. Cook on a medium heat until they begin to soften. Add the tomatoes, paprika, oregano, salt and sugar then cook until the liquid has reduced by at least half. 2. If scrambling the eggs, whisk and season the eggs. Remove most of the sauce from the pan and gently cook the eggs until set, but not dry. Add the sauce back to the pan and mix well. The eggs will continue to cook in the pan. Lastly add the chopped parsley and serve hot. 3. For whole eggs, create 4 pockets in the tomato pepper sauce and crack the eggs into them. Cover the pan and cook the eggs over a low heat until just set.
