AJI means chile pepper or chile sauce. Anytime you see this, you’re getting a tasty chile sauce - not always spicy. ANTICUCHOS grilled marinated meat on a skewer, historically from the Andes mountains with the most popular version being anticuchos de corazon, or beef heart skewers. BORONIA traditionally from Colombia - our rendition is a blend of ripe plantains, tomatoes, culantro (see below) and eggplant. CULANTRO We swear, we didn’t misspell cilantro. Culantro is an herb native to South America with a robust flavor similar to cilantro but a bit richer. EPAZOTE aromatic Central American herb that we use to flavor our green grits. GUASACACA avocado sauce from Venezuela. If guac and salsa had a baby. GUANABANA also known as soursop this tropical fruit tastes like strawberries mixed with apples and the scents of pineapple and citrus. Look for this on desserts. MALANGA starchy root vegetable commonly used in South American cuisine. We use it like a potato - fried as chips. MILANESA a dish popular in Italy and Argentina - a thinly pounded piece of flavorful meat (our version of veal) breaded and pan fried crispy. PANELA super flavorful brown sugar, from South America, made by evaporating sugar cane juice. PATACONES crunchy plantains - great for sopping up sauces. PAVLOVA a meringue dessert - crispy on the outside and tender on the inside. A simple, sweet base for fruit condiments - black berries in our case. PICADA key to the argentine tradition of aperitivo, a picada is a spread of cured meat, cheeses and other garnishes served with drinks. TORTILLA DE GRASA an Argentine grilled flatbread enriched with a bit of APD farms beef tallow. YUCA a staple root vegetable in many different cultures with a ton of different names - cassava, manioc, yuca, mandioca, aipim, to name a few - we fry yuca into chips..

There is no single “American” flavor in the region from Canada to Mexico, Pacific to Atlantic. However, each region has traditional dishes, flavors, ingredients, and cooking methods. Each is worthy of attention. There are coastal zones with abundant seafood; Asian pockets with fusion influences; the vast mountains, plateaus, and plains with beef, wheat, potatoes, and corn; Southern cuisine with African influences; and Mexican food with both native and Spanish flavors, to name just a few. North American cuisine began with the Native Americans and soon fused with the first European settlers at Plymouth, so the Northeastern United

  • LATIN AMERICAN CUISINES by REGION from Mexico to the Tip of South America, Latin American Cuisine Embodies the Traditions of Its Many Peoples and Their Ancestors
LATIN AMERICAN CUISINES BY REGION From Mexico to the tip of South America, Latin American cuisine embodies the traditions of its many peoples and their ancestors. This guide illustrates the rich and diverse food culture developed over the centuries and explains the flavor profiles for each region. MEXICO Turkey in Mole Poblano Sauce Grilled Snapper Pozole Modern-day Mexican cuisine has been shaped by the varying climates of the different regions, the geography of each region, as well as the influence of Spanish and Mediterranean culinary traditions brought over during colonization. When the Spanish arrived in Mexico, they found the native people cooking primarily with chili peppers, black beans, tomatoes, squash and corn. The Spanish then introduced cattle, pigs and other livestock, as well as flavoring agents like onions, garlic, and spices. This influence can be seen in dishes like Huachinango a la Veracruzana, or Veracruz-Style Red Snapper, which combines both the cooking techniques and flavors of the Spanish and pre-colonial Mexico. The fish is marinated in lime juice, salt, pepper, nutmeg and garlic before being pan fried and then baked with a sauce of tomatoes, oregano, capers, olives, raisins, jalapeños, more garlic, and onions. In addition to outside influences, the cuisines within the various regions of Mexico have developed independently of each other due to great distances and based on the ingredients available to them. For example, the Gulf Coast and Pacific Coast regions rely heavily on fish and other seafood-based dishes. In Central Mexico, the famous mole poblano, a 35-ingredient dish that takes advantage of the many available spices and chocolate, which originated in Mesoamerica, is a culinary highlight.
