Department of Biological Sciences, Sokoto State University, P.M.B 2134, Sokoto State-Nigeria Correspondence email: [email protected] _____________________________________________________________________________________________ ABSTRACT A survey of mycoflora associated with garlic cloves (Allium sativum L.) was conducted in five different markets site in Sokoto metropolis, Sokoto State. A total of 135 garlic (cloves) were collected, isolated and identified based on their morphological and cultural characteristics. Result shows that out of these 135 samp1es, six different types of fungal species were isolated and identified. These fungal species includes: Aspergillus niger, Absidia crymbefera, Mucor racemoses, Rhizopus stolonifer, A. flavus, and A. terrus. Among these fungal species, Aspergillus niger was found to have higher frequency of occurrence with 20(24.7%), Absidia crymberfera followed with 18 (22.2%), followed by Mucor racemoses having a frequency of 15 (18.5%), then Rhizopus stolon with 12 (14.8%) which is also followed by A. flavus and A. terrus having appearance of 9(11.1%) and 7(8.6%) respectively. Further research work should be carried out to be able to determine whether these fungi can be transmitted to seedling on the field. D’souza4 Abstract Background: The increase in demand and consumption of single clove garlic or ‘Solo garlic’ (Allium sativum) has resulted in an increase in research on its therapeutic properties. The present study aims to evaluate the antioxidant activities, oxidant-scavenging efficiency and preventive effects of SCG (single clove garlic) and MCG (multi clove garlic) on CCl4-induced acute hepatotoxicity in male rabbits. Methods: For this purpose, rabbits were orally administered with 3 ml of CCl4 /kg of body weight, followed by 0. 8 g of MCG or SCG/kg twice a week for three successive weeks. Oxidative hepatotoxicity was then assessed. Results: SCG extracts exhibited higher antioxidant capacity than the MCG extract. Scavenging ability of SCG showed significant (p < 0.05) elevation against 2,2-diphenyl-1-picrylhydrazyl (DPPH) and superoxide radicals in comparison to MCG. In addition, total phenolic content of SCG was significantly elevated (p < 0.001), thereby suggesting that the composition of garlic storage constituents varies with the number of cloves present. CCl4-induced hepatotoxicity demonstrated histological changes including severe damage in the structure of liver tissues which correlated well to oxidative stress levels. Simultaneously, administration of SCG resulted in a significant reduction of serum alkaline phosphatase (ALP), aspartate aminotransferase (AST), alanine aminotransferase (ALT), and total bilirubin (TB) levels in addition to improvement in some histological parameters.

Raya Kaligawe KM.4, 50112, Semarang Received March 27, 2019; Accepted November 11, 2019 ABSTRACT Flavonoids and phenolics are compounds with hydroxyl groups (-OH) bound to aromatic rings which enable them to react with reactive oxygen species and eliminate free radical activity. Single bulb garlic (Allium sativum var. solo garlic) is known to have antioxidant activity which comes from the phenolic groups. This study aims to determine the correlation of total flavonoid and phenolic levels with the antioxidant activity of ethanolic extracts from single bulb garlic grown in Magetan and Tawangmangu regions. This study included an observational analytic study with a cross-sectional design. Total flavonoid levels were measured by colorimetric method and total phenolic levels were measured by Folin- Ciocalteu method using Spectrophotometry UV-Vis. Antioxidant activity was measured by DPPH method at a wavelength of 517 nm. The data analysis used was multiple linear regression. The results showed that the extract of single bulb garlic from Magetan had total flavonoids of 12.1833 ± 0.1943 mg QE/gram, total phenolics of 70.244 mg GAE/gram, and antioxidant activity with an IC50 value of 20,216 ppm. The extract of single bulb garlic from Tawangmangu contained total flavonoids of 14.4833 ± 0.5911 mg QE/gram, total phenolics of 92.222 mg GAE/gram, and antioxidant activity with an IC50 value of 13.777 ppm.

Culinary historians tell us that the Chinese craftsmen ate the soured cabbage and rice as far back as in the third century B.C., about the same time as the Great Wall of China was built. Following the historical tradition, Mongolian tribes and the Tartars brought Sauerkraut from China to the Western world. This was long before salmon and Sauerkraut were served together in Colmar and Straßburg- an uncommon combination for the German cuisine. Considering the historical background it seems a natural progression to invite Alsatian and Chinese people to experiment together in the kitchen with these recipes? Why not also invite Finns, Icelanders, Spaniards, Italians and Germans to do the same? Comenius meeting in Teningen.
