Alabama Bbq Style Fried Wings with Bacon Cooked Swiss Chard and Corn Fritters As seen on Episode 208 on Cooking with Earth Fare! Recipe By Brian Carson Preparation and Recipe Edits by Matthew Wong Prep Time: 25 Minutes Cook Time: 45 Minutes Serving Size: 1-2 people Ingredients Fried Springer Mountain Farms © Wings: ● 2 pounds Springer Mountain Farms © Drumettes ● 2 quarts canola oil Alabama White Barbeque Sauce: ● 1 cup mayo ● 1 teaspoon cayenne ● 1 teaspoon paprika ● 2 Tablespoons granulated garlic ● 1 teaspoon onion powder ● ½ cup apple cider vinegar Corn Fritter: ● 1 each canned corn ● 2 cups cornmeal ● 1 up self-rising flour ● 1 teaspoon baking powder ● 1 each egg, large ● 1 Tablespoons salt Bacon Cooked Swiss Chard: ● 4 cups swiss chard, cleaned and chopped ● 1 cup bacon, cut into lardons ● 1 teaspoon chili flake ● Pepper and Salt to taste Preparation For the Alabama White Barbeque Sauce:: 1. In a mixing bowl, add all ingredients and mix together until fully integrated 2. Once fully mixed, set aside for Plating For the Fried Springer Mountain Farms © Wings: 1. In a high-walled medium to large sized pot over high heat, add oil and allow it to come to temperature (roughly 375F to 400F). 2. With a paper towel, dry off the Springer Mountain Farms © drummettes as best as you can; then carefully add them to the hot oil 3. Fry Springer Mountain Farms © drummettes for 4-6 minutes or until internal temperature if 165F; try not to overcrowd the pot 4. Once cooked, remove from oil into a clean plate (best to add a few layers of paper towel beneath to help soak some of the excess oil) 5. Set aside for Plating For the Corn Fritter: 1. In a blender, pour all ingredients (including the liquid in the canned corn) 2. Blend on a medium to high pulse until well integrated 3. With the same pot and oil frying the drummettes, bring heat to medium head or 325F and once up to temperature, drop tablespoon sized corn fritter mixture into oil; fry 6 fritters at a time 4. Fry for 2-4 minutes or until the fritters are golden brown and float to the top 5. Carefully spoon fritters out of the oil onto a tray or plate with paper towels to soak any excess oil 6. Repeat steps 10 through 12 until all fritter batter is used 7. Set aside the beautifully golden Corn Fritters for Plating For the Bacon Cooked Swiss Chard: 1. In a 12” skillet over medium heat, slowly render bacon for 5-7 minutes; stir occasionally with a wooden spatula to prevent burning 2. Add swiss chard and allow greens to wilt slightly - should take no more than 30-50 seconds 3. Next, add chili flakes, pepper and salt. Stir to fully incorporate and remove from heat 4. Set aside until Plating Plating: 1. On a large serving plate, create a bed using the Bacon Cooked Swiss Chard 2. Next in a mixing bowl, toss the Fried Springer Mountain Farms © Wings in the Alabama White Barbeque Sauce 3. Using a pair of tongs, place Fried Springer Mountain Farms © Wings coated with Alabama White Barbeque Sauce on top of the bed of Bacon Cooked Swiss Chard 4. Finally, add the Corn Fritters around the plate 5. Now serve and enjoy! .
