Martelli’s experience has its roots deeply imbedded in the farming tradition. When the hog raised with care by the farmer was ready, grandfather Geminiano and his sons were called to perform the slaughtering rite. The meat was skilfully prepared with natural dressings and aromas enhancing its flavour. The small slaughterhouse was founded over 50 years ago from these humble traditions and was destined to become the origin of today’s important reality. Founded in 1959 from a small slaughterhouse of farming tradition, the Martelli Group is made up of eight producing units pertaining to two different companies (Martelli Fratelli S.p.A. and Martelli Salumi S.p.A.). Combined together, these develop a complete productive cycle: from pig-farming to slaughtering, from the processing and distribution of the fresh meats, to the production of cooked and cured hams. The hallmarks that define the Martelli Group and which place it at the cutting edge of technology in the pork processing sector is total food chain control from breeding to slaughter, delicatessen counter or self service counters.

The controlled food chain (Filiera) allows the production cycle to be followed in all its stages from breeding to slaughter through the various processes of manufacturing to the finished product served on the consumer’s table. The Martelli Group is able to go back and identify exactly which breeding farm each pig has come from and when it was born. Each processing step is continuously monitored and checked by the quality and control team guaranteeing a healthy product with full traceability at all times. The label of every product not only lists the code of the breeding establishment and the production date of the product, but also a “piece code”. This piece code contains all the information related to the life of each single product, is coded and can be verified even months after the product has left the Martelli Group’s factories.

4 The Slaughterhouse

The ancient slaughterhouse has been replaced by a very modern plant that is capable of handling over 750,000 pigs a year. The establishment in Dosolo (MN) is approved by United States and Japanese authorities and handles only hogs raised in compliance with rules of the Consortium del Prosciutto di and San Daniele. These animals are therefore guaranteed for their origin, genetics, age and healthy feeding. Our slaughterhouse supplies the most important Italian pro- ducers of charcuterie products and major distribution chains. Part of the daily production is also destined to the needs of the Martelli Group’s plants. The ready-to-cook meats are produced in the plant next to the slaughterhouse. Great care and attention is given to the packaging of the meat prepared in sterile rooms with the most modem machinery. The packs of fresh meat are intended for family consumption (mainly through chain stores) as well as for institutional work and the restaurant trade. Thanks to the “from the farm to table” formula, the most suitable meats are selected to be processed and packaged; from portioned cuts (chops, spare ribs, escalopes, stewing and roast joints), to the oven/grill ready preparations (kebabs, mixed grills, hamburgers), to breaded slices, to fresh sausages and other specialities (processed meats with organic vegetables and other strictly checked ingredients).

5 The cooked Ham

The production of cooked hams takes place in two factories: one in Vo’ Euganeo (PD), an establishment that has existed since the 80’s and has a capacity of 8,000 pieces a week; the other in Boara Pisani (PD) newly built in 2003. The Boara Pisani plant, authorised to export to the United States of America and to Japan, covers 6,000 square meters and has a production capacity of 20,000 hams per week. Thanks to modern technology, the expertise of the employees and rigorous quality control, Martelli is able to offer cooked ham at excellent value for money. Martelli’s cooked hams have an unmistakable soft and delicate taste. They are also ideal for people who follow a controlled diet or suffer from allergies and are gluten free. In addition to the cooked hams, Martelli slices and gas flushes all charcuterie products. With them, the Martelli Group has made itself the full interpreter of the consumers’ ever increasing need for a healthy and natural product.

6 The Parma Ham

Martelli’s production of D.O.P. Parma Ham takes places in three USA approved plants: one in Sala Baganza (Martelli brand) and two in Langhirano (4Stagioni and DOC&G brands) on the hills surrounding Parma. In the Doc&G plant is present a newly built installation for boning and slicing all the Parma hams produced by the Group. Only pork thighs obtained from hogs raised according to the strict “Consorzio di Parma” rules are used here. Although the three plants are equipped with the latest technology and automation, the final checks are left to and are carried out by experienced senior staff. Each plant uses the selected raw materials from our slaughterhouse but has its own production philosophy and different products in size and maturation. The Martelli Group can thus offer a qualified and wide-ranging assortment, to respond to the specific request of any domestic and foreign customer. With a single supplier like Martelli, the customer can have a very comprehensive proposal in Parma ham ranging from competitive value for money to top of the range of 24 months, all with the guarantee of a backward chain subsidiary.

7 San Daniele Ham

A welcoming “home” gives due care and attention to its hams also thanks to its expert and highly skilled workforce. This well-established home receives only the best Italian pork thighs that are carefully selected every day from thousands at the Group’s Slaughtering Industry. At this safe home, cutting- edge technologies always respect traditions and the protocols imposed by D.O.P. (Protected Designation of Origin) regulations. This home is our plant number 27 situated in Via Gemona, San Daniele del Friuli. In this town, which has the ideal microclimate for curing raw hams, the Martelli Group produces Prosciutto di San Daniele “Il Ventisette” with commitment and passion.

9 Certifications

These reflect the care and attention given by Martelli Group to every stage of the production process, and ensure consumers obtain a good and safe product. Martelli has certified its environmental management system with UNI EN ISO 14001, thus indicating the company’s commitment towards safeguarding the environment and in favour of a more rational use of energy resources with the intent of preserving natural resources. The plants have been awarded the U.S.D.A. (United States Department of Agriculture) certificate, which authorises them to export to the United States. This authorisation requires compliance with a series of highly strict requisites which make this one of the foremost international food safety certificates. The plants also comply with the directives of the British Retail Consortium (BRC), which groups together the leading companies in the largescale retail trade in the UK, and also the IFS – International Food Standard, which groups together companies operating in the large-scale retail trade in Central European countries (Austria, Switzerland, and Germany). Through these standards, operators in the food sector qualify their suppliers in accordance with requisites on quality and safety and compliance with regulations on food products.
