The Ultimate Burgoo

This authentic Kentucky Burgoo is the perfect camping recipe. Hearty, filling, and able to feed a hungry crowd, try it the next time you're on the road with lots of hungry mouths.

The Ultimate Kentucky Burgoo

Ingredients

• 2-3 lb. chicken leg quarters • 1 quart chicken broth • 3-4 lb. chuck roast, cut into chunks • 3-4 lb. shoulder, cut into chunks • 1 cup dried Great Northern beans, soaked for at least 1 hour • 2 large russet potatoes, peeled and diced • 1 cup diced onion (about 1 onion) • 1 cup diced carrot (about 3 carrots) • 1/2 cup diced celery (about 3 stalks) • 1 cup diced turnip (about 1 turnip) • 1 cup cut green beans, fresh or canned • 1 cup frozen peas • 1 cup corn, fresh or frozen • 1 14.5-oz. can diced tomatoes • 2 cups V8 • 1/2 cup A.1. Steak Sauce • 1/4- 1/2 cup Frank's RedHot, and more to taste • 1/2 cup Worcestershire sauce • Salt and pepper, to taste Directions

1. In a large, heavy-bottomed pot, cover chicken quarters in broth. Bring to a simmer and cook over low heat until tender, 30-40 minutes. Remove chicken, reserve broth in a separate bowl, and pull the from the bones. 2. Next, add pork and beef to the pot and cover with water. Bring to a simmer and cook over medium-low heat for an hour. Add soaked beans and continue simmering for another hour. Then add chicken meat, reserved chicken broth, all vegetables, and V8, A.1., and RedHot. Simmer for one more hour, stirring occasionally. Add more water toward the end if necessary, to keep the from sticking and burning. Once meat and vegetables are tender, add Worcestershire sauce. Adjust seasoning with salt, pepper, and hot sauce, and serve.
