For the sake of this wine list, our natural wines are wines that are grown or produced by winemakers implementing organic & biodynamic practices, mostly unfined & unfiltered, and the least amount of sulfur added at the end of bottling, or no sulfur added at all. These wines are complex and interesting much like our food and greatly complement our menu. These wines are alive, have character and evolve very quickly over time in the glass. They are meant to be enjoyed with food, with us here at Alter.

ACTION: Notice of proposed rulemaking. SUMMARY: The Alcohol and Tobacco Tax and Trade Bureau (TTB) proposes to establish the approximately 17,360-acre “Upper Lake Valley” viticultural area in Lake County, California. TTB also proposes to expand the boundary of the existing 1,093-square mile Clear Lake viticultural area so that the proposed Upper Lake Valley viticultural area is wholly within it. Both the established Clear Lake viticultural area and the proposed Upper Lake Valley viticultural area are entirely within the established North Coast viticultural area. TTB designates viticultural areas to allow vintners to better describe the origin of their wines and to allow consumers to better identify wines they may purchase. TTB invites comments on these proposals. DATES: Comments must be received by [INSERT DATE 60 DAYS AFTER DATE OF PUBLICATION IN THE FEDERAL REGISTER]. ADDRESSES: You may electronically submit comments to TTB on this proposal, and view copies of this document, its supporting materials, and any comments TTB receives on it within Docket No. TTB–2021–0001 as posted on Regulations.gov (https://www.regulations.gov), the Federal e-rulemaking portal.

Now talking about wines, the Wine and sprit association of the Great Britain has sponsored the following definition of Wine ―Wine is an alcoholic beverage obtained from the fermentation of the juice of freshly gathered grapes. Fermentation is conducted in the district of origin according to local customs and traditions. To bear the name Wine, the product must come only from grapes. If made from other fruits; the fruit name must be put before the tern Wine eg. Blackberry Wine, Apricot Wine, Fig Wine. Only a small part of the world is Wine producing. This is because the grape will only provide juice of the quality required for conversion into consumable Wine where two climatic conditions prevail. 1. Sufficient sun-shine to ripen the grape 2. Winters that are moderate yet sufficiently cool to give the Wine a chance to rest and restore its strength for the growing and fruiting season.

  • Fairview La Beryl, a Traditional Handcrafted Straw Wine, Personifies the Quintessence of Grape
2006 Fairview La Beryl, a traditional handcrafted straw wine, personifies the quintessence of grape. The grapes were carefully hand harvested into small baskets and transferred to an old barn where they were delicately laid out on beds of straw to desiccate. Eventually the bunches lost about 75% of their volume, intensifying flavour and sweetness. The grapes were gently pressed and the juice fermented in French oak barrels. La Beryl is fragrant, succulent and crisp, a sumptuous dessert wine of balance and finesse. I am proud to honour my late mother with this wine. Harvest Date: February 2005 Oenological Treatment: Chenin Blanc and Semillon were harvested at 22 balling. The harvesting was done extremely carefully so not to damage any fruit. Picked into small lug boxes, and transported to a well ventilated shed to where they were carefully laid out on racks lined with straw to dry. It takes about 4 weeks for the grapes to dry out to a raisiny state. They are then pressed and allowed to ferment naturally. The fermentation can last up to 4 - 6 months, in old French Oak barrels. Winemakers Tasting Notes: This is a very special wine with enormous poise and concentration. The blend is approximately 50% Chenin Blanc and 50% Semillon. The wine has an abnormally high volatile acidity of 1.16 g/l. For a normal dry white or red wine this would be totally unacceptable, but a higher level is necessary in a straw wine, and adds another level of complexity. Colour: Warm golden straw. Aroma: Ripe creamy peach and apricot aromas.
