It combines several ingredients that our members grow in abundance. I found this recipe in the spring 2016 issue of Naturally Danny Seo. Massaging the kale greens makes them deliciously soft and tender. Enjoy!

MASSAGED KALE, AVOCADO & MANGO SALAD

1 bunch kale

1 tsp. olive oil

½ tsp. sea salt

1 avocado, diced

1 mango, diced

1 lime, juiced

¼ cup pumpkin seeds

Wash kale and remove stems. Cut kale into thin ribbons and place in a large bowl. Add olive oil and sea salt to the kale. Massage with hands for 2 to 5 minutes or until the kale is bright green and tender.

Gently fold in your avocado and mango, reserving a few of the pieces for garnish.

Transfer the salad to a serving bowl. Drizzle with lime juice and pumpkin seeds. Garnish with the reserved avocado and mango.

Page 3 J U LY 2 01 6 CLUB NOTES Garcinia humilis -- Achachairu

Our latest addition to the CFG nursery/grove is Garcinia humilis , known commonly as Achachairu or achacha , a small, prolifically-fruiting tree related to the mangosteen that grows in the southern part of the Amazon basin in the central area of Bolivia, but recently has been planted on a commercial scale in Burdekin, Australia. The taste is described as both bitter and sweet and is somewhat reminiscent of lemonade. The rather tough, bitter rind can be split open with a knife or with the teeth, and the edible part of the fruit sucked off the seed. We obtained the tree from ECHO where they expect it can thrive in Southwest Florida.
