BOTTLE AND WINE GLASS ON TABLE by Pablo Picasso
“In 1912, artist George Braque created the first Cubist Paper Collé by gluing strips of wood grained wall paper to a drawing. Much like the artists before him and the artists before that artist, another artist drew inspiration from the idea. Pablo Picasso created Bottle and Wine Glass on Table in 1912 using Charcoal, ink, graphite and cut newspaper. Much like the art you see in a museum, winemaking is an art that is passed on generation after generation. Some generations stay true year after year honoring the style their family has honed for decades. Some leave the nest and take what they’ve learned to create their own style. Either way, it brings me great pleasure to be able to offer the wines on these 2 pages to you as a glass pour. Iconic and classic, these winerys and winemakers are truly the best of the best.”-Amy

QUINTESSA 2016 6oz $80
“Speaking of iconic wines… The Huneeus family founded Quintessa in 1990. Using organic and biodynamic farming practices they strive for a balanced ecosystem to ensure they are honoring the land around them. The actual winery was designed to fit into the contours of the hillside so gravity can be used to gently bring the grapes into the cellar. I think Valeria Hunneeus said it best “Quintessa should be farmed in a way that is respectful to the land as a living entity”. The 2016 is a beautiful example of that respect.”-Amy

LECLERC-BRIANT BRUT ROSÉ NV $135
“Founded in 1872, Leclerc Briant was not only one of the first growers to adopt organic principles, but one of the first to focus on single vineyard style Champagnes. Today, they continue the tradition by adding Biodynamic principles. (Call me over to your table, and I’ll be happy to regale you with the witchcraft that is known as biodynamics!!) This particular Rosé is made from 95% Chardonnay and 5% Pinot Noir. If you want racy, high-toned and sexy as hell, this is what you want to be drinking.” - Amy

HAMPTON WATER ROSÉ 2018 $58
“Legend has it that Hampton Water came about one night when Jesse and his Notre Dame roommate, Ali, were at his house in the Hamptons, drinking what Jesse's dad (Jon Bon Jovi) liked to refer to as "pink juice." (me too, Jon. me too, but only at breakfast). “We said, ‘No, no, listen. Dad, you’re sitting in the Hamptons, you’re drinking Hampton Water”. “He said, ‘That’s hilarious, can you imagine if someone put that on a bottle?’” Such a great story and the wine is delicious. Made with grenache, cinsault, mourvèdre and syrah, you have a light, refreshing and aromatic wine. Everything you need for a hot summer day on the patio.” - Amy

BURGUNDY CHARDONNAY
THE VINEYARDS OF CHABLIS “When looking for a white wine, all too often it’s a very “ABC” request... anything but Chardonnay. But Chardonnay is misunderstood, and deserves a chance to prove it! Like many things that get popular over time, change can yield positive results, but classics are often the best. Burgundy is where this flavor shifting grape originally thrived and made legendary wines. The tongue-tingling minerality of well-made true Chablis, sublime richness of great Meursault, or endless complexity of Montrachet simply can’t be found anywhere but here. Especially if you’re enjoying our seafood towers, you really should be looking here!” - TJ

PATRICK PIUZE COTEAU DE FONTENAY CHABLIS 2018 $108 “Patrick Piuze… how do I even begin to describe him? He’s one of those forces of nature that makes you stop and observe what you are witnessing. Bawdy at times, serious the next, you don’t know whats going to come out of his mouth at any given moment. Patrick worked under Olivier Leflaive for 4 years honing his craft and diving deep into the appellations of Chablis. After a stint with Verget, and 3 years with Brocard, he was ready to start his own winery. Patrick believes that the true personality of Chablis is found in the acidity and minerality. Much like Patrick Piuze himself, there is an honesty to them, that I absolutely love”- Amy

CHARDONNAY OLIVIER LEFLAIVE MEURSAULT 2016 $165 “We stayed at his hotel in Puligny-Montrachet and were given tours of the winery and the vineyards. Like much of France and most of the wine world, great wine is made in the vineyards. Having spent 10 minutes touring the winery, we proceeded to spend the next 2 hours in the vineyards tasting the wines. Olivier Leflaive, started his negociant business separate from his family (Domaine Leflaive) in 1984. His sole goal has been not just to make great wine, but to bring a human face and life into it. I love that philosophy. Don’t you?”-Amy

DOMAINE JULES DESJOURNEYS POUILLY-FUISSÉ 2015 $125 “Mr Fabien Duperray spent a lifetime working as THE broker in France for the most prestigious Burgundy estates: Roumier, DRC, Coche Dury and Ente. Soon after he made his way to the Macon and using biodynamic practices in an array of different soils, Fabien has crafted some incredible chardonnays from an unexpected site in Burgundy. The expression on his label reads-le ciel seule limite- which loosely translates to –the sky is the limit. With wine this good though, we hardly think Fabien will be content with just reaching to the sky. What’s your definition of heaven? Ours is a glass of his Pouilly-Fuissé and a seafood tower.”-Amy

GRGICH HILLS ESSENCE 2017 $125 “In 1973, Miljenko ‘Mike” Grgich was simply a hardworking wine maker crafting that vintage’s chardonnay. In 1976, that chardonnay was pronounced the best in the world at the 1976 Paris tasting. In 1977, Mike founded Grgich Hills. In 2008 he was inducted into the Vitners Hall of Fame for his contribution to the world of wine. What a timeline! With his signature blue beret, Miljenko remains humble despite his mark on wine history. ‘Every day do your best, learn something new and make a new friend’-Mike Grgich. Beautiful advice. “-Amy

DOMAINE ARNAUD MORTET GEVREY-CHAMBERTIN 2017 $195
“Burgundy is frought with tragedy and Domaine Arnaud Mortet hasn’t been exempt. Young Arnaud was asked to step up at the young age of 25 to take over his father’s domaine, Denis Mortet. Denis Mortet passed tragically and unexpectedly in 2006 leaving behind his family to pick up the reins of the winery. 10 years later with 10 vintages under his belt, Arnaud launched Domaine Arnaud Mortet. While he is still the head winemaker for Domaine Denis Mortet, Arnaud is very much ready to create his own style of wine. Precise and pure, these wines have a crunchy acidity with red fruit that explodes on the palate.”-Amy

DOMAINE TAUPENOT-MERME GEVREY-CHAMBERTIN 2015 $155 “I love under the radar Burgundy houses. While the family can trace it’s roots back to the 1700’s, the domaine wasn’t founded until 1963 when Jean Taupenot married Denise Merme. It’s now run by brother and sister Romaine and Virginie. All organic, with a true dedication to the terroir, these wines are all purity and finesse. “- Amy

DOMAINE PERROT-MINOT CHAMBOLLE-MUSIGNY 2017 $315 “This was a once in a lifetime tasting appointment with Christophe Perrot-Minot. Elegant, warm, funny, and with rough, weathered hands, Christophe started opening bottles and pouring wine for us to taste. As he described each wine and how it was made or rather what it ‘needed’ to be made he repeated the same phrase over and over; “The wine decides”. A father to the vine, Christophe nurtures the grapes into becoming the absolute best they can be and never forces them to be what they can’t. 100% destemmed, and fanatical about the sorting and cutting process, these wines achieve a purity of fruit that is undeniable.”- Amy

“Fermage sounds more eloquent than sharecropping, no? Back in the 1920’s, Victor Tardy probably had no idea that Etienne Camuzet, of the famed Domaine Méo –Camuzet, would reward his 25 years of hardwork and dedication with sharecropping rights. But he did, and here we are, almost 100 years later seeing the results of a hard-working vineyard worker. Domaine Jean Tardy is now at the helm of Victor’s grandson, Guillaume and the wines are absolutely stunning. Partial to sometimes 100% destemmed translates to fresh and elegant style wines. Tannins are completely integrated letting the fruit and earth take the stage.”-Amy

“If you co-owned a domaine that has some of the world’s most sought after and expensive wines in the world, would you move to small town in Burgundy to start another domaine? You would if you were Aubert de Villaine. Currently a co-owner of Domaine de la Romanée-Conti, Aubert is still just a vigneron at heart. Together with his nephew, Pierre de Benoist, Domaine A.&P. de Villaine is producing wines that over deliver. I often get asked for hidden gems on the list, and this is one of them. “ - Amy

DOMAINE PARPETTE “LE PLOMB” CÔTE-RÔTIE 2016
$150
“Once you taste the wine, you’ll find it very hard to believe Cédric Parpette was more into cars then he was wine. Not that the two can’t exist together, but the elegance and beauty of his wines would make you think he’s been a winemaker his whole life, and not a previous auto mechanic. These Rôties have all the power and finesse of their famous neighbor Guigal, without the price tag. Is this your first time visiting the Northern Rhône? Start with the “Le Plomb” and see what it’s all about. You’ll be so happy you did.” -Amy

CHÂTEAU DE SAINT COSME, GIGONDAS 2017 $140
“Château De Saint Cosme has been passed down within the Barroul family for 15 generations. The actual château has resided in the village of Gigondas since 1416. Wine is so much more than what is in the glass, it’s about family and history. People sometimes refer to Gigondas as Châteauneuf-du-Pape’s little brother. Yeah… okay. If that’s the truth, Châteauneuf-du-Pape’s little brother can be compared to that rugged, brooding type of man that women swoon over. Or maybe that’s just me. “ – Amy

CHARLES JOGUET, CHINON 2015 $75
“A glass of Cabernet Franc set me on my wine journey and I believe it was from Charles Joguet. A man with vision, Charles was one of the first to recognize that his family’s plots could indeed be compared to the premier cru and grand cru vineyards of Burgundy. Determined to create wines of specific terroirs, Charles ended becoming an icon of Chinon. Good thing he did, or else where might I be right now? ”-Amy

LES PAGODES DES COS ST.-ESTÈPHE 2016 $180
“After playing runner up to Montrose in the fifties and sixties, Cos d’Estournel, emerged in the eighties as the leader in St. Estèphe. The Chateau sits on a ridge immediately north of the Pauillac boarder and its famous neighbor, Chateau Lafite-Rothschild. Under the direction of Bruno Prats, the Chateau advanced itself to the top of its class in St. Estèphe, expected to produce one of the finest wines of the Medoc. Sometimes referred to as a Super Second, the wine is classified as one of fifteen Deuxièmes Crus (Second Growths), but in its best vintages merits First Growth status.” -Mike

CHÂTEAU KIRWAN, MARGAUX 2010 $215 “Classified as a Third Growth in 1855, Château Kirwan began its journey in 1760 when a young lady married Mark Kirwan, a descendant of the Tribes of Galway in Ireland. Her dowry happened to be the estate soon to be named Château Kirwan. It was seized during the French Revolution with Mark narrowly escaping the guillotine. He eventually was able to reclaim the estate under Napoleon and died there in 1815. Having changed hands a few times, the Château is now owned by the Schÿler family”-Amy

QUINTARELLI PRIMOFIORE VENETO IGT 2015 $180
“It’s hard to write about the Veneto without Giuseppe Quintarelli coming to mind. Known as the Godfather of Amarone, his wines are a true work of art. Although he passed away in 2012 at the age of 84, his legacy continues with his family. The details are paramount, from the handwritten labels, the quality of the corks, to the time and patience it takes for the wine to develop. It’s such an honor being able to have these wines on the list. Every time I sell a bottle, I get a little bit sad. It’s human nature to want to hang on to beautiful things and I am no different. These wines are true masterpieces”-Amy

“I was working at an Italian restaurant with an all Italian wine list. My “Wine aha moment” happened when, for the first time, I tasted a Barolo from the iconic winery of Angelo Gaja. Here for the first time was a wine that truly spoke to my soul! A wine that to this day takes me back to my happy place whenever I taste it! I have been lucky enough to meet the younger generation of Gajas who are now at the helm, and felt like a kid in a candy store when we were able to host them for a wine training of the staff.”-Michelle

CABERNET FRANC DAMA 2015 $140
“After a long week of running the wine program, I usually like to open up a bottle of wine and do some painting on Sunday nights. I’m not an artist. I just need to get out of my head sometimes. Mary Derby, the co-owner and wine maker for DaMa wines, saw my painting on Facebook and decided to use it for her Cabernet Franc label…. Such an incredible honor. Mary is the winemaker and co-owner of DaMa wine and she is the real deal. She might be one of the original female pioneers of Washington wine, but you wouldn’t know it by her unassuming demeaner and mischevious smile. Each of her wines features a work by a female artist on the label. A lover of the arts and an incredible wine maker, Mary is an inspiration. ” -Amy

WASHINGTON
RÔTIE CELLARS NORTHERN BLEND SYRAH, WALLA WALLA 2015 $135
“Old World Wines made from New World Vines”. That is an absolute perfect way to describe what Rôtie Cellars is accomplishing in Walla Walla. I love all of the wine that is coming out of Washington these days, but for me, the syrah’s are singing. The Northen Blend is 94% Syrah and 6% Viognier and it’s smooth like buttah people. Coming from the Rocks District in Walla Walla, this wine is lush, with loads of red fruits, blood oranges, and smoked meats. Perfectly balanced and ready to be enjoyed. Pairs well with wood grilled steaks, and rainy days” -Amy

ANTICA TERRA BOTANICA 2016 $245
“Maggie Harrison worked for nine amazing vintages under the tutelage of Elaine and Manfred Krankl of Sine Qua Non. In 2005 she was asked to become the winemaker at Antica Terra, she emphatically refused but was persuaded to take a look at the vineyard and offer her opinion about the site. She reluctantly agreed. Twenty-six seconds after arriving among the oaks, fossils, and stunted vines, she found herself hunched beneath one of the trees, phone in hand, explaining to her husband that they would be moving to Oregon.”-Frankie

CARPENTER LA TACHE CLONE, SONOMA COAST 2014 $150
“I met Laura Carpenter and her husband Jake Hawkes when I went to The Alexander Valley Cabernet Camp. (Jake Hawkes makes a killer Cabernet as well.) I certainly wasn’t expecting to find a Pinot Noir that would rock my wine world….. but that’s what happened. Her husband, Jake, is the wine maker while Laura manages the business. I immediately snagged 5 cases each of the Pommard Clone and La Tâche Clone for the restaurant and good thing I did, because they are now sold out. Just like Maple & Ash, these wines are sexy as hell. Here’s my recommendation… start with a Carpenter Pinot and end with a Hawkes Cabernet. Amy

SMOKING GUN, NAPA VALLEY 2015 $140
“While traveling to Northern California in the mid-eighteen hundreds with his entire life savings, John Weinberger’s stagecoach was attacked by robbers. Passengers were told to “shell out”. Weinberger, without hesitation, shot the robbers with his Colt Navy he had hidden under his seat. John, a visionary, then became one of the first pioneers in Napa Valley winemaking when he built the first stone winery in St. Helena in 1873. Smoking Gun represents the bygone days of Napa Valley where, with perseverance, dreams can come true. Cole Ballentine, fifth generation Italian/Irish Napa Valley native, embodies the future in trailblazing Cabernet Sauvignon that remains true to its place.”

HOWELL MOUNTAIN
“So many of these wines hold a special place in my heart as far as memorable bottles go, but the wines made here are unique. For starters, Howell Mountain is the only AVA in Napa that is elevation restrictive (minimum 1400 feet). This puts the vineyards above the fog line and in more constant sun. The appellation is also located at the warmer north end of Napa Valley and faces west to catch the long hours of afternoon sun. These conditions factor into the ripe, opulent character of the wines while giving them the intensity you’d expect from high elevation grapes. Bold fruit and a sexier finish make the wines approachable, yet serious in depth. Spoil yourself with one of these!”-TJ

“Grapevines are living, sentient beings with their days and nights consumed by concern for vital life choices, like when to sweeten their fruit to attract birds to spread their seed, or when to break bud in the spring. These are critical decisions a vine makes each and every day. They do so by taking information from their environment. It knows when the birds visit, it’s on familiar terms with surrounding insects and their life stages and it takes a cue from the acorns falling off the nearby oaks.” -John Williams, Owner and Winemaker

“When Sara and her husband Jonah Beer were offered surplus fruit from Ghost Block vineyard. -The richness and depth were undeniable, yet the elegance is what drives the expression of this famous vineyard. Much like an “old world” wine it speaks of a place, the terroir. As well, the high-toned, lower alcohol, resembles the wines of the 70’s and 80’s that put Napa Valley on the map. In short, these wines (if you have the willpower to not drink right away) are what you want to snatch up, cellar, and watch mature in its complex beauty and VALUE!”-Frankie

Today, the Hawkes family farms over eighty-five acres of Cabernet Sauvignon, Merlot, and Chardonnay vineyards in the southern half of Alexander Valley, all planted on sparsely-soiled hillsides, all yielding small amounts of intense fruit. In bottling small lots of Hawkes Wine, we aim to translate our extraordinary standards for the quality of our grapes into extraordinary wine, estate grown and produced in Alexander Valley, Sonoma County. You’ll know if you’ve had our wines. We’re here drinking wine every day, come join us!”-Jake Hawkes

“Ridge uses an approach they refer to as “pre-industrial” winemaking. Prior to prohibition there was a much more traditional approach to winemaking. Ridge holds firm in the belief that increased industrial practices interfere with the distinctive qualities of each vineyard and mask the true character of the wine. In 2008 they began the certification to becoming certified organic and are now the largest grower of organically certified grapes in Sonoma County and in the Santa Cruz Mountains.”-Amy

MEET THE MAPLE & ASH WINE TEAM
AMY MUNDWILER - Wine Director
“My passion for wine started with a glass of cabernet franc from Chinon. I had just come off of a 15 year retail management career and really didn’t know what I wanted to do with my life. After spending 6 weeks in Spain traveling around the country, I decided to get a serving job until I decided what I wanted to do with my life. I had always had a passion for the rituals and history behind food and wine and Spain intensified that. I was hired at a little wine bar that happened to serve a cabernet franc by the glass. Cab franc hadn't been in my wheelhouse and it really was an ah-ha moment for me. I grabbed a copy of The Wine Bible, an empty wine glass and I got to work studying and tasting. 6 years and 3 restaurants later, Belinda Chang gave me the opportunity to be her assistant wine director here at Maple & Ash. 9 months later, I was the Wine Director. It's been a seriously wild ride. Outside of wine, I sing a little jazz and paint. One of my paintings was recently chosen for a wine label, which I am beyond thrilled about. Having my hobby collide with my career, should be interesting. Cheers!"
MICHELLE CRABTREE - Assistant Wine Director
“I come from humble beginnings of working in a, small town Italian restaurant, where the only wine served was Chianti, Pinot Grigio and White Zinfandel. Many horrible hangovers later, my love for drinking wine grew past my humble beginnings. I have worked in over 30 restaurants (almost more than I care to admit) I went through my “I only drink Merlot” stage to graduating to drinking all things Italian when I worked at Osteria Langhe here in Chicago. My Heart lies in Italy!!!! I LOVE Champagne as well, and love to host a great brunch where plenty is served and enjoyed! Beyond wine my greatest loves in life are my son Conal, my mom and my niece Josie.
MIKE LOVEISKY - “Doc Love”
“Musician with a finance degree, night owl by nature, and lover of all things wine & food. I was raised in the Northwest suburbs of Chicago and come from a large family with five siblings. My first job in a restaurant was as a bus boy in a small family owned wine bar; I was 19. I knew nothing about wine at the time, but very quickly became consumed by it. My quintessential “Ah-Ha!” moment was a bottle of 2003 Freemark Abbey Sycamore Vineyards. What started out as a hobby turned into a passion, and somehow years later, into a career. My father raised me on The Beatles and America’s Pastime. So, in the words of the Great Bambino “Remember kid, there’s heroes and there’s legends. Heroes get remembered but legends never die, follow your heart kid, and you’ll never go wrong.”
FRANKIE VILLAR - aka Cellar Ninja
“Growing up in Kansas I was lucky to work in my family's restaurants alongside a very special woman, my grandmother. At the time I didn't see it that way, giving up my free time after school, my weekends, and there was no such thing as summer vacation. She taught me the days work was never done until it was tomorrow. When I moved to Chicago over a decade ago I stayed in the hospitality industry doing much of the same I did back in Kansas. At a point I became bored. When I found wine, I found a work and a passion that made me want to devote all my free time to. After some time I traveled to New Zealand and worked with the Weaver family at Churton vineyards for the harvest season, and it felt like home to me, working 12-15 hour days doing, making something that meant as much to them as working for my family when I was growing up. For me wine is that days work that will never be done until it is tomorrow and I am happy to have it that way. So cheers grandma, and thank you for helping me find my way!”
TJ BOZEK - “The Terroirist”
“I found myself in the restaurant business as a means to put myself through college, and more than 22 years later, I’m still here and having more fun with it than ever. When I’m not thinking about food and drink, I like to be outside (especially if it involves disc golf), Chicago sports, and traveling around the world with my girl. I’m a big science nerd at heart and naturally got more curious about wine the more time I spent around it. However, my moment of flavor revelation came back in 2004 while tasting food and beer together during a training for a new restaurant opening. Somehow, some way, the flavors perfectly mingled to create something memorable enough to recall in detail all these years later. I may have missed out on a lot of great foods and wines from being a picky eater as a kid (and oldest of 5), but I’m all about making up for lost time! If you like exploring new wines or getting nerdy about them, I’m your guy.” 89
