Supone también acercarse a la región donde nacen los vinos generosos de la D.O.P. Montilla-Moriles. Unos vinos que constituyen un mundo aparte dentro del universo de la enología y que se han convertido en patrimonio exclusivo de un marco que no puede trasladarse a ningún otro rincón de España. Montilla-Moriles Wine Route HISTORY AND CULTURE Going into Montilla-Moriles Wine Route means walking through a land that preserves an important cultural, historical, architectural, artistic and ethnographic legacy. It also means approaching the region where born the generous wines of the D.O.P. Montilla- Moriles. Some wines that constitute a separate world within the universe of oenology and that have become the exclusive heritage of a framework that can’t be transferred to any other corner of Spain. 4 EL VINO Joven, Fino, Amontillado, Oloroso y Pedro Ximénez. Son las cinco clases principales de vinos de la Denominación de Origen Montilla-Moriles, en las que llama la atención el espectacular abanico de colores y tonalidades que despliegan. Después, sus aromas inconfundibles, que van desde el frescor de la fruta hasta la madera más noble, dejando en el paladar un recuerdo imborrable. Las bodegas de la Ruta del Vino Montilla-Moriles ofrecen la posibilidad de disfrutar de una cata a medida, tanto para conocedores como para neófitos, para amantes o simplemente curiosos, al tiempo que muestran las peculiaridades de la elaboración de estos vinos donde la estrella indiscutible es la uva Pedro Ximénez y en la que interviene la crianza biológica (para el Fino) y la crianza oxidativa (para los Amontillados, Olorosos y Pedro Ximénez) siguiendo el sistema de criaderas y soleras. 5 THE WINE Joven, Fino, Amontillado, Oloroso and Pedro Ximénez. Un delicioso recorrido que lleva a conocer platos como el salmorejo, el flamenquín, las habas con berenjenas y morcilla, las naranjas picás con bacalao, las gachas de mosto, el arrope, el dulce de membrillo, el pastel cordobés, los alfajores… Esta Ruta también ofrece sabores innovadores como la reducción de Pedro Ximénez para aderezar postres, aperitivos o platos principales, cada vez más utilizada en la cocina de autor, y otros originales productos como los helados de vino o la gelatina de Pedro Ximénez, complemento ideal de paté, foie, quesos, carnes a la brasa o simplemente con unas tostadas. Two territories of similar extension and with historical coincidences in their development have been selected: the Okanagan Valley, Canada, and the region of Somontano, Spain. Methodologically, an analysis of the content on Twitter has been performed, collecting 1377 tweets. The conclusion is that wineries create sentimental and experiential links with the users, avoiding commercial communications. Specifically, Okanagan wineries establish a relevant conversation network on Twitter based on the high percentage of responses, which is 31.3%, but this is not so in the case of Somontano, which is 12.8%. The tourist attractions most used to create a bond are the wine landscape and the gastronomy in the case of both territories. The tourism sustainability variable remains a minor matter in the emission of messages on Twitter. The sweet wine AOPs range from light-colored Ambré, Tuilé, Hors d’Age to Rancio and Grenat (garnet). High above the seaside village in Collioure, Vincent Cantié launched Domaine La Tour Vielle in the 1980s. Kermit Lynch of Berkeley, California, has imported Cantié’s wines for 30 years, partly because of the winery’s mission of following what nature gives their grapes rather than following the market. His mix of red, white, rosé and vin doux naturel has garnered him a wide reputation. Dan Davis, wine director at Commander’s Palace in New Orleans, has one of the largest lists of vin doux naturels in the U.S. He surprises guests by pairing a Domaine La Tour Vieille vin doux naturel with natural fruit flavors and acidity with courses during the chef’s tasting menu.     TOMÀS CUSINÉ VILOSELL 2015 TOMÀS CUSINÉ || In 2003, Tomàs Cusiné decided to embark on a new wine producing project; one into which he could put all of his passion and knowledge for producing the finest wines. His extensive experience in the DO (with Castell de Remei) enables Tomàs to create wines of the highest character and elegance, marking the beginning of a project with great hopes and ambitions His aim, as always, was to elaborate wines full of character that were capable of fully reflecting the characteristics of the soils from which they were produced. He also wished to take up the challenge of producing wines that reflected his personal wine-making philosophy. COSTERS DEL SEGRE || The Costers del Segre DO was created in 1986 and it have seven subzones with several different micro climes. It is a unique zone with both indigenous, native varieties and more recent plantings of many other varieties. Tomàs Cusiné is located in the village of El Vilosell, province of Lleida subzone Les Garrigues, in the totally south of the DO, calcareous area on the north side of the Sierra de la Llena bordering by the province of Tarragona and the regions of Priorat and Conca de Barberá. VILOSELL 2015 || BLEND | 55% Ull de Llebre (Tempranillo), 25% Syrah & 20% Garnatxa VINEYARDS | Vineyard parcels are located on slopes, with older vines planted ‘en vaso’ and other varieties (planted in 2004) on a high density trellis system.
