We celebrate Labor Day to pay tribute to the achievements of American workers and the improvements to working conditions in America. 1 Mifflinburg Area School District August 30, 2021 Kale Citrus Salad YIELDS: 6 servings PREP TIME: 0 hours 20 mins Ingredients 1 bunch Kale, Leaves Torn Off the Stalks 1 whole Jalapeno, Seeded and Sliced Very Thin 3 whole Tangerines or Clementines (or 1 Orange), Peeled and Cut into Chunks 4 oz. Goat Cheese/chevre/or cheese of choice 1/4 c. Orange Juice 2 tbsp. Olive Oil 1 clove Garlic, Pressed or Grated 1 tsp. Sugar Salt to Taste Black Pepper to Taste 1 tbsp. (heaping) Sour Cream or Plain Greek Yogurt Directions Grab bunches of the kale leaves and use a sharp knife to thinly slice them. Keep going until you have a big pile of finely shredded kale. To make the dressing, combine the orange juice, olive oil, garlic, sugar, salt and pepper in a small mason jar. Shake vigorously until all combined, then add the sour cream or yogurt and shake again until it's nice and creamy. Toss the kale in half the dressing for a minute or so, then add the jalapeno slices and citrus pieces. Toss again until combined. Add a little more dressing if it needs it (extra dressing can be stored in the fridge and used for any salad.) At the last minute, break the goat cheese into chunks with a fork and toss it into the salad. Serve! (Note: because they kale holds up well, the salad can be tossed 15 minutes before serving.) 2 Mifflinburg Area School District August 30, 2021 Mifflinburg’s High School Marching Band and Color Guard performing on Friday night. Approval of Minutes On a motion by Kenneth Bussard and Norman Krumenacker, the minutes of the October 5, 2011, meetings were approved. Financial Reports On a motion by Norman Krumenacker and Ralph Cecere, the Committee unanimously approved the October District 6 Financial Report. On a motion by Thomas Kakabar and Kenneth Bussard, the junior varsity entry fees will be reimbursed to schools for the 2011 Cross Country Championship, due to the weather related to the junior varsity competition. A motion was made by James Price and Kenneth Bussard to reimburse Kim Hubler for the expenses related to evaluating two field hockey evaluators. The tournament reports for cross country, golf, tennis, girls’ volleyball, field hockey, soccer and football will be presented at the December meeting. Sportsmanship Good sportsmanship is something that is taught, modeled and reinforced. Michael Hudak and Kathy Getz reviewed the below-listed disqualification forms. Zucchini Parmesan 2 large zucchinis, thinly sliced 2 tablespoons olive oil 1 large onion, diced 2 cloves garlic, minced 1 (16 ounce) jar spaghetti sauce 1 cup shredded mozzarella cheese Directions 1. Preheat oven to 325 degrees F (165 degrees C). 2. In a large pot boil the zucchini until tender; drain. Meanwhile, in a medium frying pan heat the olive oil over medium heat and sauté the onion and garlic until the onion is tender. 3. Combine the zucchini, onion and garlic in a 9x12 inch casserole dish, and mix well. Pour the spaghetti sauce over the mixture and stir well. Top with mozzarella cheese (use more or less depending on your preference).

Ingredients • 1/4 cup olive oil • 3 tablespoons lemon juice • 1 tablespoon white wine vinegar • 2 garlic cloves, minced • 2 teaspoons grated lemon zest • 1 teaspoon salt • 1/2 teaspoon sugar • 1/4 teaspoon dried oregano • 1/4 teaspoon pepper • 1-1/2 pounds boneless skinless chicken breasts, cut into 1-1/2-in. pieces • 3 medium zucchinis, halved lengthwise and cut into 1-1/2-inch slices • 3 medium onions, cut into wedges • 12 cherry tomatoes Directions • 1. In a large bowl, combine the first nine ingredients; set aside 1/4 cup for basting. Pour half into a large bowl. Add chicken; turn to coat. Pour the remaining marinade into another large bowl. Add the zucchini, onions and tomatoes; turn to coat. Cover and refrigerate chicken and vegetables for up to 4 hours or overnight. • 2. Drain and discard marinade. Alternately thread chicken and vegetables onto metal or soaked wooden skewers. Grill, covered, over medium heat for 6 minutes on each side or until chicken juices run clear, basting occasionally with reserved marinade.

Each recipient received a $1500 scholarship based on a competitive application process. Funds for this program are generated from the ASHE Harrisburg Section annual golf outing and 50/50 drawings at its monthly meetings. The Harrisburg section is proud to play a positive role in helping the following aspiring individuals achieve their career ambitions. Benjamin Allen is a graduate of Juniata High School where he participated in many sports and volunteered for Special Olympics and the United Way. Benjamin is currently attending Bucknell University for Civil Engineering and made the Dean’s list in his first semester. In addition to his studies he joined the baseball team in the spring semester. ~ MORE ~ SCHOLARSHIP WINNERS Page 2 Upon graduation from Greenwood High School, Andrew Burns plans to attend Drexel University for Civil Engineering. Brodie Gleason will be attending Virginia Military Institute with a major in Civil Engineering. He is currently the senior class president at Warwick High School.
