Have extra zucchini from your garden? Try this healthy recipe for dinner!

Zucchini Parmesan

 2 large zucchinis, thinly sliced  2 tablespoons olive oil  1 large onion, diced  2 cloves garlic, minced  1 (16 ounce) jar spaghetti sauce  1 cup shredded mozzarella cheese

Directions

1. Preheat oven to 325 degrees F (165 degrees C). 2. In a large pot boil the zucchini until tender; drain. Meanwhile, in a medium frying pan heat the olive oil over medium heat and sauté the onion and garlic until the onion is tender. 3. Combine the zucchini, onion and garlic in a 9x12 inch casserole dish, and mix well. Pour the spaghetti sauce over the mixture and stir well. Top with mozzarella cheese (use more or less depending on your preference). 4. Bake in preheated oven for about 20 minutes, or until heated through and cheese is bubbly.

Support Mifflinburg Ag Student in His Fall Mum Sale Ag Student, Colby Gessner started his Supervised Agricultural Experience Project on June 15, 2018. Colby decided to grow hardy mums since it was something he has never grown before. While he was excited to take on a new challenge, the project has been time consuming, and it has also been rewarding. In addition to fertilizing his mums daily, Colby explained that he has been using a tap irrigation system to water his plants twice a day. He is excited to see the growth of his plants in just a short time. He reminds us that mums are perennials, and if you plant them in the ground, they will come back each year. Colby will be selling the mums he grew on all Saturdays through September from 8:00 A.M. until noon

at the Lewisburg Greenhouse on Saint Anthony Street between 2nd and 3rd Streets. Also, he will be selling them here at the Mifflinburg Area School District. Potted mums will be sold for $6.00 each and are available in red, orange, yellow and maroon. If you are interested in supporting Colby’s project and purchasing some of his mums, please email his teacher, Mrs. Linsday Spurrier at [email protected]. Mrs. Spurrier will get you in contact with Colby to place your order. Pre-orders are due by Tuesday, September 18, 2018. Great job Colby!
