Try this healthy recipe for dinner! Zucchini Parmesan 2 large zucchinis, thinly sliced 2 tablespoons olive oil 1 large onion, diced 2 cloves garlic, minced 1 (16 ounce) jar spaghetti sauce 1 cup shredded mozzarella cheese Directions 1. Preheat oven to 325 degrees F (165 degrees C). 2. In a large pot boil the zucchini until tender; drain. Meanwhile, in a medium frying pan heat the olive oil over medium heat and sauté the onion and garlic until the onion is tender. 3. Combine the zucchini, onion and garlic in a 9x12 inch casserole dish, and mix well. Pour the spaghetti sauce over the mixture and stir well. Top with mozzarella cheese (use more or less depending on your preference). 4. Bake in preheated oven for about 20 minutes, or until heated through and cheese is bubbly. Support Mifflinburg Ag Student in His Fall Mum Sale Ag Student, Colby Gessner started his Supervised Agricultural Experience Project on June 15, 2018. Colby decided to grow hardy mums since it was something he has never grown before. While he was excited to take on a new challenge, the project has been time consuming, and it has also been rewarding. In addition to fertilizing his mums daily, Colby explained that he has been using a tap irrigation system to water his plants twice a day. He is excited to see the growth of his plants in just a short time. He reminds us that mums are perennials, and if you plant them in the ground, they will come back each year. Colby will be selling the mums he grew on all Saturdays through September from 8:00 A.M. until noon at the Lewisburg Greenhouse on Saint Anthony Street between 2nd and 3rd Streets. Also, he will be selling them here at the Mifflinburg Area School District. Potted mums will be sold for $6.00 each and are available in red, orange, yellow and maroon. If you are interested in supporting Colby’s project and purchasing some of his mums, please email his teacher, Mrs. Linsday Spurrier at [email protected]. Mrs. Spurrier will get you in contact with Colby to place your order. Pre-orders are due by Tuesday, September 18, 2018. Present were: Raymond Wotkowski, Alberta Ake, Kenneth Bussard, Ralph Cecere, David Crumrine, Charles Glasser, Donald Hosterman, Thomas Kakabar, Norman Krumenacker, William Marshall, James Price, Dean Rossi, Kenneth Salem and Curtis Whitesel. Those not present were Kathy Getz, Kim Hubler, Michael Hudak and Gary Jubas. Approval of Minutes On a motion by Kenneth Bussard and Norman Krumenacker, the minutes of the October 5, 2011, meetings were approved. Financial Reports On a motion by Norman Krumenacker and Ralph Cecere, the Committee unanimously approved the October District 6 Financial Report. On a motion by Thomas Kakabar and Kenneth Bussard, the junior varsity entry fees will be reimbursed to schools for the 2011 Cross Country Championship, due to the weather related to the junior varsity competition. A motion was made by James Price and Kenneth Bussard to reimburse Kim Hubler for the expenses related to evaluating two field hockey evaluators. The tournament reports for cross country, golf, tennis, girls’ volleyball, field hockey, soccer and football will be presented at the December meeting. Sportsmanship Good sportsmanship is something that is taught, modeled and reinforced. Michael Hudak and Kathy Getz reviewed the below-listed disqualification forms. Grill: 15 min. YIELD: 6 servings. Ingredients • 1/4 cup olive oil • 3 tablespoons lemon juice • 1 tablespoon white wine vinegar • 2 garlic cloves, minced • 2 teaspoons grated lemon zest • 1 teaspoon salt • 1/2 teaspoon sugar • 1/4 teaspoon dried oregano • 1/4 teaspoon pepper • 1-1/2 pounds boneless skinless chicken breasts, cut into 1-1/2-in. pieces • 3 medium zucchinis, halved lengthwise and cut into 1-1/2-inch slices • 3 medium onions, cut into wedges • 12 cherry tomatoes Directions • 1. In a large bowl, combine the first nine ingredients; set aside 1/4 cup for basting. Pour half into a large bowl. Add chicken; turn to coat. Pour the remaining marinade into another large bowl. Add the zucchini, onions and tomatoes; turn to coat. Cover and refrigerate chicken and vegetables for up to 4 hours or overnight. • 2. Drain and discard marinade. Alternately thread chicken and vegetables onto metal or soaked wooden skewers. Grill, covered, over medium heat for 6 minutes on each side or until chicken juices run clear, basting occasionally with reserved marinade.

Goat Cheese/chevre/or cheese of choice 1/4 c. Orange Juice 2 tbsp. Olive Oil 1 clove Garlic, Pressed or Grated 1 tsp. Sugar Salt to Taste Black Pepper to Taste 1 tbsp. (heaping) Sour Cream or Plain Greek Yogurt Directions Grab bunches of the kale leaves and use a sharp knife to thinly slice them. Keep going until you have a big pile of finely shredded kale. To make the dressing, combine the orange juice, olive oil, garlic, sugar, salt and pepper in a small mason jar. Shake vigorously until all combined, then add the sour cream or yogurt and shake again until it's nice and creamy. Toss the kale in half the dressing for a minute or so, then add the jalapeno slices and citrus pieces.

Each recipient received a $1500 scholarship based on a competitive application process. Funds for this program are generated from the ASHE Harrisburg Section annual golf outing and 50/50 drawings at its monthly meetings. The Harrisburg section is proud to play a positive role in helping the following aspiring individuals achieve their career ambitions. Benjamin Allen is a graduate of Juniata High School where he participated in many sports and volunteered for Special Olympics and the United Way. Benjamin is currently attending Bucknell University for Civil Engineering and made the Dean’s list in his first semester.
