RESEARCH / INVESTIGACIÓN Potencial enoturístico de las Islas Baleares Enotouristic potential of the Balearic Islands José Ramón Cardona1 & Marga Vachiano Pol2 RESUMEN: El turismo del vino es una oportunidad de diversificación económica para las bodegas y para el sector turístico. Hay bastantes estudios académicos sobre este tipo de turismo en las regiones productoras del Nuevo Mundo, pero son escasos en las regiones del Viejo Mundo. En este trabajo se describe la situación actual del sector vitivinícola en las islas Baleares, archipiélago del Mediterráneo caracterizado por su fuerte desarrollo turístico. Este sector está constituido por un centenar de bodegas repartidas entre las ocho indicaciones existentes. En general, son bodegas pequeñas, de creación reciente y ya organizan algunas visitas. El sector no llegará a poseer grandes volúmenes en comparación con el turismo de sol y playa, pero posee potencial para mejorar los ingresos de las bodegas y para diversificar la oferta turística de las Baleares. Palabras Clave: Turismo del vino, Islas Baleares, potencial. ABSTRACT : Wine tourism is an opportunity for economic diversification for wineries and for the tourism sector. There are quite a few academic studies about this type of tourism in the producing regions of the New World, but are scarce in the regions of the Old World. This paper describes the current situation of the wine industry in the Balearic Islands, Mediterranean archipelago characterized by its strong tourism development. This sector consists of one hundred wineries spread among the eight existing indications. In general, wineries are small, of recent creation and already organizing some visits. The sector will not possess large volumes in comparison with the sun and beach tourism, but has potential to improve the income of the wineries and to diversify the tourist offer of the Balearic Islands. BINISSALEM Binissalem is located in the centre of the island of Majorca at the foot of the Serra de Tramuntana. This mountain range protects the zone from the cold northerly winds, creating its characteristic microclimate. The limestone soil yields grapes with perfect ripeness and wines that are full-bodied and suitable for barrel aging. The principal native varieties are Manto Negro and Premsal Blanc, also known as Moll. Other lesser used native varieties of red grape that are permitted are Gollassa and Callet, and of white grape, Giró Ros. Standards require that red wines should contain at least 30% of Manto Negro grapes, and white wines, at least 50% of Premsal Blanc or Muscat grapes. Protected Designation of Origin (D.O.P.) PLA i LLEVANT The vineyards are located practically at sea level with the entire growing cycle being greatly influenced by the sea breeze. At midday, the wind blows inland from the sea, refreshing the vines and also bringing moisture and sea salt, which is organoleptically present in the wines produced. The clay limestone soil is rich in minerals and is a reddy colour owing to its iron content, and is known in Majorca as “Call vermell”. It contributes to the optimum ripeness of the vines and high sugar levels, which consequently yield wines with a good alcohol content and which are suitable for aging. The native varieties of red grape are Callet, Fogoneu, Gorgollasa and Manto Negro, whilst the native varieties of white grape are Giró Ros and Premsal Blanc (or Moll).

    Susana (sempre...) Maior Negre 2010 Red Wine Susana (sempre….) Premium Red 2010 was made from 66% Cabernet Sauvignon, 12% Merlot, 3% Callet and 2% Syrah. The 2010 Harvest Winter 2010 was cold and wet. Spring, however was dry and mild. Summer too was cool at the beginning. July was humid and hot, but August was rather cooler than normal. As a result the grapes ripened later than normal. It was a very healthy year for the grapes, and there were no reported vineyard diseases. Yields were higher than the previous year, and overall it was an excellent vintage. Harvesting and Winemaking The creation of Susana (sempre…) Premium Red began with hand harvesting the grapes in vineyards just a few metres away from the winery and getting them into the winery in the very early hours of the morning, to avoid the possibility of the slightest oxidation, which might lessen their aromatic potential. Cabernet Sauvignon was harvested on 8th. and 9th. September, Manto Negro began on 10th. September and Merlot was harvested on 24th. and 25th. September. All the grapes were destalked and transferred immediately to reception tanks. Once the tanks were full, the mash was chilled to the ideal temperature for fermentation of the individual varieties. Manto Negro was fermented at between 15 and 18ºC, to produce a particularly fruity wine. Cabernet Sauvignon and Merlot were fermented at between 25 and 28ºC. Fermentation and maceration lasted for around 20 days, after which time the young wine was racked from the solids which were subsequently sent for pressing; the press wine was kept separate and would play no further part in the making of this finished wine.

    What Region . .? International attention has definitely focused on Spain over the last several years. Many people are discovering what the Spanish have known for a long time. Spain has a huge variety of wine of amazing quality. And great values abound. Here are five wines to explore some of the varietals that are making a name for Spanish wines outside of Rioja. Try a couple and see why these are offering values far beyond most wine growing regions. Altos de la Hoya Monastrell 2002, Jumilla - An enticing mouthful of deep, dark fruit on this Monastrell made from older, ungrafted vines. A superb value - $9.99 Riocua Mencia 2000, Bierzo - Mencia is a varietal that is related to Cabernet Franc & the region of Bierzo has been producing wines since Roman times. This spends 4 months in new French oak barrels. Very smooth, with great fruit & floral flavors that are balanced by just a hint of toast. Great balance and very complete mouthful - $18.99 Abadia do Cova Seleccion Especial Mencia 2001, Ribera Sacra - Ribera Sacra is actually in Galicia, just over the mountains from Bierzo. Another Mencia that spends 10 months in a mix of French & American oak, this is not as exuberant as the Riocua, but complex & fuller. Dark cherry, floral notes & hint of herbs on the nose make this another wine A church in northern Castilla Y worth trying. - $21.99 León. La Lengua Reserva 1999, Cigales - From a small region in Castilla Y Leon, this is an impressive Reserva. Made with older vine Tempranillo, this is an excellent wine from this region better known for its rosados.

    HOW DO WE FEEL ABOUT NATURAL WINE? We drink, breathe, and sleep thinking about the history of the humble grape and its importance in the world. Kinda a lot of pressure for a fermented beverage, but we know Wine can handle it. We’ve gone all in on natural wine because we believe in celebrating farmers and other stewards of the land who work tirelessly to create biodiverse landscapes. Think of wine as a transmitter of a certain place and time in history: if made with nothing but grapes, a bottle has the ability to tell us what the soil in the vineyard is composed of, what the weather was like in a given vintage, and what the surrounding flora and fauna are doing. Cover it up with any number of 60-plus legal chemical additives, and what are you left with? Something engineered that no longer transmits its story. There is no official definition of what natural wine is. But we have our definition, and here’s our promise: every wine on this list is grown organically or biodynamically, free of any chemicals in the vineyard. Every wine on this list is made without any additives except sulfur, which is naturally occurring in grapes. Every wine on this list is fermented with its own living, wild yeast. And every wine on this list is made in small, or very small, amounts. It’s difficult to find fault with any of that. We love these wines and the people behind them, and we hope you do too.
