MASHED POTATO CASSEROLE 5 potatoes, peeled and cut into 2” Recipe by Kate Jerome chunks 6 c. shredded Cook potatoes until tender. Cook cabbage in boiling green cabbage salted water about 6 minutes. Drain potatoes and 4 oz. reduced fat return to pot. Place over low heat and shake, uncovered cream cheese, softened, cut into about 30 seconds to evaporate excess moisture. Mash pieces with cream cheese and salt. Fold into scallions and 1 tsp salt cabbage. Seaon, pour into oiled 3 qt baking dish and ½ c. thinly sliced top with cheese.
