M.Sc Professeur en horticulture Institut de technologie agroalimentaire, Campus de Saint-Hyacinthe En productions horticoles, la majorité des fines herbes sont produites à partir de semis; une façon simple et économique de multiplier les végétaux. Le bouturage arrive en seconde place comme mode de multiplication. Il n’est toutefois possible qu’avec les espèces ayant la capacité de former des racines (rhizogènèse) adventives à partir de tissus de tiges. La multiplication par boutures permet de reproduire fidèlement, par clonage, la génétique du plant mère. De nombreux cultivars sont multipliés de la sorte, car leurs caractéristiques (forme, couleur, goût, etc.) ne sont pas fidèlement transmises à leurs semences ; on dit que le cultivar n’est pas fixe. La multiplication végétative est également utilisée lorsque la production par semences est trop longue, ou encore, lorsque la plante ne produit pas ou trop peu de graines. Le choix du mode de multiplication des fines herbes se fait généralement en fonction du cultivar, du temps de production pour obtenir un jeune plant (ex. : pour la menthe, le bouturage est plus rapide que le semis), et des installations en place pour la multiplication.
