Dear foodies, we wish you “dober tek”! Thank you for picking up this new The Slovenia guide - a great de- ci-sion to taste and feel Slovenia. Since 2008 we have published tons of guides and online content about Slovenia, however, this is the first time we can proudly write about Slovenia as a new European region of gastronomy. With the influx of English-speaking foreigners into Slo- venia, we decided to write this guide in English to help more people access Slovenia’s countless gastronomic experiences. There is no more unique a place in Europe than Slovenia, sitting at the cross- roads of great European cuisines from the Mediterranean and Karst, Panno- nia and the Alps. This is also the home of the best female chef in the world in 2017, Ana Roš, as well as several other of the top 100 chefs and restaurants in the world, and our unique evaluation The Slovenia Restaurant Awards. Before we began The Slovenia Restaurant Awards, and this subsequent The Slovenia Gastronomy guide, we, along with many others, struggled to find local information in English about good food and the best res- taurants. To do this, we spent a year comparing international systems and talking to chefs, restaurateurs and experts, eventually coming up with a three tiered system, consisting of an expert committee, the Gas- tronomic Academy, and the general public. After all of the voting, the result of our efforts was national and regional winners, finalists and a handful of recommended restaurants. This project could not have been completed without the great support of food experts, enthusiasts and sponsors – Diners Club International, Römerquelle, Winterhalter, Un- derberg, Ministry of Agriculture, Forestry and Food, Gostilna Slovenija and Deloitte – and also the media. European Region of Gastronomy

So different. So accessible! Green, active and healthy, Slovenia is the only European country that con- nects the Alps, the Mediterranean, the Karst and the Pannonian Plain. Its exceptionally diverse landscape and nature are tied to a colourful culture and gastronomy. At the very heart of Europe, at the meeting point of the Germanic world to the north, the Romance lands to the west, the Slavic Balkans to the south and Hungary to the east, is where Slovenian gastron- omy evolved through history. Slovenian dishes are made with local ingredi- ents: from produce grown in fields and gardens, to ingredients foraged in meadows and forests, salt harvested from the northernmost Adriatic salt pans, honey made by native bees, and wine that was a common drink around these parts even back in Antiquity, to healthy mineral waters that became the focal point of world-renowned spas centuries ago. Slovenia is a green, healthy and active country. Diverse gastronomy is therefore part of its culture. Slovenians preserve and cultivate it with the utmost respect for the environment and principles of sustainable development. In Slovenia, the grain fields are entwined with wine-growing hills, forests converge with Alpine meadows, where bovine and small cattle graze, luxuriant gardens alongside people’s houses flow into meadow orchards, and ol- ive groves offer vistas of the sea. Slovenian cuisine draws its originality from nature, and its cosmopolitan spirit from the influences of the four corners of Europe. If you wanted to get to know the most distinct dishes and drinks of as many as 24 gastronomic regions of Slovenia, you could sample a new dish or drink every day for 365 days. Culinary diversity is an increasingly decisive reason for paying a tourist visit to Slovenia. Do we need national competition and selections in the field of gastronomy?! Do we need professional awards - Steletovo, Murkovo, Valvazorjevo ... if we have Europo Nostro, EMYA, UNESCO? Do we need a national foot- ball championship in sports, if we have the Champions League? Whether we need Boršnik’s meeting or the Festival of Slovenian Film in the field of culture, if there is Berlinale, the Venice International Film Festival, if we have the Oscars? Whether we need The Slovenia Restaurant Award, in the field of gastronomy, if there are Gault Milleau, Michelin, The World’s 50 Best Restaurants...? The authors of the new action plan for the de- velopment and marketing of gastronomic tourism in Slovenia consider that they do not state that the national assessment system should be introduced only conditionally. In addition, they advocate in the first place the promotion of the introduction of the international gastronomic guide Michelin Slovenia and the preservation of the international gastronomic guide Gault & Millau. They also highlight the need to support the hosts for ranking on The World’s 50 Best Restaurants. Each country needs internationally recognizable chefs and inns, win- emakers and wineries, which represent the top of the national gas- tronomic pyramid for its international recognition. But no less does it need good traditional inns as the national embassy of local and regional gastronomic identities. In terms of the development of gastronomic tourism, the latter are no less necessary and desirable, as the top Slo- venian restaurants and inns, especially those who build their creativity and innovation on the basis of the Slovenian gastronomic heritage. How to make gastronomic tourist destinations competitive, recogniz- able and visible, both among Slovenian citizens, as well as between domestic and foreign tourists? It is likely that we know the structure of guests and tourists who go to Slovenian inns and restaurants, using various modern communication channels. So why are we similar to Italians, French, English, Irish, Austrians, Croats, Serbs, Albanians... as well as Americans, Indians or Singaporeans? Given that their national gastronomy interests are linked to national inn tours. They are proba- bly no less cosmopolitan, and their gastronomic landscape is no less colorful. In terms of the development of both the agricultural and gas- tronomic tourism sectors, the country needs a reference and credible national gastronomic guide, where our attitude towards the earth, “our food”, seasonally, locally produced and locally used, is becoming more and more ecological. To be seen both in authentic gastronomic experi- ences and in the boundless cooking innovation.

18 The annual emergence of internationally communicative national gas- tronomic guides promotes the quality and competitiveness of providers, while contributing to the quality increase of the entire gastronomic offer in Slovenia. It is difficult to imagine the sustainable development of var- ious sectors, and in particular catering, without establishing transparent systems of competition and rewarding, especially at national level, as it is a strategic basis for the development of catering and gastronom- ic tourism, which takes into account the gastronomic and agricultural identity of the state. About The Slovenia Restaurant Awards

The Slovenia Restaurant Awards (TSRA) is a national selection of best Slovenian restaurants. The increasing demand from tourists for reviews of Slovenian restaurants in foreign languages, and the fact that these reviews are a rarity even in Slovene, made us realise that the pro- cess of reviewing Slovene restaurants must begin as soon as possible.

Thus, in early autumn 2016 we started the project with the help from some Slovenian enogastronomy, folklore and tourism experts. A collec- tion of the best restaurants in Slovenia can help tourists decide where to go when seeking new culinary horizons. The selection of the best Slovenian restaurants is also meant for the general Slovenian public - how many times do you think about going out for a nice family lunch on Sunday, but have no idea where to go?

Voting system Each year TSRA undertakes comprehensive 3-tiered process in order to determine the very best restaurants in each of the country’s four con- stituent regions. First the Expert Committee regularly meets throughout the year in order to conclusively determine participating restaurants for the following year which range from 40-60 for each region and 201 in total. Next the full lists are voted on by selected members of the Gastro- nomic Academy who select up to 10 restaurants from their home region and up to 10 restaurants total from other three regions combined. And finally the voting is opened to the general public who select from a short-lists of 101 finalists.

Voting is calculated on a weighted basis meaning the votes from Gas- tronomic Academy count for 75% of final results while the general pub- lic accounts for the remaining 25%. Professional services consultancy Deloitte is the independent adjudicator of The Awards and is granted full access to the voting process and data to confirm the integrity and authenticity of the results.

Sometimes all you crave while strolling around the city is some good ol’ comfort food. This usually means stopping at a pizzeria or a good burger joint and ordering a mouth-watering meal, which will satisfy not only your craving, but it will also feel good in both your stomach and heart. Slovenia has no shortage of great pizza and burger places. Despite neither of them being close to traditional Slovenian cuisine they re- main a fan-favorite among the masses. Pizza has made its way from Napoli all the way to the sunny side of the Alps, where even the toughest food critics like to enjoy a good slice or two. Since the “big burger bang” in Slovenia, it’s been almost impossible to keep track of all the burgers places that have popped up around town, or the various established restaurants that have added them to their menus. Picking one’s absolute favorite has proven to be quite a battle of the tastes as every local has its preference.

It feels like only yesterday, but in reality it may as well have been a lifetime ago. To the pubs of Ljubljana we sauntered, eager for refresh- ment but pining for something different to the usual decision between Laško and Union, something a little out of left field. Blur and Oasis were getting a bit too much, you understand? And just like that, like some sort of weird tasty saint, a pint of Human Fish was in our hearts and souls. To continue the Britpop analogy, Pulp had arrived. Craft beer in Slovenia has come a long way from those initial baby steps, with a wide variety of options brewed right here in everyone’s favourite country. The Fish is still going strong, but it is not fighting alone. The pivo revolution that has so revitalised boozing around the world has well and truly made its presence felt in Slovenia, with an impressive roster of options that all provide something different to the prospective beer devourer. That revolution caught fire here, in a decidedly un-Slovenian sort of way, and every month seems to offer something new and exciting. With the help of our own family business Mithraeum, which is manufacturing brewing equipment, we have set up our own brewery and started to explore the world of brewing. How to taste Slovenia?

The renowned French chef Brillat – Savarin once said that the essence of enjoying food lies in the act of slowing the pace of life and en- couraging cheerfulness! In Slovenia we can, of course, agree with this sentiment, but more is needed for modernity. Food with its stories, embedded into local and regional cultures, can also be an excellent form of communication. Globally it has even become a part of politics, as some countries’ successes cannot be achieved without food, and the so-called gastronomic di- plomacy is being strongly developed. The role of food shouldn’t be looked at solely through the lens of tourism, but as part of a compre- hensive economic, social and spiritual endeavour. This should include caring about the continuation and applications of food heritage, as well as looking for inovative creative solutions. The connections to agriculture are, of course, very important, but not only the ones with which we constantly try to emphasize the importance of organic food production. The entire humanity will have to take a firm stand against the big food chains and industrial, globally prepared food and dishes that make us wonder what’s exactly on out plates, and don’t allow us the chance to have conversations, or to get to know local and regional specialties. These specialites would further lead us to the pastures and fields, gardens, vineyards and orchards where we could meet the people growing the food and get to know their healthy pro- duction techniques. All these and other facts also mark the culinary and gastronomic endeavours in Slovenia which, in 2018, became a member of the European Region of Gastronomy. Before 2021 we plan to implement several important research projects, that will help us amend shortcomings in food, agriculture, tourism, education, health and other areas, directly or indirectly linked to food culture. In the year 2021, Slovenia will also become a full member of the ERG. An important role and share in these endeavours is also performed by Slovenian food establishments, from typical family inns, restaurants, bars and tourist farms, to positive forms of street food. Taste Kamnik

Kamnik Tourism and Sports Agency runs the Taste Kamnik project, which is part of the wider Taste Central Slovenia project. It presents the typical dishes from the Kamnik area with the aim of incorporating them into the local offer and presenting them to local and foreign visitors. This long-term and strategic project provides additional training for the res- taurants and food providers from Kamnik and gives them opportunity to present the dishes at numerous events throughout the year. Taste Kamnik is part of the Taste Central Slovenia project, run by the Central Slovenia Regional Destination Organisation under the leader- ship of Ljubljana Tourism. The aim is to strengthen the visibility of the cuisine in the Central Slovenia. It is based on the Gastronomy in the region of Central Slovenia, a study by Dr. Janez Bogataj, an internation- ally recognised and award-winning Slovenian ethnologist, who identi- fied the most typical dishes in the municipalities of the central part of Slovenia. Bogataj now also acts as a consultant and member of the expert committee for Taste Kamnik project. To develop a range of typical Kamnik culinary specialties, Kamnik Tour- ism and Sports Agency gathered an expert committee, who among several typical Kamnik dishes, many of them are described in the Gas- tronomy in the region of Central Slovenia, shortlisted the main seven. These were complemented by a wider selection of dishes with cultural value, which represent a fusion of traditional and modern cuisine. The selected dishes represent the entire region of Kamnik and also pinpoint that the area includes numerous individual units with diverse cuisine, in- cluding the town of Kamnik itself. Furthermore, the dishes also illustrate the social diversity of the region.

One of the world’s most unique dining experiences can now be found in Velenje, or more specifically under Velenje, at the Velenje Coal Mining Museum. Lasting some three hours, the evening begins with guests donning a light and helmet and participating in the miners’ traditional in- itiation ceremony, before hopping aboard Slovenia’s oldest continuously operating lift to descend some 160 metres below the earth’s surface for dinner. The meal features local dishes rooted in the coalminers’ tradition and is truly a feast for all the sense. It’s also prepared by award-winning chefs and served by professional staff from the renowned Villa Her- berstein nearby, and accompanied paired wines and live music. After dinner, a train ride will take you back to the surface for an aperitif and special souvenir in the miners’ former changing room. With all this, it’s easy to see why the Velenje Underground has officially received the Slovenia Unique Experience mark as a 5-star experience.

The From Bohinj (or Bohinjsko) label is a local certificate that guaran- tees both the geographic origin and high quality of various handicrafts, culinary and agricultural products and food and drinks at restaurants and guided experiences in Bohinj. Influenced by the natural alpine sur- roundings and developed over centuries by the inhabitants of the area, numerous traditional dishes have originated from the kitchens of local homes and restaurants, and in recent years many have also been mod- ernised for more contemporary paletes. Local culinary specialties from Bohinj include mohant cheese, zaseka (a pork fat spread) with sausage and žganci (a polenta-like dish) made from local corn. Among the more notable typical products from the region are a smoking pipe from Gor- juše called a fajfa, hand-knitted sheep’s wool socks and wooden prod- ucts in-layed with Mother of Pearl as well as other creations from local artisans. Bohinjsko labelled products can be purchased at numerous places, including local manufacturers and farms, in the online store, several information centres and local shops while more info can be on the official tourist office site.

Situated in the southeast corner of Slovenia, Posavje is one of the country’s most diverse regions, and is just waiting to be explored by the visitors seeking the authentic Slovene experience without having to jostle with busloads of tourists.
