Using slotted spoon, transfer chicken to warm bowl. In same skillet, heat remaining oil; cook pepper and broccoli for 2 min- utes. Stir in stock and reduce heat to low; cover and steam for 2 min- utes. Using slotted spoon, add pepper and broccoli to chicken; cover to keep warm. In same skillet, pour in vinegar; bring to a boil, stirring to scrape up brown bits in pan. Stir in mustard, tarragon, salt and pepper to taste. Add mushrooms and onions. Return chicken mixture and any juicesto skillet; cook just to heat through. Serve on a bed of rice or lettuce.
