    CAPABILITIES OVERVIEW Updated October 2013 1 2 3 THE COSTANZO’S BAKERY ADVANTAGE OUR HERITAGE In 1933, an ambitious Angelo Costanzo started a small western New York bakery along the Niagara River known as Costanzo's Bread. He delivered Italian breads to mom and pop grocery stores throughout Buffalo, New York. The business continued to grow, and with the advent of the supermarket concept you could now find Buffalo’s favorite “Costanzo’s Bread” stocked in every store. Over the years Costanzo’s became a trusted brand throughout the Buffalo market. In the 70’s, Angelo Sr. saw the growth potential of submarine shops and pizzerias and refocused the company on servicing local foodservice establishments. Because of the reputation for quality built through the company’s retail sales, Costanzo’s was widely accepted in foodservice and quickly became the desired roll for Buffalo’s leading sub shops. At the same time, Angelo began grooming Angelo Jr. and his brother to take over and expand the family business. In 1977, Angelo Jr. and his brother took over the bakery and moved into a new, larger facility to support their continued growth. As local sales increased, the natural progression was to expand into the national marketplace by developing a line of frozen, fully baked sub rolls and round rolls. This was the beginning of Costanzo’s Bakery, Inc. Over the next several years, Angelo also groomed his sons to take over the business; and in 2000, the third generation was at the helm supported by a team of experienced bakery industry professionals and vendor partners.

We have found a preponderance of dessert recipes in this collection but almost no soup, despite the fact that soup plays a major role in Hungarian cooking. This is not a coincidence, as Mrs.Endrei told me, because in the Lichtenwörth forced labor camp the only thing they had to eat was watery soup, and she couldn’t even think of soup. There are no vegetable dishes in this collection, either. But we certainly find a remarkable collection of dessert recipes. Since the recipes were written with the aid of a test kitchen, they should be treated with caution. Should we receive a grant that we could offer to a cookbook writer, he or she would be able to add precise measurements. The recipes found here are typical of the Hungarian and Central and Eastern European kitchen. See for example, the use of sour cream and the variety of cake (or torte) recipes. The recipes are clearly characterized by multiculturalism. See, for example-Gyuvecs, which is not Hungarian, but Serbian or Turkish (they both claim it).     In Lawrence, Kansas every 8th grade student is required to read Growing Up in the Holocaust by Ben Edelbaum. I chose to write a teacher’s guide to help students through the experience of Mr. Edelman’s survival. As a member of the Isak Federman Holocaust Teaching Cadre at the Midwest Center for Holocaust Education, I have heard many Holocaust survivors’ testimonies. I can feel the pain in their voice as they tell of their experiences, the desperation, as they know their time on earth is short and the need to know that their memories will live on. I have sat and cried as I listened, uncomfortable with the lack of ability to relieve the pain, ashamed that I am a member of the human race that created such atrocities. I never had the honor of meeting Mr. Edelbaum; he passed away before I became involved in the Cadre. Still his story haunts me and I feel an obligation to pass on his memory. I have created summaries of each section of the book and study questions that will help the students understand the experiences. I have also included some history of the Holocaust so that the reader will be aware of the other events happening during the time period. Mr. Edelbaum’s experience can teach students many good lessons about human diversity and the consequences of intolerance. The book is a wonderful introduction to the Holocaust and has many lessons to teach. I hope that by creating this teachers guide I am somehow passing on his memory to others.

  • THE MEATS Corned Beef
    The sandwich as we know it was popularized in England in 1762 by John Montagu, the 4th Earl of Sandwich. Legend has it, and most food historians agree, that Montagu had a substantial gambling problem that led him to spend hours on end at the card table. During a particularly long binge, he asked the house cook to bring him something he could eat without getting up from his seat, and the sandwich was born. Montagu enjoyed his meat and bread so much that he ate it constantly, and as the concoction grew popular in London society circles it also took on the Earl’s name. Montagu’s creation took off immediately. Just a few months later, a man named Edward Gibbon mentioned the sandwich by name in a diary entry, writing that he’d seen “twenty or thirty of the first men of the kingdom” in a restaurant eating them. By the Revolutionary War, the sandwich was well established in England. You would expect American colonists to have taken to the sandwich as well, but there’s no early written record of them in the new country at all, until a sandwich recipe finally appeared in an American cookbook in 1815. Of course, most Americans today wouldn’t dream of a eating a tongue sandwich. But that’s ok, since we’ve come up with some pretty excellent sandwich ideas since then. That iconic New Orleans sandwich, the Po’ Boy, came about in the Great Depression during a streetcar worker strike. Two brothers, once streetcar operators themselves, owned a sandwich shop nearby, and promised to feed any down-on-his-luck striking worker for free.
