Great wine is a transmitter of a certain place and time in history: if made with nothing but grapes, a bottle has the ability to tell us what the soil in the vineyard is composed of, what the weather was like in a given vintage, and what the surrounding flora and fauna are doing. Cover it up with any number of 60-plus legal chemical additives, and what are you left with? Something engineered that no longer transmits its story. The winemakers represented on these pages make wine from their core; with dedication and integrity for the land they farm. We are delighted to share the wines and the stories of folks whose hearts lay in the same vein as our own. These producers represent some of the world’s most unique vineyards and rare heritage grape varietals. We believe sharing these special wines with you is an honest extension of our desire to provide thoughtful hospitality. The bottles below might be the closest representation of how wine was made over 5,000 years ago in the Republic of Georgia…what some may consider the ‘first’ wine ever produced. White grapes are left to ferment on their skins in barrels, steel vessels, or clay amphorae, lending all shades of color from golden yellow to burnt amber, as well as tannin, texture, and loads of complexity. Aromatics and flavors run the spectrum of toasted nuts, beeswax, mottled fruits, and farmhouse cider. They are a little wink at history and tremendous food wines.     The Italian Wine Sector 28 Feb 2017 The Italian wine sector is the world’s largest wine producer and its second largest exporter by volume behind Spain. This paper gives an overview of wine production, consumption, imports and exports for the Italian wine sector and how these compare with Australia. Production Italy produces the most wine of any country in the world. The OIV estimated that while Italian wine production fell by 1.2 per cent in 2016 to 4.9 billion litres this still placed Italy ahead of France (4.2 billion litres) and Spain (3.8 billion litres In comparison, Australian wine production is one quarter of Italy’s (1.2 billion litres). Between 2001 and 2015, Italian wine production averaged 4.7 billion litres, reaching a peak of 5.4 billion litres in 2006. Italian wines are categorised by their official quality level designation. The highest quality level in Italy is Denominazione d’Origine Controllata e Garantita (DOCG), of which there are currently 74. The second level is Denominazione d’Origine Controllata (DOC). There are 334 DOCs. European Union (EU) law allows Italian producers to continue to use these terms, but the EU officially considers both to be at the same level of Protected Designation of Origin or PDO –known in Italy as Denominazione d’Origine Protetta (DOP). Therefore, the DOP list contains all 408 DOCs and DOCGs together. The quality level below this, which has less stringent requirements and therefore gives producers more flexibility on how they make their wines, is called Indicazione Geografica Protetta (IGP) – or Protected Geographic Indication in English.

    Vini di Sicilia Some History Sicily is Italy's southernmost region, and the largest island in the Mediterranean Sea. For more than 2500 years Sicily (Sicilia in Italian) has been a significant center of Mediterranean viniculture, although the reputation and style of its wines has changed significantly over that time. The island's location has helped it become one of the world's most diverse melting pots. At one time or another, it was inhabited by the Siculians (after which it was named), Phoenicians, Greeks, Romans, Byzantines, Arabs, Normans, Germans and the Spanish. All of these cultures contributed to Sicily's history and influenced the production of wine throughout the region -- though not all of their influences were positive. Wine grapes have always grown on the Italian island of Sicily. The ancient island was covered in grapevines long before the Greeks got there. Ancient civilizations were producing wine on the island as far back as the 17th century BC. Many of the grapes considered to be native to the area were actually brought in by the Phoenicians. The Mediterranean climate with abundant sunshine, balanced rainfall, hilly terrain and soils made rich by Mount Etna’s ash all create the perfect conditions for quality agriculture. The Greeks arrived sometime around 8 BC, bringing other varietals in with them. They also brought innovations such as pruning, varietal selection and low vine training. Large quantities of wine began to flow all over the island. Very, very alcoholic wine. For several centuries, the Sicilian wine industry fell into boom and bust cycles. As the Romans spread their empire, they carried wines from Sicily with them.

    Dolcetto d'Alba DOC The Bongiovanni farmstead dates back to the early 1950s, when it was purchased by Giovanni Bongiovanni. Giovanni planted a Nebbiolo vineyard where there had been nothing but untamed woodland. He struck gold, yet never bottled his own wine. When he died, the estate was left to his daughter Olga who grew to cover prime hillside vineyards of the Langhe for her own wines. Here, the family only planted native grape varieties and one noble international grape, Cabernet Sauvignon. A good number of innovations have come about thanks to Olga’s nephew, winemaker Davide Mozzone. The Bongiovanni philosophy aims to minimize outside intervention and maximize character and terroir, steering clear of stereotypical wines. While not certified organic, the winery proudly participates in Piedmont’s Green Experience, which is a network of sustainable and organic growers. Dolcetto was and is still considered the wine you’d drink on a lazy Sunday in any given osteria in the stunning countryside of Piedmont. And in fact, because of its versatility and capacity to adapt to very different soil types, it is one of the most widely cultivated varieties in the Langhe area. Bongiovanni has two small parcels in Roddino and Castiglione Falletto with vines aging ten to forty years old. After harvest, the wine ages strictly in stainless steel, preserving the color, aromas and flavors. The wine is neither clarified nor filtered before bottling.     BAROLO DOLCETTO D’ALBA DENOMINAZIONE DI ORIGINE CONTROLLATA 2018 We love Dolcetto. In the local tradition, this grape was cultivated on the best exposures, just above Nebbiolo parcels. Resonating with our own heritage, we dedicate only fine blocks to this variety, so to let it express with plenitude. DESCRIPTION: Historically, Dolcetto was cultivated in prime land, just above Nebbiolo vineyards. At Vajra, we remain loyal to this approach, farming this grape in places of true vocation. Our Dolcetto d’Alba DOC is a homage to a wonderful, often overlooked heritage of Piemonte. It is a pure, vibrant and fruity expression of the variety, ideal for many food pairings from appetizers to pastas and vegetables and light protein such as white meats and egg-based dishes. VARIETY: 100% Dolcetto. VINEYARD AND TERROIR: Multiple estate vineyards with an average age of 25 years. VINTAGE: 2018 was marked by an abundant flowering, a gradual ripening and one of the latest harvests of the decade. Precipitations were exceptional during the entire year, as the dedication of our vineyard team. Such determined work and a meticulous sorting gifted us with healthy grapes, with delicate perfumes and a juice that was pink already upon crushing. This harvest was particularly favorable for the best exposed vineyards, those at high elevation, and the late ripening varietals - but it is giving us great surprises also on the whites and Dolcetto. All the wines are fragrant, deliciously aromatic, with elegant tannins. 2018 reminds 2016 and perhaps even more 2004, and promises to become an elegant and classic vintage. Italy's climate is temperate, as it is surrounded on three sides by the sea, and protected from icy northern winds by the majestic sweep of alpine ranges. Winters are fairly mild, and summers are pleasant and enjoyable. NORTHWESTERN ITALY The northwest sector of Italy includes the greater part of the arc of the Alps and Apennines, from which the land slopes toward the Po River. The area is divided into five regions: Valle d'Aosta, Piedmont, Liguria, Lombardy and Emilia-Romagna. Like the topography, soil and climate, the types of wine produced in these areas vary considerably from one region to another. This part of Italy is extremely prosperous, since it includes the so-called industrial triangle, made up of the cities of Milan, Turin and Genoa, as well as the rich agricultural lands of the Po River and its tributaries.
