The acid trip

Acid is one of the core traits of wine. Knowing how acid tastes and the structure it gives wines, helps us further identify the profiles of wines we like. These wines may have a citrus note to them or have a zippy finish, but acid is the part that makes you salivate and want to take another sip. It acts as the backbone for wines.

Rise of the indigenous

These grapes are native to their countries, and therefore, uniquely suited to that , and often its best expression. These days, grapes varieties can be found everywhere but we like to start with their birthplace. We have an indigenous red flight as well.

The American dream #USA

While the müller-thurgau was born in Germany, winemakers have found that it produces a more aromatic and fuller-bodied wine in places like Oregon. Start with this delicious white and move on to two reds that have become representative of their regions.

Sibling rivalry – south versus north Italy

From when to eat dinner to whether to stop and say hello when running an errand to who is more competent, the two sides do not agree on much. What we agree on is that both regions do produce amazing wine and have done so for generations. Taste a and white from the island of Sicily, and a delightful red blend from a famed producer in the north.

Let’s go island hopping – wines of New Zealand #kiwi

These are some of our favorite wines from this island country. The first wine is typical of what we have come to expect of a New Zealand sauvignon blanc – full of tropical fruits and floral notes. The second wine is an where the juice has spent some time in contact with the skins of the grapes making it very different than the first. End with a juicy with a silky finish.

I like oak and I cannot lie

Aging wine in new oak barrels was mastered by Bordeaux winemakers. Now, winemakers around the world use barrels (American, French, Hungarian, and Slavonian) and to add structure, flavor, and depth to their wines. Flavors from new oak can be described as dried fruit, vanilla, and smoke, among others.
