Can-Am Pepper Company was founded in 2010 by the Underhill family. Drawing from the family’s four generations of farming and produce supply experience, Can-Am Pepper includes a wide selection of commodities, year-round production and transportation.

Today, the company works over 35,000 acres in three countries, growing bell and specialty peppers, hard squash, sweet potatoes, asparagus, pickles, beans and watermelon to both fresh and processing markets. A true farm- to-fork vertical company, we control the product through seed, farming, packing & in-house logistics – ensuring strict adherence to quality, food safety and traceability.

INGREDIENTS • 1 - 3 lb spaghetti squash, • 1 cup grated Parmesan cut in half lengthwise cheese • olive oil • 3 garlic cloves, minced • salt & pepper to taste • 1/4 cup chopped parsley • 1/2 lb pancetta, diced • 1/4 cup shaved Parmesan cheese, for garnish • 2 eggs

1 Preheat oven to 375º F.

2 Rub the squash with olive oil and season with salt and pepper. Roast cut side down in the oven for 40 minutes, or until fork ready. Remove from oven and gently pull apart with a fork to create spaghetti; set aside.

3 In a sauté pan over medium heat, render pancetta until crispy. Remove pancetta from pan to drain, keeping 2 Tbsp in the pan.

4 Add garlic to pan and sauté for 2 minutes. Add squash and pancetta back to pan and warm.

5 In a medium bowl, whisk eggs, parsley and grated Parmesan cheese. Add to pan, lightly tossing until the squash and egg mixture are a creamy consistency.

6 Plate and garnish with shaved Parmesan cheese. Enjoy!
