Roast cut side down in the oven for 40 minutes, or until fork ready. Remove from oven and gently pull apart with a fork to create spaghetti; set aside. WITH OUR PAR-BAKED SQUASH, START AT STEP 3 AND SAVE 20 MINUTES! 3 In a sauté pan over medium heat, render pancetta until crispy. Remove pancetta from pan to drain, keeping 2 Tbsp fat in the pan. 4 Add garlic to pan and sauté for 2 minutes. Add squash and pancetta back to pan and warm. 5 In a medium bowl, whisk eggs, parsley and grated Parmesan cheese. Add to pan, lightly tossing until the squash and egg mixture are a creamy consistency. 6 Plate and garnish with shaved Parmesan cheese. Enjoy!
