In any puja to Devi, particularly in Her Divine forms as Mothers Durga/Bandi/Kali, Dhaar is offered. Unfortunately there is no direct English translation of Dhaar from Sanskrit. The nearest being ªThe Divine Wineº... now I said wine, but it does not refer to the famous wines we produce here in South Africa, rather this beverage - the ªwineº - is especially Devi©s favourite. Many have been offering Devi Dhaar but have never had an idea as to why. So, below we are furnishing you with shastric proof of Dhaar and its importance in Devi puja. What Dhaar consists of:- Turmeric sticks, cloves, nutmeg, almonds, elachie, flowers petals, sugar candy, camphor, turf and syringaberry leaves These are the basic ingredients but some choose to add more ingredients¼ You can use jaifar (nutmeg) as long as you are offering the Jaifar as a fruit and not substituting it for something else. A little of each the above ingredients are grounded on a Seel (large flat stone) with a lorha (grinding stone) and then the mixture is added into a bucket of water. Add some milk and fresh flower petals as well. Mix and stir this mixture well in the water¼ *** Do not talk while preparing the mixture, as one©s saliva may enter the mixture thus rendering the mixture soiled.*** Dhaar is offered on all nine days in Navaratri and I personally advise people to offer Dhaar on available/convenient Fridays during the year.

    Desserts of the World: India Presented Jan 15, 2019, by Varsha Pathare Gajar Halwa (carrot pudding) Ingredients 1 pound carrots, peeled and shredded 3 Tablespoons ghee ¾ cup sugar ½ cup ricotta cheese ¼ teaspoon cardamom 2 teaspoons almonds and pistachios (chopped/sliced) for garnish Directions 1. Heat ghee in a pan over medium low heat. Add shredded carrots, stir well and cover. Cook for 5-10 minutes, stirring occasionally, until carrots are soft. 2. Add sugar and stir well. Cook for 3-5 minutes until sugar is well-incorporated. The mixture will start to look sticky. 3. Add ricotta cheese and mix well. Add cardamom and stir well. Garnish with nuts. 4. Gajar halwa can be served warm or cold. Kheer (vermicelli pudding) Ingredients ½ cup vermicelli, broken in ½-inch pieces (see note, below) 1 Tablespoon ghee ¾ cup half and half ½ cup heavy whipping cream ½ cup sugar ⅛ cup golden raisins ¼ teaspoon cardamom ¼ teaspoon nutmeg 1 Tablespoon ground almonds ⅛ cup sliced/chopped almonds and pistachios for garnish Directions 1. Heat ghee in a pan over medium-low heat. Add broken up vermicelli and sauté for 2-3 minutes until the pieces turn golden brown, taking care not to let them burn. 2. Add half and half and whipping cream. Let the mixture come to a boil, stirring occasionally, taking care to prevent burning and sticking to the pan. Boil gently for 3-5 minutes. 3. Add sugar and stir well. Return to a gentle boil. Stir continuously to prevent sticking. 4. The mixture will thicken as it simmers. Add ground almonds and return to boil, let simmer 1-2 minutes.

    Badami Seviya Kheer Rice Pudding with Indian Vermicelli and Almonds Yield: Serves 4-6 Ingredients: ½ Cup Basmati Rice (Chawal) – washed and drained ¼ Cup Indian Vermicelli (Sev/Seviya) - can substitute with rice if desired 3 Cups Whole Milk (Doodh) 1 Cup Unsweetened Almond Milk (Badam ka Doodh) 1 Cup Heavy Cream (Malai) ¼ Cup Granulated Sugar (Chini) –amount to taste 3 Tbsp Almonds (Badam) – blanched/slivered 2 Tbsp Ghee 3-4 Green Cardamom Pods (Choti Elaichi) – ground into fine powder -OPTIONAL- ⅓ Cup Golden Raisins (Kishmish) Sliced/Chopped Fresh Mango (Aam) – for garnish ¼ Cup Mango Syrup / Puree (Aam Papad) – for garnish Chopped Roasted Nuts (Almonds, Cashews, Pistachios) - for garnish Preparation: 1) Rinse Basmati Rice in a sieve under cold water until water runs clear - Drain well and let dry for about 10 minutes 2) Break Seviya into small pieces (about rice size) 3) Heat ghee in a large pan over medium heat 4) Once ghee is hot, add rice and seviya and sauté (while continuously stirring) until seviya just begins to color (apx 2-3 minutes) 5) Add whole and almond milk and bring to a boil (milk will foam up - remove from heat to avoid boiling over if necessary; once foam goes down, return to heat) - Reduce heat to a simmer, cover, and allow to simmer (stirring frequently) until rice is slightly over cooked (apx 25 minutes) 6) Add heavy cream, sugar, ground cardamom, raisins (optional), and slivered almonds - Return to a simmer and allow to cook until sugar completely dissolves and the kheer begins to thicken 7) Adjust sweetness to
