The Wine and Spirits at the Restaurant The Wine and Spirits at the Restaurant marry two philosophies that have guided us thus far: our dedication to the blueprint of The Napa Valley and its history, along with our desire to curate the best products from around the world. We seek out these great craftspeople and allow their stories to become part of ours. We even produce many things ourselves - from our eau de vie made with apples grown here, to Nocino made from nearby walnut trees - we share with pride that which we find and that which we craft. When taken together, these offerings are our way of sharing with you our excitement and joy. Like many, we enjoy drinking good wine and it is in celebration of the final chapter of a wine's story that we pull every cork. We look forward to sharing these moments with you. • 2017 Cabernet Sauvignon Estate Grown Rutherford Napa Valley
2017 CABERNET SAUVIGNON ESTATE GROWN RUTHERFORD NAPA VALLEY A BRIEF HISTORY For decades, it has been our goal to produce a Rutherford AVA, estate-grown Cabernet Sauvignon. Inspired by the early Cabernets of Inglenook and Beaulieu Vineyard, we’ve spent the past 20 years finding, farming and obtaining highly sought after land in Rutherford—with particular attention to the Rutherford Bench—to pursue our dream and perfect our craft. It all began with the acquisition of the Red Barn Vineyard in 1994. This prime real estate provided us with 40 acres of soil perfectly suited to grow Merlot and Cabernet sauvignon and a century-old facility in which we would become Rutherford Cabernet Sauvignon producers for the first time. Immediately following our move to Rutherford, Frank Leeds—longtime Frog’s Leap Vineyardist—agreed to a partnership between Frog’s Leap and his family’s Chavez Leeds Vineyard. This generational vineyard situated on the iconic Rutherford Bench gave us our first real taste of how complex and connected dry-farmed, organically-grown Cabernet Sauvignon from this storied part of the appellation could be. Finally, in 2007, we purchased the historic Rossi Vineyard located in the very heart of the Rutherford Bench. This 50 acre vineyard was purchased by the Rossi family in 1906 and is located only a stone’s throw away from the two vineyards that originally inspired us. Now mostly planted to Cabernet Sauvignon and Cabernet Franc the Rossi Vineyard completed the picture by yielding high quality Rutherford grapes for an all estate-grown Cabernet Sauvignon to stand with our predecessors.

Reservations Accepted | 10/1/2021 1 Welcome to Virginia’s First Urban Winery! What’s an Urban Winery, you ask? Well, we are. Take a look around, and you’ll see a pretty unique blend of concepts. First and foremost, you’ll see wine made here under our Mermaid label, highlighting the potential of Virginia’s grapes and wine production. Virginia has a rich history of grape growing and winemaking, and we’ve selected the best grapes we can get our hands on for our Mermaid Wines. We primarily work with fruit from our Charlottesville vineyard, with occasional sourcing from other locations if we see the opportunity to make something special. We’ve put together some really enjoyable wines for you to try – some classic, some fun, all delicious. Secondly, you’ll see wines from all around the world. Some you’ll recognize, others you might not. These selections lend to our wine bar-style atmosphere and really enrich the experience by offering a wide range of wines to be tried. They’re all available by the bottle, and most by the glass and flight as well, right alongside our Mermaid Wines. The staff can tell you all about any of them, so rest assured that you’ll never be drinking blind. These wines also rotate with the season, and there’s always something new to try. We have a full kitchen too, with a diverse menu that can carry you through lunch, brunch and dinner from the lightest snack to a full-on meal. With dishes that can be easily paired with a variety of our wines, make sure you try anything that catches your eye.

Knowing how acid tastes and the structure it gives wines, helps us further identify the profiles of wines we like. These wines may have a citrus note to them or have a zippy finish, but acid is the part that makes you salivate and want to take another sip. It acts as the backbone for wines. Fit for Kings BAROLO, THE LEGENDARY ITALIAN GRAPE OF YORE, IS RIPE FOR ASIAN ROYALTY, WRITES JAMES SUCKLING taly’s great grape, barolo, has long been called the “king of wines and the wine of kings.” But the structured red still remains relatively undiscovered in most of Asia. “It’s still hard to convince most fine-wine lovers in Asia about Barolo, even though our region is very much like Burgundy with its mostly small vineyard holdings and Ifamily-owned wineries,” says Pio Boffa, the owner of Pio Cesare, one of the top names in Barolo. Boffa adds that most of the top wines are made in limited quantities – as little as a few hundred cases. Indeed, Barolo tastes like red Burgundy of Vosne-Romanée and Gevrey-Chambertin, in many ways. It has a lighter colour than considered two of the great wine towns in most other reds, a delicate and complex fruit the region; Barolo has its top villages as well, character, and bright and lively acidity. The including La Morra, Serralunga, Monforte d’Alba big difference is that the grape of Barolo, and Barolo itself. Furthermore, each village, Nebbiolo, is much more tannic compared to whether in Barolo or Burgundy, has its own top Burgundy’s pinot noir. Yet, better viticulture and vineyard sites. The French have codified this into winemaking in Barolo has produced reds with an appellation system, so grand crus such as La riper and softer tannins than in the past. Romanée in Vosne-Romanée and Chambertin in Paolo Damilano, whose family makes excellent Gevrey-Champertin are ranked among the best Barolos under its namesake, agrees.
