From The Kitchen with Executive Pastry Chef Oscar Bonelli We thought long and hard about what makes Easter so special at The Omni Homestead and realized, this is the first holiday of the year we can fully enjoy outdoors! Inspired by the first hints of Spring, Chef Oscar recommended these fruit-topped pastries. We love to use this recipe for an afternoon cookout on the Casino Lawn or an evening reception on the patio. Now we’d like to share it with you. Homestead Fruit and Pastry Cups 6 Tbs Egg Yolk 1 Tsp Vanilla Extract 1 Cup Sugar 2 Tbs Sugar 2 Cups Milk 5 Tbs Corn Starch The Cups Purchase your preferred brand of frozen pastry shells. The Filling Combine milk, vanilla and 2 tbs sugar in a pot. Combine egg yolks with 1 cup of sugar in a mixing bowl. Add cornstarch to egg yolk mixture. Bring milk to a boil, temper in the egg yolk mixture. Return to a boil, and cook over medium heat for 2 min. Pour into a metal bowl, place plastic wrap directly on top to prevent a skin from forming, and place bowl on an ice bath. Once cool, pastry cream is ready to be piping into tart shells. This year’s 10,000 Easter Egg Hunt is the place to be on Easter Sunday. Along with the initial dash for the eggs we have invited a balloon artist, DJ, face painters, and a petting zoo. Be sure to arrive early to find your child’s age group, the hunt begins at 11am sharp! Age categories will include: 0-2 years | 3-5 years 6-9 years | 10-12 years Easter Bunny 5k Fun Run Start your Saturday morning with a chase after the Easter bunny at our 2nd Annual Easter 5k! Register on the front porch of Martha’s Market for this dash around our scenic property with glimpses of the Old Course, Allegheny Springs, the front gardens and more.
