Speisekarte-Sperl-Orig.Pdf The Cafe Sperl History 1880, the coffeehouse was built according to the design of the ring road architects Gross and Jelinek for Jacob Ronacher. That same year, the cafe Ronacher was bought by the family „Sperl“ and in 1884 Adolf Kratochwilla become the owner , who retained the now well-established name „Cafe Sperl“ . In the Sperl „lived“ architects, artists, musicians, actors, singers, generals and high officials. Among the regulars were the Archdukes Josef Ferdinand and Karl Ferdinand and chief of staff of Conrad Hötzen- dorf. (In the summer of 1914, Conrad was one of the main supporters of an immediate war against the Kingdom of Serbia in response to the assassination of the heir in Sarajevo) The visitor circle characteri- zied the Cafe Sperl as an artist and military Cafe. Despite the divergent political and social differences the coexistence was possible. Of particular note is the 1895 established „Hagen society“. From parts of Hagen society and the so-called seven-Club („C7“), Josef Maria Olbrich, Josef Hoffmann, Frederick Pilz, Kolo Moser, Max Kurzweil, Leo Kainradl and Adolf Karpellus 1896/1897 formed the Secession The Hagenbund was dissolved in the war winter of 1942. Around 1890, the operetta inspired the Viennese and just like then and now, the Raimund Theater and the Theater an der Wien were the main stages and the crowd favorites. The Cafe Sperl was the meeting place for stars and composers like Lewinsky, Girardi, Eysler, case, Zeller, Heuberger, Millöcker, Lehar and Kalman. These artists shaped 1930‘s lifestyle on stage and in the Sperl. At Cafe Sperl our visitors have and always will be „regulars“ in the best sense of the word and tourist included in this process and therefore come back. Vienna will be Vienna and Sperl will be Sperl. In June 1968 Manfred Staub took over Cafe Sperl from the family Kratochwilla . He worked out a plan for restoration of the premises with the Austrian heritage agency and architect Nairz so the café would not fade to dust. The patina should be retained, but also satisfy the convenience, hygiene and today´s modern requirements. Today, writers are increasingly represented and the group of regulars is expanding. Also many stars from the musicals of the Theater an der Wien stay at the Sperl. International filming raise awareness, such as: 2011, Sigmund-Freud-film „A Dangerous Method“ by Cronenberg or about „Before Sunrise“ with Ethan Hawke and Julie Delpy. The Philharmonics played here the music of Johann Strauss, and Fritz Kreisler. Regular literates of the recent past like Thomas Sautner, Robert Menasse and Michael Köhlmeier are an inseparable part of the current image of the Sperl. (Conrad war im Sommer 1914 einer der Hauptunterstützer eines sofortigen Krieges gegen das Königreich Serbien als Reaktion auf die Ermordung des Thronfolgers in Sarajewo) Der Besucherkreis prägt das Cafe Sperl zum Künstler und Militärcafe. Ein Nebeneinander war trotz der divergierenden politischen und sozialen Unterschiede möglich. Besonders erwähnenswert ist der ab 1895 angesiedelte Stammtisch der „Hagengesellschaft“ . Aus Tei- len der Hagengesellschaft und dem sogenannten Siebener-Club („C 7“), dem Josef Maria Olbrich, Josef Hoffmann, Friedrich Pilz, Kolo Moser, Max Kurzweil, Leo Kainradl und Adolf Karpellus angehörten, bildete sich 1896/1897 die Secession Der Hagenbund wurde im Kriegswinter 1942 aufgelöst. Im Cafe Sperl ist und war der Besucher immer „Stammgast“ im besten Sinn des Wortes, der Tourist wird in diesen Prozess einbe- zogen und kommt wieder. Wien bleibt Wien und das Sperl das Sperl. Im Juni 1968 übernahm Manfred Staub von der Familie Kratochwilla das Cafe Sperl. um nicht im „Staub“ der Geschichte zu versinken, arbeitete er mit dem Bundesdenkmalamt und dem Architekten Nairz ei- nen Plan zur Restaurierung der Räumlichkeiten aus. Es sollte die Patina erhalten bleiben, aber dennoch der Bequemlichkeit, der Hygiene und den modern Ansprüchen gerecht werden. Heute sind die Literaten immer stärker vertreten und die Stammtischebesetzungen erweitern sich. Auch viele Stars aus den Musicals des Theater an der Wien logieren im Sperl . Internationale Filmaufnahmen erhöhen den Bekanntheitsgrad, wie z.B: 2011 der Sigmund-Freud-Film „A Dangerous Method“ von Cronenberg oder etwa „Before Sunrise“ mit Ethan Hawke and Julie Delpy. Die Wiener Philharmoniker spielten hier die Musik von Johann Strauss, und Fritz Kreisler. Um die Literatur ins Cafe zu tragen gab es hier bereits Lesungen von Pavel Kohout, Peter Marginter, Peter Henisch, Friederike Mayröcker, und vieleranderer. 1988 erwählte der englische Star-Gastrokritiker Roy Ackerman das Sperl zum „Coffeehouse Of The Year“ unter 200 europäischen Kaffeehäusern. 1999 wurde das Sperl im Ranking der Kaffeehäuser im „Tafel- spitz“ an erster Stelle gereiht. 1998 wurde das Sperl zum Österreichischen Kaffeehaus des Jahres ernannt und 2004 erhielt Manfred Staub die Goldene Kaffeebohne und im Jahr 2012 die goldene Kaffeekanne. Seiner Frau Monika Staub ist es zu verdanken, daß die berühmte „Wiener Küche“ und die tatsächlich täglich hausgemachten Mehlspeisen die Gäste glücklich machen.     Croque Madame muffins Cheese, ham, and egg sandwich muffins Makes 4 Croque Monsieur is essentially a toasted cheese and ham sandwich. Put a fried egg on top and you’ve got a Croque Madame (the egg is supposed to resemble a lady’s hat). What makes the difference between a toasted cheese and ham sandwich and a Croque Monsieur is the cheese— in a Croque Monsieur it comes in the form of a creamy cheese sauce. And boy, does this make a difference! My version of Croque Madame uses the bread as a muffin cup to contain the delicious cheese sauce and egg. Great as a snack, or have it with a green salad and fries, as they serve it in French cafés. For the Mornay (cheese) sauce: 1 tbsp butter • 1 tbsp all-purpose flour • ¾ cup plus 1 tbsp milk, lukewarm • ½ tsp Dijon mustard • ½ tsp nutmeg • ¼ cup grated Gruyère or mature Comté cheese (or a strong hard cheese like Parmesan or mature Cheddar) • salt and pepper • 6 large slices of white bread, no crusts • 3 tbsp butter, melted • 2½ oz ham, cut into cubes or thin strips • 6 small eggs TO MAKE THE SAUCE: Melt the butter in a pan over a medium heat. Add the flour and beat hard until you have a smooth paste. Take off the heat and leave to cool for 2 minutes, then gradually add the milk, whisking constantly. Place the pan back over a medium heat, add the mustard and nutmeg, and simmer gently for 10 minutes, whisking frequently to stop the sauce burning on the bottom of the pan.

Other take-away snack providers have also recognised the lucrative snack plus accompanying hot drink business. Gas stations, independent snack vendors and now even supermarkets are jumping on the wagon. So how can a bakery position itself with its core competence in this highly competitive market? Which snacks do you definitely need and which supposed trends can be confidently left behind? Here are the most important tips for an appealing snack selection. Relaunching the Half-Rolls. Some snack providers may see the half-roll as a nightmare product: it could mean more work, less available space in the counter and potentially fewer sales. Up to now, only the ground pork variety of half-roll, the “Mettbrötchen”, has been readily available (for example in bakeries) but other variations are now making a comeback. The creative presentation of ingredients is the unique selling point for the new generation of half- rolls, which distinguishes them from those traditional half-rolls served before 1970. On the whole, this trend makes the counters of snack providers appear much more colourful. Bear in mind that it’s important to use cardboard and wax paper to serve the take-away varieties. So far it was observed, however, that most were eaten in-house and a serviette was placed directly on the plate next to the half-roll.
