The chairs, wide, heavy and comfortable, beg you not to rush, to taste and give due attention to the experience of tasting a bit of Alentejo in the royal residence. Ask for snacks without any hesitation; they are always based on seasonal and regional products. The green olives themselves, with the characteristic acidity of the Alentejo, set the tone to a full, comforting meal. Be sure to try the pork shank, awarded in regional contests, or the golden cod, whose original recipe of Elvas is more than 40 years old. Look for the seasonal suggestions in the menu, it is obvious that in August you will hardly feel like a boar “feijoada” made on bread, but in December it is perhaps the most appealing dish of the menu. And, whatever you do, be sure to taste the famous Estremoz water pudding, presented here in a small single dose which you will be amazed to know is made using only 3 ingredients... one of which is water.
