RESUMEN EJECUTIVO La papa, forma parte del sistema alimentario mundial, es el cuarto producto más importante superado por el maíz, arroz y trigo y es consumido por miles de millones de personas en todo el mundo. El crecimiento de la población sigue brindando oportunidades para que este producto siga destacando como alimento importante en la nutrición. Su facilidad en el cultivo y el gran contenido de energía de la papa la han convertido en un valioso producto comercial para millones de agricultores. Actualmente, como es natural, los hábitos de consumo y preferencias de los consumidores están cambiando. Hay innovación acorde con el estilo de vida de los consumidores, la demanda de productos ready to eat, ready to cook, el mundo del snacking están creciendo significativamente. El desarrollo de la agroindustria de la papa no se da en la misma dimensión para todos los países productores. Hoy en día, hay una diferenciación con respecto al desarrollo de la industria de la papa, mientras que en los países de desarrollo hay mejoras en su aprovechamiento por los rápidos avances tecnológicos, principalmente en el desarrollo de variedades mejoradas, uso de agro-técnicas modernas para la producción de papa procesadas, papas semilla, y post-cosecha, gestión y utilización; los países en desarrollo están adoptando cada vez más a la papa como proveedor
