Frozen Urchin Imports (2012) Abundant supply and increase of the offerings of lower grade roe have been pushing down the bid prices for Alaskan pollock roe at the ongoing Seattle auction. The figures, complied by Minato Tsukiji, showed bidding prices were averaged at JPY 589 per kg. for the first day of the second round of the auction for the 2014 A season. That was a drop of nearly 30%, compared with an average price of JPY 827 for the first round, held in mid-Mar. Over roes offered on the first day, Apr 15th, the bidding prices dipped down by JPY 200-300 to JPY 900-1,050 for the standard grade roe or mako (fully-mature roe). The prices for low grade roe, especially mizuko (over-mature roe), were also dropped by JPY 100 to JPY 300-400. The sharp drop in prices was largely due to an abundant supply of roe and greater portions of low grade roe, said market players. Japanese and S.Korean bidders have confirmed the output of roe hit the largest in the past 10 years at around 20,000 tons this season, thanks to larger fish size as well as improvement in roe recovery yield. Greater amount of low-grade row is typically seen in the second auction and it accounts for around 60-70% of the total roe this year while mako dominated with 70% in the first auction. By the second day for viewing, Premier Pacific, especially its vessel Excellence, is the only harvester who offered more mako than low-grade roe. “The quality of mako itself is inferior compared to the first round as it got much softer,” a sales manager with a major producer told Minato Tsukiji. “Softer roe could mean lower re-processing recovery yield.” The standard grade products technically include different sizes of Mako and some other off-grade roe such as kireko (damaged roe), gamuko (immature roe), and mizuko. For making a bid, bidders evaluate each grade/size of roe and average up per lot. “Our evaluation for each grade is as high as in the first round,” said one of Japanese bidders. "Greater composition of off-grade roe in the standard grade products would downgrade the evaluation overall.” Mizuko is mainly bound for China for reprocessing into Barako, which literally means roe in a lot of species. These are used as an ingredient of Spaghetti toppings, rice balls. Mizuko has seen strong demand since the 2013 A season, driven by a limited supply. “We have seen much sufficient amount of mizuko offered to fill demand,”said another Japanese bidder. By the second day for the sampling, Apr. 16th, a total of 4,340 tons of roe was offered. Received December 14, 2013; accepted February 17, 2014; advance publication released online February 20, 2014 Purines are natural substances found in all of the body’s cells and in virtually all foods. In humans, purines are metabolized to uric acid, which serves as an antioxidant and helps to prevent damage caused by active oxygen species. A continuous supply of uric acid is important for protecting human blood vessels. However, frequent and high intake of purine-rich foods reportedly enhances serum uric acid levels, which re- sults in gout and could be a risk factor for cardiovascular disease, kidney disease, and metabolic syndrome. In Japan, the daily intake of dietary purines is recommended to be less than 400 mg to prevent gout and hy- peruricemia. We have established an HPLC method for purine analysis and determined purines in a total of 270 foodstuffs. A relatively small number of foods contained concentrated amounts of purines. For the most part, purine-rich foods are also energy-rich foods, and include animal meats, fish meats, organs such as the liver and fish milt, and yeast.
