Una vez sellado añadimos la cebolla, los puerros, la zanahoria, el jengibre, los ajos y los huesos de ternera y de pollo. Sofreimos un poco. Una vez sofrito cubrimos con agua, añadimos una pizca de sal y dejamos hervir hasta que la carne esté coci- nada. Colamos y reservamos separadamente: por un lado la panceta y, por otro, el caldo resultante de la cocción. Para la salsa: ponemos en una olla el mirin, la soja, las algas kombu y el jengibre, cocemos 3 minutos y retiramos. Para los fi deos: con un poco del caldo, cocinamos los fi deos. Emplatado: en el fondo del plato ponemos los fi deos, añadimos un par de cucharadas de la salsa y llenamos 3/4 partes el plato con el caldo de pollo. Seguidamente, colocamos un poco de las verduras cortadas y la panceta macerada cortada a trozos. Finalmente, terminamos con medio huevo duro para cada bol y una pizca de cebollino picado.
