On the other hand there is an ever-increasing awareness that the correct management of the cultural heritage requires that the importance of reliable graphic documentation be recognized; such documentation can be used for elaborating further analyses and for designing conservation projects. This paper presents the results of practical work carried out during the Topography/Surveying and surveying methodology/Survey au- tomation course held in the 2005-2006 academic year at the Faculty of Architecture of the Turin Polytechnic. This work consisted in the metrical survey of the facades of the Valentino Castle at Turin. The castle therefore, not only hosted the classrooms where theoretical lessons were held but also provided the material for practical experience. 1.     Talluto’s Tortellini the Authentic Way POSTED BY PHILLY FOOD GIRL on February 9, 2016 Leave a Comment I noticed something while shopping for pasta: some are significantly more expensive than the others! I attributed this to the quality of the product, but it turns out to be so much more than that. I decided to sit down with Joe Talluto of Talluto’s Authentic Italian Foods to hear what he had to say. If anyone was able to clarify, he was the man for the job! First, a bit about the history. Tortellini was founded in Northern Italy (Bologna). There are a few versions of how this pasta shape came-to-be; most of which involve navels (gasp!); you can read more about here. Tortellini are small, intricate, folded, and pinched pastas filled with a variety of ingredients such as meat, cheese, and/or herbs. Because there is only a very small amount of space for filling, the ingredients MUST shine! Americans generally eat tortellin in pasta salad, or with heavy tomato-based or cream sauces. This is a stark contrast to how they’re served in Italy: “in brodo” (broth). That’s right, broth! Talluto’s mirrors the Italian tradition, and fills the pasta with the best-of-the-best ingredients, allowing them to stand center-stage in beef or chicken stock. Unbeknownst to me, most manufacturers buy from other tortellini suppliers. Delicate egg pasta dough is stuffed with a rich meat filling and cut into small pockets. The filling for agnolotti is typically made from leftover roasted meat; here I’m substituting a rich mixture of ground pork and veal flavored with wine, nutmeg, and Parmigiano cheese. The “sauce” is simple: browned butter and plenty of freshly grated Parmigiano, though you can also toss in some sage leaves if you like. Makes about Ingredients 300 g “00” flour, pasta flour, or all-purpose flour; or 280 g flour plus 20 g (2 tablespoons) semola rimacinata or semolina flour 3 extra-large eggs, at room temperature; or 3 large eggs plus 1 extra, lightly beaten; or 3 large eggs and 1-3 tablespoons water 1/4 teaspoon fine salt (optional) Semola rimacinata or semolina flour for dusting the work surface Mixed meat Stuffing (see recipe) Browned Butter and Sage Sauce (see recipe) Freshly grated Parmigiano-Reggiano for serving Instructions 1. Measure 280g (2 cups + 2 Tbsp) flour into the work bowl of a food processor fitted with the metal blade. Add the salt and pulse to combine. Break 3 eggs into the work bowl; pulse until the mixture forms crumbs that look like small curds. Pinch together a bit of the mixture; it should form a soft ball. If the mixture seems dry, dribble in a little more egg or water by the tablespoon and pulse until the dough starts to come together.

BACCIO BANDINELLI E IL PRIMO PROGETTO DI UNA FONTANA PER PIAZZA DELLA SIGNORIA di Francesco Vossilla A detta del Vasari, Baccio Bandinelli convinse il duca Cosimo ad affidargli la commissione di una fontana per l’esterno di Palazzo Vecchio solo grazie ad abili maneggi: “e fu tanto intorno al duca, che per mezzo della duchessa ottenne di farne un gigante, il quale dovesse mettersi in piazza sul canto dove era il lione; nel quale luogo si facesse una gran fonte che gittasse acqua, nel mezzo della quale fusse Nettunno sopra il suo carro tirato da cavagli marini”.1 In realtà, già negli anni Cinquanta del XVI secolo lo scultore non solo preparò il progetto di una fontana coronata da una gigantesca figura di Poseidone, ma venne a intercettare il desiderio di Cosimo de’ Medici di ornare la piazza ducale con una mostra d’acqua proprio nel luogo dove nel 1565 fu collocata la vasca, seppur realizzata da Bartolomeo Ammannati (fig. 1). In quel sito centralissimo, una fontana dedicata a Nettuno padrone del mare, dei fiumi e delle sorgenti diveniva paradigma di dominio per il Duca, visto che il monumento era il segno eclatante di una nuova rete idrica per Firenze. Cosimo avrebbe portato acqua salubre dove prima mancava e sarebbe apparso come un imperatore romano, vero signore del mare e del territorio. Per il Duca — che amava leggere Svetonio — l’opera evocava l’esempio di Ottaviano Augusto e soprattutto di Claudio che avevano potenziato gli acquedotti romani, mentre il Bandinelli pensava soprattutto all’impiego di un colosso sopra un dispendioso gioco idrico: invenzione che incarnava in corpo moderno il concetto pliniano dello “audaciae exemplum”.2 Grazie a questo progetto, gli edifici della piazza medioevale perdevano parte della loro austera imponenza nel confronto con un landmark fantasioso, dove la grandezza del colosso veniva animata dal provvido getto d’acqua, dono del governante ai fiorentini.
