Voyage Aux Truffes À Asti Et Moncalvo Voyage aux truffes à Asti et Moncalvo Du dimanche 25 au mardi 27 octobre 2020 Chers membres CAI, Ce voyage de deux nuits et trois jours nous emmène dans la région d'Asti et à Moncalvo dans le Montferrat. Il a été conçu par nos membres Claudio et Evelyne Feser, qui y possèdent un domaine viticole et un agri-hôtel, "La Quercia Rossa" (le chêne rouge) et où nous serons aussi invités. La Quercia Rossa Hébergement à l'Hôtel Relais Sant’Uffizio Le magnifique Relais Sant'Uffizio est un élégant hôtel du XVIe siècle qui a été rénové et est devenu à présent un hôtel 4 étoiles avec un très beau centre de wellness et un restaurant gastronomique. L'hôtel est situé sur les collines de Montferrat, un endroit idéal pour découvrir l’une des très belles régions viticoles du Piémont. Dans le voisinage, vous pourrez découvrir de charmantes villes et des villages pittoresques. Dimanche 25 octobre Arrivée individuelle avant 15 h. Le trajet depuis Monaco dure environ trois heures et demie (275 km). Il est de 1h30 (130 km) depuis l'aéroport de Milan. Nous nous rencontrerons à 16h00 dans le hall de l'hôtel puis nous nous rendrons au domaine de nos hôtes Claudio et Evelyne Feser "La Quercia Rossa". Là, nous visiterons le vignoble, les vignes et les plantations de noisettes et prendrons un apéritif de bienvenue sur la terrasse. Ensuite, nous serons invités à un dîner gastronomique aux truffes que le chef privé du domaine préparera spécialement pour nous. Lundi 26 octobre Nous partirons vers Monte Sacro di Crea peu après 9 h. Le Monte Sacro di Crea est un lieu de pèlerinage de la fin du XVIe siècle, construit sur l'une des huit "montagnes sacrées" de l'ancienne région historique - anciennement duché - de Montferrat. Il fait partie des sites du patrimoine culturel mondial de l'UNESCO depuis le 3 juillet 2003. Ensuite, nous nous déplacerons vers le pittoresque village de Canelli, où nous prendrons le déjeuner dans le restaurant Osteria die Meravigliati. L'ancienne ville de Canelli est le centre historique de l'industrie d'Asti Spumante et le principal centre de fabrication de matériel de vinification en Italie. Le vieux château est perché au sommet d'une colline dans le centre de la ville, et la plupart des vieilles maisons Spumante ont construit leurs cantinas (caves) au bas de la colline avec de vastes caves taillées directement dans la roche calcaire sous la colline. Ce réseau de tunnels, long de plusieurs kilomètres, est devenu un musée vitrine pour de nombreux vignobles, sanctuaires de l'art viticole connu sous le nom de «cathédrales souterraines du vin». Dans l'après-midi, nous visiterons en privé la "cathédrale souterraine de Contratto" et dégusterons également des vins sélectionnés de la région. Après la dégustation de vins, nous rentrerons à l‘hôtel où ceux qui le désirent pourront faire une pause, aller au wellness de l‘hôtel ou encore se rendre au pittoresque village de Moncalvo pour y découvrir ses églises, places et ruelles. Le soir, nous dînerons au restaurant de notre hôtel, le Locanda, récompensé d'une étoile Michelin grâce au savoir-faire du chef italien Enrico Bartolini et du jeune talent Gabriele Boffa, chef cuisinier. Inspiré par des concepts tels que l'authenticité, la saisonnalité et la volonté d'expérimenter, le restaurant La Locanda offre une expérience gastronomique inoubliable avec ses célèbres classiques italiens, ses spécialités régionales et une liste des meilleurs vins italiens piémontais avec plus de 300 étiquettes soigneusement sélectionnées. Mardi 27 octobre Après le petit-déjeuner et le check-out, nous nous dirigerons vers Asti, où nous visiterons le magnifique palais baroque Mazzetti avec sa collection d'art et la cathédrale romano-gothique, la plus grande cathédrale du Piémont. Nous retournerons enfin à Moncalvo au restaurant Uva Spina, qui offre une belle vue sur les collines de Montferrat depuis ses grandes baies vitrées et où nous dégusterons un dernier déjeuner ensemble dans une atmosphère conviviale. A partir de 15h, il sera temps de rentrer chez soi après un voyage de découvertes plein d'expériences gustatives et après plusieurs agréables moments de convivialité. The most important wine producers always consulted with Augusto because he was well-known for his knowledge and insight of wine and his advice always guaranteed outstanding results. Augusto always knew of the best grapes to be harvested, he carefully supervised the whole wine-making process and was an expert in the ideal conditions for aging wine.     Moscato d'Asti DOCG LOCATION: Santo Stefano Belbo, Canelli, Calosso GRAPE-VARIETY: 100% White Moscato (also called Moscato from Canelli) HECTARES: 41 ALTITUDE: 300-400 m (984-1312 ft) asl SOIL: loose whitish marl, composed of clay, sand and silt YEAR OF PLANTING: 1976, 1994, 2010 FIRST YEAR OF PRODUCTION: 1977 VINIFICATION: he harvested grapes undergo a soft pressing and the resulting must is left to decant in stainless steel tanks for several hours. Following decantation, the must is transferred to another tank where the temperature is lowered to 2-3°C to ensure the preservation of the juice and prevent fermentation from beginning. After the harvest is finished, each separate must is homogenized in order to create a single, consistent quality for the entire vintage. Following this phase, fermentation of the must begins in temperature- controlled (16-18°C), pressurized stainless steel tanks until the alcohol level reaches 5.5%. This is the phase in which the perlage, or fizz, typical of Moscato is produced, obtained by trapping the CO2, a natural by-product of fermentation, in the tank until the internal pressure has reached a maximum of 2 atmospheres. Filtrations allow us to obtain a clear and stable product that will subsequently be bottled at a very low temperature, in order to facilitate the wine’s conservation. AGING: The filtered wine is kept in pressurized tanks at a temperature between 0 and 2°C. WINE: Sweet white wine, the dessert wine par excellence.     Piedmont (Piemonte) growing occurs south of the Po Valley, in the provinces of Asti, Alessandria, and Cuneo. Within these provinces, the Monferrato and Langhe hills are planted with vineyards. Soils are predominantly calcareous marl and sandstone with varying percentages of clay and sand, Piedmont has a continental climate and the Alps to the north produce effect, In the Langhe and Monferrato hills, many of the best south facing vineyards planted with Nebbiolo are known as in the Piedmontese dialect,. Varietals Nebbiolo, is thin-skinned & produces wines of high acidity and tannin. The late-ripening Nebbiolo, together with Dolcetto and Barbera are the principal Piedmontese red grapes.
