Moscato d'Asti DOCG

VINIFICATION: he harvested grapes undergo a soft pressing and the resulting must is left to decant in stainless steel tanks for several hours. Following decantation, the must is transferred to another tank where the temperature is lowered to 2-3°C to ensure the preservation of the juice and prevent fermentation from beginning. After the harvest is finished, each separate must is homogenized in order to create a single, consistent quality for the entire vintage. Following this phase, fermentation of the must begins in temperature- controlled (16-18°C), pressurized stainless steel tanks until the alcohol level reaches 5.5%. This is the phase in which the perlage, or fizz, typical of Moscato is produced, obtained by trapping the CO2, a natural by-product of fermentation, in the tank until the internal pressure has reached a maximum of 2 atmospheres. Filtrations allow us to obtain a clear and stable product that will subsequently be bottled at a very low temperature, in order to facilitate the wine’s conservation.

AGING: The filtered wine is kept in pressurized tanks at a temperature between 0 and 2°C.

WINE: Sweet white wine, the dessert wine par excellence. Straw yellow color of varying intensity depending on the vintage. The perlage is refined and elegant. A fruity, intense, aromatic and very persistent nose and sweet flavor are accompanied by a perfect balance between low alcohol content and acidity (never too high either), imparting a pleasant freshness to the wine.
