Sake (pronounced “sarkay” ) is a rice based alcohol beverage brewed using water, rice, malted rice (koji) and . Despite its deceptively simple ingredients, sake has an extraordinary breadth of flavours and aromas, ranging from light, delicate and aromatic to complex, rich and robust. Because there are no tannins or high acidity in sake to affect the flavour of food, sake is extremely food friendly and tastes great with many cuisines, not just Japanese. Sake classifications are based on the degree of milling of the rice grains. The more the rice is milled away before , the more fats and proteins are removed and the more expensive the sake. In this list we have tried to offer an interesting range of styles of sakes - some just to enjoy by themselves and others to enjoy with food. If you're a novice, don't be scared. Try one or two of the inexpensive sakes that are available by the 70ml serve and see what you think.

Shochu (pronounced “shorchew” ) is a distilled spirit that is unique to Japan. Many shochus are based on sake as the base material for , but they aren't restricted to just sake. , sweet potato and many other base materials can be used as long as the starches are converted to sugars with koji before fermentation. Unlike many western spirits, the best shochus are only distilled once to try to keep as much of the character of the base material as possible and usually only to about 25% alcohol or so. They are light and delicious and great before or after food, depending upon the type. Best served on the rocks with a little water or soda.

Both sake and shochu may be sweetened or flavoured using juice or fruit. Two of the most common additions are Yuzu (a tangy relative of the lemon) in Yuzushu and Ume (a type of Japanese plum) in Umeshu. These styles are generally for consumption after dining, like a type of dessert wine.

Blue Pyrenees Estate Reserve Red

Originally called Chateau Remy and planted by Remy Martin in the 1960's, Blue Pyrenees Estate is the oldest modern vineyard in the Pyrenees. First vintaged way back in the early '80's, this wine put Chateau Remy on the -lovers' map and is the wine that gave Blue Pyrenees Estate its name. The blend varies from vintage to vintage but is generally composed of Cabernet Sauvignon, Shiraz and Merlot in varying ratios.

The Redbank Vineyard was planted in 1973 by Neill and Sally Robb and Neill has been the winemaker since the very first vintage only recently handing over the reins to his daughter Sasha. Sally's Paddock is the pinnacle wine of the winery. An Australian version of a "Bordeaux blend", Sally's Paddock has appeared in every edition of the Langton's Classification of Fine Australian Wine since the very beginning and deservedly so, for the wine is truly exceptional. BEER 101: At the most basic level, there are only two types of beer in the world - and . Ales have been made for thousands of years but Lagers have only been around for less than 200 years or so. The main difference is the type of yeast used in the fermentation of the beers. Ales are warm-fermented using a yeast that rises to the top of the brew during fermentation. They are generally stronger in both flavour and alcohol than lagers because of the shorter, warmer fermentation. Lagers, from a word meaning "to store" in German, are cold-fermented using a yeast that sinks to the bottom of the brew during fermentation. Ales can be brewed in as little as a week, but Lagers can take more than five times as long. Because of this slow process, Lagers are generally cleaner, smoother, crisper, and more mellow in taste than Ales. Today, more than 90% of beer consumed in the world is lager - sadly, in our opinion, most of it is the watery, flavourless stuff produced by the big breweries. Fortunately, there is a rapidly increasing number of "craft breweries" here and around the globe who are rebelling against this bland trend, by producing amazing, flavoursome and interesting beers of all types using all sorts of ingredients. Most of these Craft beers are Ales because of the relative ease of production, but not all of them and there are some truly awesome hand-made Lagers on this list too.

India and or IPA has its origins in solving the problem of supplying beer to the British Empire in the east. It was too hot to brew beer in India, but the ales of the day would go off during the six-month sea voyage from Britain. A London brewer called Hodgson sent out a strong, highly-hopped beer known as October ale which normally needed to be aged before drinking. Not only did it survive the journey, but it actually improved enormously. The first ales were dark, but gradually paler malts were used to create a paler, more refreshing style suitable to the Indian climate. It also evolved into a weaker plain Pale Ale for the home market. With the arrival of refrigeration, true IPA died out until 1976 when the Americans rediscovered artisanal brewing and started to recreate many of the old British styles including IPA, but with their own twists including massive amounts of hops and high alcohol levels. It didn't take long for the rest of the world to catch on, and now IPA's form the backbone of the craft beer movement worldwide. Brown Ale, Black Ale and Porter From the earliest times nearly all English beers would have been brown because they were made by kilning malt over hardwood fires leaving a distinctly brown colour as well as a smoky flavour. So they are among the oldest of all English beers, although they wouldn't have necessarily been called brown - they were just ales. During the Industrial Revolution brewers invented a special blend of old, new and mild ales which became known as Porter because of its popularity with transport workers of central London. Porters were the first "engineered" beers created to meet a particular public taste and demand. Modern day brown ales, black ales and porters are primarily made from a pale malt base with some black, crystal, chocolate or smoked brown malt added in varying quantities for colour and flavour. The English styles tend to be complex malty affairs with some sweetness and low hops and bitterness. The American styles, on the other hand are commonly full flavoured, well hopped, quite alcoholic with lots of complex flavours and long palates.

Stout The distinction between Stout and Porter (or other black and brown ales) is becoming increasingly difficult to make in modern-day craft brewing. Originally "Stout" was a more alcoholic or stouter version of Porter, called "Stout Porter", but the name was shortened to Stout. The most famous of the early , and one that is still famous today is Guinness from Dublin in Ireland. The problem with distinguishing between the two types these days is that many modern brewers make Porters that are much stronger than Stouts, yet they still call them Porter or they make Stouts that are weaker than Porters, but still call them Stout! Confused? Well there IS a technical difference between the two that almost all brewers agree on and that is the kind of malt used to make each type. Porters are made using malted barley whereas Stouts are primarily made using unmalted roasted barley which is where the coffee flavour comes from that people commonly associate with Stout. In compiling this list, I have made a few arbitrary calls about beers that I feel belong in this category, even though they may be named as the other and vice versa. Lambic, Fruit and Sour Beer Lambic beers originate from Belgium and are quite different from conventional beers in several ways. First and most important, use spontaneous fermentation from wild yeasts and bacteria rather than controlled fermentation using special brewers yeasts. This method of fermentation gives the beer its distinctive dry, vinous, almost cidery taste followed by quite a sour finish. For at least 1,000 years, hops have been used in beer to preserve it from spoilage and to impart a pleasant bitter taste and characteristic aroma. Lambic brewers use large amounts of hops as a preservative, but they deliberately use aged, dried hops that have lost much of their flavour and aroma, so lambic beers are never hoppy and have an unusual "old hop" aroma a bit like strong cheese. The last main difference between lambics and other beers is that they are usually a blend of at least two different beers, commonly a young one and an older one or ones. When bottled, the partially unfermented young beer in the blend causes a secondary fermentation to occur producing the carbonation of the finished product. Gin Gin is one of our favourite spirits here at The Avoca. We love it because there are so few rules in its manufacture, allowing the distiller enormous artistic breadth to develop flavours, aromas and textures according to his or her own preferences and using whatever local or foreign botanical ingredients that may be available. The only real rule that applies to Gin, is that the main botanical used in flavouring it is juniper berries - in fact it gets its name from the same berries. Juniper gives gin its uniquely bitter but refeshingly bracing flavour. Other than that, basically anything goes and so in the Gins we have collected here, you will find ingredients ranging from anchoa chillies all the way to thyme and beyond. Each Gin therefore is unique and, a bit like wine, reflects its "terroir". And each one is best enjoyed in a particular way that properly displays its special characteristics.
