Garlic Ginger Superfood Stir Fry Ingredients: 1 pound lean ground chicken or turkey 1 onion, diced 4 cups assorted diced veggies such as snap or snow peas, broccoli florets, cauliflower florets, bell pepper, carrots, zucchini, purple cabbage, bok choy, brussels sprouts 3 cups fresh spinach or fresh kale 2-3 garlic cloves, minced 2-3 teaspoons minced fresh ginger 2-3 Tbsp. olive oil 1 tsp. ground cumin/coriander or Chinese Five Spice 1 pinch red pepper flakes (optional) 3 Tbsp. soy sauce, reduced sodium soy sauce, Tamari or coconut aminos 2 tsp. sesame oil 2 cups cooked whole grain (brown rice, wild rice, quinoa, etc.) Optional: top with fresh herbs such as cilantro, basil and/or mint and/or nuts such as cashews or peanuts Note: Mix and match your favorite colorful veggies in this recipe! Try to aim for 3 different colors! Method: 1. Heat a large skillet, add 1 tsp olive oil. When hot, add ground chicken/turkey. Cook completely, allowing to brown. Toward end of cooking, sprinkle with a pinch of the seasoning you are using, 1 minced garlic clove and 1 tsp. fresh minced ginger. Cook 1 minute, then add 1 Tbsp soy sauce (or sauce of choice) and 1 tsp sesame oil. Pull off heat and pour turkey mixture into a bowl. Clean out skillet. 2. Sautee veggies in olive oil over medium/high heat in cleaned skillet. You may have to do this in two batches, as you do not want to overcrowd and steam the veggies. When veggies are caramelized and softened, but still al dente (5-7 minutes), sprinkle with a pinch of the seasoning you are using, 1 minced garlic clove and 1 tsp. fresh minced ginger and cook for 1 more minute. 3. Add cooked whole grain to skillet, stir gently so combined and grain is warmed. 4. Add cooked ground chicken/turkey back to the skillet, stir gently to combine. 5. Combine 2 Tbsp. soy sauce (or sauce of choice) and 1 tsp. sesame oil. Sprinkle on top of skillet with veggies, chicken/turkey and grain, stir gently. Top with fresh herbs and/or nuts.
