TASTES FROM HOME Recipes from the Refugee Community PREFACE In writing the articles for this cookbook, I had the privilege and pleasure of speaking with refugees from all over the world who now call Canada home. Sometimes we had the good fortune of meeting in person, but because this project originated during the 2020 pandemic, often we spoke over the phone or through a video call, each of us holed up in our homes. They shared their stories, and they shared their recipes. From one foodie to another, the excitement and pride each person felt about their recipes was palpable. For many, the recipes hold a personal connection to a family member or to a memory, and the food is an indisputable connection to their culture. Each person has a unique story, with different outlooks, challenges, and rewards, but I was struck by one thing they all had in common—a desire to give back to Canada. From the Mexican restaurant owner who plans to employ dozens of Canadians, to the Syrian entrepreneur who donated the proceeds from his chocolate factory to Canadians impacted by wildfires, to the former Governor General who became a figurehead for the country, each person expressed profound gratitude and an eagerness to help the country that took them in. We often hear about refugees in abstract faraway terms, through statistics about the number of people fleeing from one country to another, but in speaking with these 14 people those statistics became humanized and the abstract became real experiences. Their stories are captivating, their recipes are mouthwatering, and I hope you enjoy both in the following pages. -

Cihannüma Tarih ve Coğrafya Araştırmaları Dergisi Sayı III/1 – Temmuz 2017, 123-172 BİR RAHİBİN KALEMİNDEN ALEMDAR MUSTAFA PAŞA’NIN SARRAFI MANUK MİRZAYAN BEY Silvart Malhasyan* & Aysel Yıldız** Rusçuk ayanları Tirsiniklioğlu İsmail Ağa (ö. 1806) ile Alemdar Mustafa Paşa’nın (ö.1808) uzun süre sarraflığını yapan ve Osmanlı tebaası olan Manuk Mirzayan’ın (ö. 1817) hikâyesi küçük bir Balkan kasabası olan Rusçuk’ta başlar, İstanbul’a uzanır, tekrar Rusçuk, ardından Bükreş’te devam eder ve nihayetinde bir Rus vatandaşı olarak yerleştiği Hınçeşti’de sona erer. Maceralı hayatı kadar ilişki kurduğu insanlar da son derece önemli ve renkli simalardır. Aynen kendisi gibi taşrada yükselerek sadece yerel değil İmparatorluk çapında önemli siyasi aktörlere dönüşen Tirsiniklioğlu İsmail Ağa ve özellikle Alemdar Mustafa Paşa bu listenin en başında gelir. Her ikisinin sağ kolu olan Köse Ahmed, II. Mahmud döneminin meşhur kaptan-ı deryası Abdullah Ramiz Paşa, Mustafa Refik Efendi, Mehmed Emin Behiç Efendi, Hasan Tahsin Efendi, Kadı Abdurrahman Paşa, Eflak voyvodası Alexander İpsilanti gibi birçok Osmanlı bürokratı veya taşra elitiyle yakın ilişkileri vardır. Bunun yanı sıra, General Miladoroviç ve Prozorovski gibi 1806- 1812 Osmanlı-Rus savaşının bazı Rus komutan ve devlet adamları ile Bükreş’teki Rus konsolosu Luca Kiriko’yla da bağlantılarını devam ettirmiştir. Dolayısıyla Manuk Bey’in hayatını incelemek yalnızca Rusçuk, Bükreş ve İstanbul’daki siyasi ve ekonomik gelişmeleri değil, on dokuzuncu yüzyılın ilk yarısında Osmanlı İmparatorluğu’nda cereyan eden önemli iç ve dış siyasi, diplomatik ve sosyal olayları da takip etmek demektir. Charles Doussault (1814–1880), a French painter and illustrator, became known as an Orientalist painter following his voyages to the Ottoman Empire; he also paid special attention to Wallachia, which he visited during the first half of the 19th century. There, he becomes an integral part of society and is welcomed in the boyars’ homes and at the Court so much so that, in August 1843, he is invited by Prince Gheorghe Bibescu to be part of his delegation going to Constantinople to pay tribute to the sultan. -

From Ruscuk to Bessarabia: Manuk Bey and the Career of an Ottoman-Russian Middleman at the Beginning of the 19Th Century
Cihannüma Tarih ve Coğrafya Araştırmaları Dergisi Sayı III/1 – Temmuz 2017, 23-43 FROM RUSCUK TO BESSARABIA: MANUK BEY AND THE CAREER OF AN OTTOMAN-RUSSIAN MIDDLEMAN AT THE BEGINNING OF THE 19TH CENTURY Stefania Costache* Abstract The life and political career of Manuk Mirzayan (d. 1817), the Armenian money-lender and acolyte of Mustapha Pasha Bairaktar, the ayan of Ruscuk, presents a good case of study of a Ottoman-Russian middleman of the early 19th century Balkans. As a product of the complicated internal and international problems of the Ottoman Balkans, he aptly managed to survive amongst the conflict between two empires and even benefited from the international conflicts as a middleman. By tracing his activities from Ruscuk to Bessarabia, this paper argues that Manuk’s decisions can be considered as strategies to improve his status and secure his life in an environment about which he could only speculate but which clearly favored agents who could cater to the competing interests of different empires and political factions.
