    Werner’s Hungarian Chicken Goulash Serving for 4 to 6 1 whole chicken, cut-up: or 4- 6 chicken breasts with skin. 1 large or 2 medium onions, diced . 2 green or red bell peppers cut into strips, one of each works nice. 1 or 2 Hungarian pepper s (optional for more of a spicy hot tang) 1 or 2 tomatoes cut into wedges 4 to 6 potatoes, peeled and diced into large chuncks ½ glove of garlic, diced and crushed (optional) 2 tablespoons of Hungarian paprika, don’t use Spanish or American paprika. 2 level tablespoons of salt (or salt to taste) 1 level teaspoon of black pepper 1 tablespoon of caraway seeds (optional, the least important ingredient ) 1 or 2, 10-12 oz. can of chicken broth (optional , makes for a richer broth, most beneficial of the options) 1 8oz. can of tomato sauce (optional, use for a richer red, broth) 4 -6 tablespoons of vegetable oil ( before cholesterol, in the old days, Hungarians used bacon grease, Dad made it that way ) -In a large stewing pot, brown onions in vegetable oil or bacon fat, frequently stir up onions, be careful not to blacken or burn onions. When onions start to brown , reduce heat to very low, and stir in paprika. Keep stirring paprika with onions. The less you cook the paprika, the redder the sauce will be. The longer you cook t he paprika, caramelizing it, the more brownish the sauce will be. Your preference, but be careful not to burn onions and paprika. The Werner kids like the redder sauce.

    1 INTRODUCTION Swallowing can become a significant problem for patients with ALS; and the joys and pleasures of eating become replaced with discomfort and anxiety. At an early stage patients may begin to have difficulty with foods such as popcorn, cornbread or nuts, and choking episodes may occur. Subsequently other foods cannot be swallowed readily, and the effort of chewing and swallowing turns a pleasurable experience into a burden. For the patient, the act of swallowing becomes compromised and the ordeal of eating becomes more time consuming. For the spouse, the task of preparing edible and appetizing foods poses an increasing challenge. The following collection of recipes is derived from our patients and their creative spouses who translated their caring into foods that look good, taste good, are easy to chew and to swallow, and minimize discomfort. Included are recipes for meats and other protein containing foods, fruits or fruit drinks, vegetables or dishes containing vegetables, as well as breads. Selections of beverages, desserts, and sauces are provided to add needed fat and calories to the diet. A balanced diet normally supplies enough nutrients for daily needs plus some extra. It is recommended that daily menu plans be made using the Basic Four Food Groups as the backbone. The aim was to document and compare the current use of wild and semi-cultivated plant food taxa by Romanians living in Romania and Ukraine. These two groups share similar ecological conditions and historically belonged to the same province, but were divided in the 1940s by the creation of a state border. We conducted 60 semi-structured interviews with rural residents. The contemporary use of 46 taxa (plus 5 cultivated taxa with uncommon uses), belonging to 20 families, for food consumption were recorded. Romanians in Romanian Bukovina used 27 taxa belonging to 15 families, while in Ukraine they used 40 taxa belonging to 18 families. Jams, sarmale, homemade beer, and the homemade alcoholic drink “socată” are used more by Romanians in Southern Bukovina, while tea, soups, and birch sap are used more in Northern Bukovina.
