Dissolve the cornstarch in 2 T water, and combine with sherry, soy sauce, and ginger; add to the pork mixture and bring to a boil, stirring. Remove from heat and cool. I have never taken it anywhere without being asked for the recipe: Tear artichokes apart with your fingers. Cut up pita bread into chip size triangles, separate and bake on a cookie sheet until crispy (approx 5 minutes). Combine all other ingredients and mash (a Kitchen Aid mixer works great). Bake in a uncovered casserole dish for approx 30 minutes @ 350 or until bubbly. Serve hot out of the oven and scoop up dip with pita bread. BABAGANOUSH (MY DOCTORED VERSION) 2 tablespoons Olive oil 2 Onions (chopped) 2 Stalks of celery -- chopped (optional) 1/2 Red sweet pepper chopped -- for color 1 Eggplant (cubed -- about 3/4 inch) 2 Cloves of garlic -- chopped or mashed 1/2 teaspoon Ground cumin plus -- 1 pinch whole 1/2 teaspoon Ground coriander 1/4 teaspoon Ground pepper 1/4 teaspoon Crushed dried chili pepper Salt (to taste) 1 tablespoon Tahini * Juice of 1/2 to 1 lemon -- (to taste) or lime Handful of parsley or -- cilantro scallion ends or -- chives Black olives Parsley sprigs -- and a lemon slice to * Sesame paste. I've heard of substituting peanut butter, but never tried it. The variable amounts of ingredients depend on your taste and on the size of the eggplant. Try it without celery and red pepper and then you can decide if you want to use it next time. Saute onions, (celery & red pepper) till starting to brown (I do in a wok). Add eggplant and garlic, stir well, add spices (not the salt), stir again and on very low fire, saute. May drop some liquid, that's all right, let it evaporate, and saute slowly until everything is very tender. Keep checking, it's better if it browns a little, but needs stirring so it doesn't burn. If it's too dry, add a few TBs liquid at a time (I use vegetable broth, liquid from steaming veggies, or liquid from microwaving mushrooms, etc.

Pippa’s Blueberry Biscuits (“Where’s Hobie?” I said. I wasn’t asking because I cared, but because it was a little too good to be true to be alone in the house with her, and a little frightening too. “Oh—“ she rolled her eyes—“he insisted on going to the bakery. I told him not to bother but you know how he gets. He likes to get me those blueberry biscuits that Mama and Welty used to buy The Goldfinch me when I was little. Can’t believe they even make them any more—they don’t have them every day, he says. The Globalization of Chinese Food ANTHROPOLOGY OF ASIA SERIES Series Editor: Grant Evans, University ofHong Kong Asia today is one ofthe most dynamic regions ofthe world. The previously predominant image of 'timeless peasants' has given way to the image of fast-paced business people, mass consumerism and high-rise urban conglomerations. Yet much discourse remains entrenched in the polarities of 'East vs. West', 'Tradition vs. Change'. This series hopes to provide a forum for anthropological studies which break with such polarities. It will publish titles dealing with cosmopolitanism, cultural identity, representa tions, arts and performance. The complexities of urban Asia, its elites, its political rituals, and its families will also be explored. Much of Asian and Pacific cultures and traditions are centered around the delicious cuisine, and we are more than happy to share Brig Gen John R. Edwards our special and coveted “secret” family Director, Nuclear Enterprise recipes with you. This year’s theme of “Advancing Leaders through Purpose-Driven Service” fits in perfectly with our plans to serve all the amazing civilian, military, and contractors that comprise the DTRA workforce by providing you with this very special AAPI Cookbook. For the past two months we have solicited all DTRA employees to contribute their favorite Asian and Pacific recipes, so these special recipes not only represent your AAPI ERG, this is a compilation of all of your efforts. Many of you shared personal stories behind the recipes, showcasing a special relative, a time-honored family tradition, or how you served in the Asian-Pacific region and learned about the local foods during your military or civilian assignments overseas. This is a wonderful conglomeration of love, teamwork, and celebrating our diverse cultures. I hope you will enjoy these stories and give the recipes a try.
