His “made from scratch” cooking style is a well known trademark which gives each recipe a true savory, homemade flavor. Rey takes great care and time to prepare each meal, blending individual spices and roasting them to perfection to provide a special taste for guests to enjoy.

In 2003, Rey opened his first restaurant, El Rey del Menudo. While working a full-time job at the time, El Rey was open on weekends starting Friday at midnight through Sunday at 1 pm. His children would drive to Laredo from San Antonio and Austin to help cook and serve because the restaurant was only open for 36 hours every weekend without closing. Then in 2010, Rocha’s El Catan Restaurant opened downtown at the Hamilton Hotel and was soon featured in an international Food Network program called Moto Chefs, with Aaron Sanchez and Aquiles Chavez. Today, the pride and success of his appetizing meals continues at Rocha’s Bar & Grill.

The famous “Chicharrones de Catan” is his signature dish and is hand-cut, seasoned and breaded daily. Rey also prepares an Award Winning Menudo and features Rocha’s Homemade Salad Dressing which is among the traditional family favorite recipes and is a definite staple that cannot be replicated.
